3/4 cup unsweetened apple cider or juice
1/3 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
6 medium apples, peeled and quartered (3 pounds)

Steps:

  • Place the apple juice, sugar, cinnamon and cloves in a blender; cover and process until blended. Adding 3-4 apple pieces at a time, cover and process until smooth. , Pour into a saucepan. Bring to a boil. Reduce heat; cover and cook over low heat for 1 hour, stirring occasionally. , Uncover and cook 1 to 1-1/2 hours longer or until thickened. Store in airtight containers in the refrigerator.

2 pounds Honeycrisp apples - peeled, cored, and cut into 1-inch pieces
2 pounds Granny Smith apples - peeled, cored, and cut into small pieces
1 cup apple cider
2 cups white sugar
2 tablespoons lemon juice
canning jars with lids and rings

Steps:

  • Combine Honeycrisp apples, Granny Smith apples, and apple cider in a large stainless steel or enamel-coated saucepan; bring to a boil, stirring occasionally. Reduce heat to medium-low; simmer until mixture reduces by about half, about 20 minutes.
  • Stir sugar and lemon juice into the apple mixture; bring to a boil. Reduce heat to medium-low, and continue cooking at a simmer until the mixture is very thick, about 25 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple butter into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Yield Makes about 8 (1-cup) jars or 128 servings, 1 Tbsp. each.

Number Of Ingredients 7

5 cups prepared fruit (buy about 4-1/4 lb. tart apples)
1-1/2 cups water
1/4 cup fresh lemon juice
2 tsp. ground cinnamon
7 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine
1 pouch CERTO Fruit Pectin

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Remove blossom and stem ends from unpeeled apples. Core apples; cut into quarters. Place in 4-qt. saucepan. Add water and lemon juice; stir. Bring to boil; cover. Simmer on medium heat 20 min. or until apples are tender, stirring occasionally. Press mixture through food mill or strain through coarse sieve, using wooden spoon to force apples through mill; discard peels. Measure exactly 5 cups of the prepared fruit into 6- or 8-qt. stockpot. Stir in cinnamon.
  • Stir sugar into prepared fruit in stockpot. Add butter to reducing foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in pectin. Return to full rolling boil; cook exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing centers of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

Yield Makes 9 (1-cup) jars jelly and 11 (1-cup) jars apple butter or 320 servings, 1 Tbsp. each.

Number Of Ingredients 7

5 cups prepared juice and 5 cups prepared fruit (buy about 4 lb. fully ripe apples or crab apples)
6-1/2 cups water
15 cups (6-1/2 lb.) sugar, divided, measured into separate bowls
1 tsp. butter or margarine, divided
2 pouches CERTO Fruit Pectin, divided
1 tsp. ground cinnamon
1/2 tsp. ground allspice

Steps:

  • Remove stems and blossom ends from apples. (Do not peel or core apples.) Cut apples into small pieces; place in saucepan. Add water. Bring to boil on medium-high heat. Reduce heat to low; cover and simmer 10 min. Crush fruit with a hand masher; cover. Simmer an additional 5 min., stirring occasionally. Place two layers of damp cheesecloth or jelly bag in large bowl. Pour prepared fruit into cheesecloth. Tie cheesecloth closed; hang and let drip into bowl until dripping stops. Press gently. Measure exactly 5 cups juice into 6- or 8-qt. saucepot. Set juice aside for Apple Jelly.
  • Press pulp through sieve. Measure exactly 5 cups prepared pulp into another 6- or 8-qt. saucepot. Set pulp aside for Spiced Apple Butter.
  • Apple Jelly
  • Mix 7-1/2 cups of the sugar into juice in saucepot. Add 1/2 tsp. of the butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in 1 pouch of the pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle imeediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)
  • Spiced Apple Butter
  • Mix remaining 7-1/2 cups sugar and the spices into fruit pulp in saucepot. Add remaining 1/2 tsp. butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in remaining pouch of pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. 3-1/2 cups prepared fruit (about 1 lb. Granny Smith or other tart green apples)
1-1/2 cups water
1/2 cup raisins
1/4 cup fresh lemon juice
1 tsp. ground cinnamon
1/4 tsp. ground allspice
4-1/2 cups granulated sugar, measured into separate bowl (See tip below.)
1 cup firmly packed light brown sugar
1/2 tsp. butter or margarine
1 pouch CERTO Fruit Pectin

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Peel and core apples. Chop finely or grind. Add water and raisins. Measure exactly 3-1/2 cups prepared fruit into 6- or 8-quart saucepot. Stir in lemon juice, cinnamon and allspice.
  • Stir sugars into prepared fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Stir in pectin quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Steps:

  • Mix all ingredients in 5- to 6-quart slow cooker.
