3 ounces fat-free cream cheese
1/4 cup chopped fresh or frozen cranberries, thawed
1 tablespoon canned chopped green chilies
1-1/2 teaspoons honey
1 teaspoon Louisiana-style hot sauce
4 flour tortillas (6 inches)
1 cup diced cooked turkey breast

Steps:

  • Mix first five ingredients until blended; spread over tortillas. Top two tortillas with turkey, then remaining tortillas, pressing lightly., In a large skillet, cook quesadillas over medium heat until lightly browned and heated through, 2-3 minutes per side.

1 pound lean ground turkey
1 cup chopped red onion
1 to 2 garlic cloves, minced
2 cups julienned zucchini
1 cup salsa
1 cup frozen corn
1 cup julienned sweet red pepper
1 can (4 ounces) chopped green chilies
2 tablespoons minced fresh cilantro
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
8 flour tortillas (8 inches)
2 cups shredded reduced-fat Mexican cheese blend

Steps:

  • In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies. Reduce heat; cover and simmer until vegetables are tender. Stir in seasonings., For each quesadilla, place one tortilla in an ungreased nonstick skillet. Sprinkle with 1/4 cup cheese. Top with 1/2 cup filling, then sprinkle with another 1/4 cup cheese. Cover with another tortilla. Cook over medium heat, carefully turning once, until lightly browned on both sides and cheese begins to melt. Cut into eight wedges.

QUESADILLAS WITH JACK AND SPICY SAUTE

Number Of Ingredients 9

1 tablespoons peanut oil
1/2 medium yellow onion, halved lengthwise and thinly sliced
3 medium cloves garlic, thinly sliced
2 medium jalapenos, halved lengthwise, seeded, and thinly sliced crosswise
Salt and freshly ground black pepper
4 medium poblano peppers, quartered lengthwise, seeded, and sliced crosswise into 1/2-inch strips
1 1/4 cups low-sodium chicken broth
12 (6-inch) flour tortillas
3 cups shredded jack cheese

Steps:

  • Heat oven to 500 degrees F and arrange 1 rack in top and a second rack in middle.
  • Heat oil in a large frying pan over medium-high heat. When it shimmers, add onions, garlic, and jalapenos, season well with salt and freshly ground black pepper, and cook until softened, about 3 minutes. Add poblanos and stir to coat. Add broth and cook until the liquid reduces enough to just coat the vegetables, about 10 minutes. Remove from heat.
  • When pepper mixture is cool enough to handle, top 1 tortilla with 1/2 cup cheese and 1/6 of the pepper mixture, close with a second tortilla. Repeat to make 6 quesadillas.
  • Arrange quesadillas on 2 baking sheets and place 1 sheet on top rack and another on middle rack. Bake until cheese is melted, about 5 minutes. Switch baking sheets and continue to cook until tortillas are golden-brown and crisp, about 5 more minutes.

Very, Very good, if you can find the sundried tomato tortillas, they add a wonderful taste, as compared to the plain ones. We pass the salsa also, with the sour cream. More heat can be added if desired and the recipe can be scaled down to one or two.

6 inches 10-inch sun-dried tomato tortillas
1 tablespoon olive oil
2 red peppers, thinly sliced
1 large onion, thinly sliced
2 jalapeno peppers, thinly sliced
1/2 cup chopped black olives
2 cloves garlic, smashed
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 cups shredded cheese
sour cream (optional)

Steps:

  • In a large skillet heat oil.
  • Cook peppers, onions, garlic, jalapeno, chili powder, cumin and cayenne, stirring often until peppers and onions are limp, about 5 minutes.
  • Remove from heat and add olives.
  • Arrange 3 tortillas in single layer on baking sheets.
  • Divide onion and pepper mixture evenly over tortillas, spread to 1/2 inch off edges.
  • Top with shredded cheese, spread evenly between 3 tortillas.
  • Place remaining 3 tortillas on top, press down lightly.
  • Bake at 450 degrees until tortillas are lightly browned.
  • 8 to 10 minutes.
  • Cut into 4 to 6 wedges.
  • Arrange on platter and serve with sour cream, if desired.

2 tablespoons reduced-fat Parmesan peppercorn ranch salad dressing
1 tablespoon Dijon mustard
2 whole wheat tortillas (8 inches)
2 slices reduced-fat Swiss cheese, halved
1/2 medium ripe avocado, peeled and thinly sliced
6 ounces sliced cooked turkey breast
Diced sweet red pepper, optional

Steps:

  • In a small bowl, combine salad dressing and mustard; spread over 1 side of each tortilla. Place tortillas, spread side up, on a griddle coated with cooking spray., Layer cheese, avocado and turkey over half of each tortilla. Fold over and cook over low heat for 1-2 minutes on each side or until cheese is melted. Garnish with red pepper if desired.

2/3 cup salsa
1/3 cup sliced green onions
3/4 to 1 teaspoon ground cumin

1/4 cup butter, melted
2 cups shredded Monterey Jack cheese
Sour cream and guacamole

Steps:

  • In a large skillet, combine the first 6 ingredients. Cook, uncovered, over medium heat until heated through, about 10 minutes, stirring occasionally. , Brush 1 side of tortillas with butter; place buttered side down on a lightly greased baking sheet. Spoon 1/3 cup chicken mixture over half of each tortilla; sprinkle with 1/3 cup cheese. , Fold plain side of tortilla over cheese. Bake at 375° until crisp and golden brown, 9-11 minutes.   • Spread the sauce over the base of a flour tortilla, lay the sliced turkey on top of that, then the tomato, red onion and cheese. Season with salt and pepper. Place another tortilla on top of all of this and carefully move to a large non-stick pan.
  • Dry fry this until it starts toasting. Flip (you can use a plate to flip if it makes it easier) and cook the other side. I also put a lid on my frying pan which helps heat the quessadilla through.
