SLOW COOKER VEGAN IRISH STEW



Slow Cooker Vegan Irish Stew image

A simple Irish stew full of flavourful winter vegetables and lentils in a rich gravy made in a slow cooker.

Number Of Ingredients 11

4 medium potatoes, cut into large pieces
3 medium red onions, cut in half and into wedges
2 cloves of garlic, finely chopped or crushed
5 medium carrots, cut into thick slices
400g can of green lentils (265g when drained)
2 tsp ground cumin
2 tsp ground coriander
3 vegetable stock cubes (to crumble in)
2 heaped tbsp tomato puree
500ml/2 cups beer
a good grinding of salt and pepper

Steps:

  • Add all of the ingredients to a slow cooker pot.
  • Season well with salt and pepper.
  • Stir well and set to high for 6 hours or low for 8 hours.
  • Serve with mashed potatoes or crusty bread.
  • Enjoy!

2 pounds beef stew meat, cut into 1-inch pieces
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
1 clove garlic, minced
1 bay leaf
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, chopped
1 ½ cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Steps:

  • Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  • Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

A good, hearty stew good for anytime of the year, but just perfect for St. Patrick's day. I think the recipe came from the crock pot cookbook included with cooker.

1 lb boneless lamb
2 tablespoons cooking oil
2 medium turnips, peeled and cut into 1/2-inch pieces (2-1/2 cups)
3 medium carrots, peeled and cut into 1/2-inch pieces (1-1/2 cups)
2 medium potatoes, peeled and cut into 1/2-inch pieces (1-1/2 cups)
2 medium onions, cut into wedges
1/4 cup quick-cooking tapioca
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme, crushed
3 cups beef broth

Steps:

  • Cut lamb into 1-inch pieces. In a large skillet brown pieces, half at a time, in hot oil. Drain well.
  • Meanwhile combine turnips, carrots, potatoes, onions, tapioca, salt, pepper and thyme in a 3-1/2 to 4-1/2 quart crock pot. Stir in browned lamb and beef broth.
  • Cover; cook on LO setting for 10-12 hours (or on HI setting for 5-6 hours).

1 tablespoon olive oil
1 medium yellow sweet onion, diced (or white or red onion)
2 garlic cloves, finely chopped
4 cups vegetable broth, room temperature (try The End of All Things Vegetable Broth)
1 tablespoon nutritional yeast flakes
3/4 cup apple juice (or cider)
1/4 cup apple cider vinegar
3 large potatoes, peeled and cut into chunks
2 large carrots, peeled and cut into chunks
3 large celery ribs, cut into chunks
2 large parsnips, peeled and cut into chunks
3 tablespoons pearl barley
1/2 teaspoon dried sage (or 3 fresh sage leaves finely chopped)
salt and pepper
1 bay leaf
1/2 cup frozen peas, thawed
4 -6 green onions, chopped, for garnish (optional, or coarsely chopped fresh parsley)

Steps:

  • In large sauté pan, heat olive oil over medium heat. Add onions and garlic and sauté until softened, about 5 minutes. Remove to crockpot.
  • To crock pot add vegetable broth and nutritional yeast; stir to dissolve nutritional yeast. Add apple juice and apple cider vinegar to the crock pot.
  • Add remaining ingredients except peas and green onions to crock pot. Stir well; cover and set on low.
  • Cook on low 6 to 8 hours.
  • Add the peas the last hour of cooking time.
  • Remove bay leaf and ladle into bowls.
  • Sprinkle generously with chopped green onions or chopped parsley.

2 tablespoons olive oil
3 tablespoons all-purpose flour
2 pounds beef chuck, cut into 1 1/2-inch cubes
1 pound carrots, peeled and cut into 1-inch chunks
6 large potatoes, peeled and cut into large chunks
1 white onion, cut into large chunks
2 cloves garlic, minced
2 cups beef broth
1 (6 ounce) can tomato paste
1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness(r))
1 tablespoon cold water
1 tablespoon cornstarch

Steps:

  • Heat the oil in a large skillet over medium heat. Toss beef cubes with flour to coat, then fry in the hot oil until browned. Place the carrots, potatoes, onion and garlic in a large slow cooker. Place the meat on top of the vegetables. Mix together the beef broth and tomato paste and pour into the slow cooker along with the beer.
  • Cover and cook on High for 6 hours or Low for 8 hours. During the last hour before serving, dissolve the cornstarch in cold water and then stir into the broth. Simmer on the High setting for a few minutes to thicken.

2 pounds cubed beef stew meat
6 potatoes, peeled and diced

  • Heat a skillet over medium heat and add oil. Cook stew meat until browned on all side, 5 to 10 minutes.
  • Transfer browned meat to the insert of a slow cooker. Add potatoes, onion, water, bouillon cubes, salt, and pepper.
