Easy and yummy tomato sauce with few ingredients. Tasty.

4 tablespoons olive oil
1 onion, chopped
3 tomatoes, chopped
1 tablespoon tomato puree
salt and pepper to taste

Steps:

  • In a large skillet over medium heat, cook onion in olive oil until translucent. Stir in tomatoes, cook until juice begins to thicken. Stir in puree, salt and pepper. Reduce heat and simmer 15 minutes more, until rich and thick.

This is from a Southern Living Book titled, "Canning and Preserving Cookbook". I haven't tried the recipe but am posting it as a request. Hope you enjoy it. Prep time depends on how much you are making as the recipe gives no specific amounts.

firm ripe tomatoes
salt

Steps:

  • Wash, rinse, drain and core the fresh firm tomatoes.
  • Cut in 2-inch pieces and place in a large kettle.
  • Cover and cook over low heat until the juice runs freely.
  • Remove the cover and cook over high heat, stirring frequently, until the tomatoes are mushy.
  • Put the tomatoes through a food mill or sieve to remove the skins and seed.
  • Return the pulp to the kettle and cook until almost as thick as catsup.
  • Pour the hot sauce to 1/4 inch from the top of the jars and add 1 tsp salt to each jar.
  • Place the lids on the jars and screw the bands tight.
  • Process pints and quarts in boiling water in a waterbath canner for 30 minutes.

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

10 ripe tomatoes
2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
1 green bell pepper, chopped
2 carrots, chopped
4 cloves garlic, minced
¼ cup chopped fresh basil
¼ teaspoon Italian seasoning
¼ cup Burgundy wine
1 bay leaf
2 stalks celery
2 tablespoons tomato paste

Steps:

  • Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining two tomatoes and set aside.
  • In a large pot or Dutch oven over medium heat, cook onion, bell pepper, carrot and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, basil, Italian seasoning and wine. Place bay leaf and whole celery stalks in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and celery and serve.

Yield Makes enough to feed a family of 5, when stirred through pasta or spooned over chicken or fish

Number Of Ingredients 6

1 tbsp olive oil
2 onions, chopped
2 garlic cloves, crushed
1 tbsp tomato purée
2 x 400g cans chopped tomatoes
1 tsp dried oregano

Steps:

  • Heat the olive oil in a large saucepan, add the onions and cook on a low heat until soft. Add the garlic and tomato purée. Cook for a few minutes then add the chopped tomatoes and oregano. Season generously and simmer for 20 mins, then allow to cool.
  • Store in sterilised jars in the fridge for up to 1 week, or transfer to a container and freeze for up to 2 months.

Number Of Ingredients 8

4 tbsp olive oil
2 onions, finely chopped
2 carrots, finely chopped
2 celery sticks, finely chopped
2 garlic cloves, crushed
2 bay leaves
1 tsp sugar
4 x 400g/14oz cans chopped tomatoes

Steps:

  • Heat the oil in a pan and add the vegetables and bay leaf. Stir in the sugar with some salt. Gently cook for 10-15 mins until the veg is tender. Stir in the tomatoes and 150ml water. Simmer very gently for 30 mins until the sauce has reduced by two-thirds and is very thick. (If you have doubled or tripled the quantities, this may take up to 1 hr.)
  • Stir occasionally, particularly towards the end of the cooking time, so that the sauce doesn't catch on the bottom. If you like your sauce a little thinner, add a splash of water. Serve half with pasta and chill or freeze other half in 1-2 batches for later use (see 'Goes well with' for ideas of how to use up your sauce).
