Old-Fashioned Scalloped Potatoes image

An easy recipe for Old-Fashioned Scalloped Potatoes, made with softened onions, an easy roux, and thinly sliced potatoes.

Number Of Ingredients 7

2 cups thinly sliced onion
9 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 1/2 cups milk
2 1/2 pounds boiling potatoes
1 1/2 cups coarsely grated sharp Cheddar (about 6 ounces)
1/3 cup dry bread crumbs

Steps:

  • Preheat oven to 400°. In a skillet, cook the onion and 2 tablespoons of the butter over moderately low heat, stirring, until it is very soft. In a heavy saucepan, melt 6 tablespoons of the remaining butter over moderately low heat, whisk in the flour, and cook the roux, whisking, for 3 minutes. Add the milk, scalded, in a stream, whisking, and bring the sauce to a boil. Simmer the sauce, whisking, for 1 minute and add salt and pepper to taste.
  • Peel the potatoes and slice them ⅛-inch thick. Spread about one third of the sauce in the bottom of a well-buttered 3-quart gratin dish at least 2 ½-inches deep, cover it with a layer of potato slices, overlapping the slices slightly, and cover the potatoes with one third of the onions. Sprinkle the onions with one third of the Cheddar and continue to layer the remaining sauce, potatoes, onions, and Cheddar in the same manner. Sprinkle the top with bread crumbs, and dot it with the remaining 1 tablespoon butter, cut into bits.
  • Bake the mixture, covered with foil, in the middle of preheated oven for 20 minutes. Remove the foil and bake the potato mixture for 35 minutes more, or until the top is golden and the potatoes are tender.

3/4 teaspoon grated nutmeg
3 pounds large boiling potatoes (about 6)
3 tablespoons unsalted butter, cut into small cubes
1 1/2 cups heavy cream
3/4 cup whole milk

Steps:

  • Preheat oven to 350°F with rack in upper third. Generously butter a 2 1/2-quart shallow baking dish (not glass).
  • Stir together nutmeg, 2 teaspoons salt, and 3/4 teaspoon pepper.
  • Peel and thinly slice potatoes. Layer potatoes in baking dish, overlapping slightly and sprinkling each layer with some of salt mixture and some of butter. Pour cream and milk over potatoes, pressing down gently to submerge potatoes in liquid.
  • Cover with foil and bake until potatoes are tender, 1 to 1 1/4 hours.
  • Remove gratin from oven and discard foil. Turn broiler on and broil gratin 2 to 3 inches from heat until top is browned in spots, 3 to 5 minutes.
  • Let stand 10 minutes before serving.

1/4 cup all-purpose flour
2 cups chicken broth
1 1/2 cups coarsely grated extra-sharp Cheddar cheese
2 pounds boiling potatoes
1/2 cup fresh bread crumbs

Steps:

  • Preheat oven to 350°F. and butter a 2-quart shallow baking dish.
  • In a heavy saucepan melt butter over moderately low heat and whisk in flour. Cook roux, whisking, 3 minutes and add broth in a stream, whisking. Bring sauce to a boil, whisking, and simmer, whisking, until thickened, about 2 minutes. Remove pan from heat and whisk in cheese and salt and pepper to taste, whisking until cheese is melted.
  • Peel potatoes and slice about 1/8 inch thick. In prepared baking dish make 5 layers each of potatoes and sauce, beginning with potatoes and ending with sauce. Scalloped potatoes may be prepared up to this point 2 hours ahead and kept covered.
  • Sprinkle bread crumbs on top and bake, uncovered, in oven 1 hour, or until potatoes are tender and top is golden.

The variety of potatoes used in this recipe is called "Annebelle". They come from Elmsdale, PEI. It has a cylindrical or fingerling shape that tends to be uniform in size; smooth skin that's easily peeled; a pleasing yellow flesh similar to "Yukon Gold"; eyes that are barely visible, giving it great visual appeal on the plate. It is resistant to greening, which gives it a relatively long shelf life. But perhaps most important is the flavor: smooth and buttery, suitable for boiling or steaming and mashing. This recipe is great on it's own or as an accompanimen for any meal. I found this recipe in a regional magazine called "Saltscapes" and fell in love with it - so delicious!!

2 tablespoons butter (a substitute isn't recommended)
6 annabelle potatoes, skin on, thinly sliced
2 garlic cloves, finely chopped
1/2 teaspoon ground pepper
3 ounces double cream goat brie cheese
1/2 cup sour cream
1/4 cup fresh chives
additional chives (to garnish)

Steps:

  • In a good-sized frying pan, melt butter; add potatoes, garlic and ground pepper. Cook potatoes. Be patient - allow potatoes to brown a bit before turning.
  • Once turned, add goat cheese. Mix in until it starts to melt, then incorporate sour cream and chives, Garnish with chives.

1 teaspoon butter, softened
1 cup heavy whipping cream
1/3 cup whole milk
1 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves, crushed
6 medium potatoes
1 cup shredded Swiss cheese
1/4 cup shredded Parmesan cheese

Steps:

  • Grease a shallow 13x9-in. baking dish with the butter; set aside. In a small saucepan, combine the cream, milk, salt, pepper and garlic. Cook just until bubbles begin to form around sides of pan. Remove from the heat; cool for 10 minutes. , Peel and thinly slice the potatoes; pat dry with paper towels. Layer half the potatoes in prepared baking dish; top with half the cream mixture and half the cheeses. Repeat layers. , Bake, covered, at 350° for 40 minutes. Uncover and continue baking until potatoes are tender, 20-25 minutes longer. Let stand for 5-10 minutes before serving.

  • Melt the butter in a stock pot over medium-high heat. Add the flour and whisk until smooth. Simmer, whisking constantly, for 2 minutes. Add the onions and garlic and stir to combine. Add the milk, cream and salt and whisk until smooth. Bring to a simmer and whisk until thickened. Whisk in the Cheddar and half of the Parmesan cheese. Whisk until melted. Stir in the potatoes.
  • Pour the potato mixture into a 2 quart casserole dish. Sprinkle with remaining Parmesan cheese.
