1 medium head red cabbage, coarsely chopped
1 can (14 ounces) whole-berry cranberry sauce
2 medium Granny Smith apples, peeled and coarsely chopped
1 medium onion, chopped
1/2 cup cider vinegar
1/4 cup sweet vermouth, white wine or unsweetened apple juice, optional
1 teaspoon kosher salt
3/4 teaspoon caraway seeds
1/2 teaspoon coarsely ground pepper

Steps:

  • Combine all ingredients; transfer to a 8.5-qt. electric pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Allow pressure to naturally release for 5 minutes. Quick-release any remaining pressure. Serve with a slotted spoon.

1 medium head red cabbage, coarsely chopped (8 cups)
1 can (14 ounces) whole-berry cranberry sauce
2 medium Granny Smith apples, peeled and coarsely chopped
1 large white onion, chopped
1/2 cup cider vinegar
1/4 cup sweet vermouth or white wine, optional
1 teaspoon kosher salt
3/4 teaspoon caraway seeds
1/2 teaspoon coarsely ground pepper

Steps:

  • Combine all ingredients; transfer to a 5-qt. slow cooker. Cook, covered, on low 3-4 hours or until cabbage is tender. Serve with a slotted spoon.

I love German food, especially this classic side dish known as rotkohl. My method is decidedly Americanized, but the taste brings me back to my heritage.

2 tablespoons butter
3 tablespoons cider vinegar
¼ cup brown sugar
½ teaspoon salt, or to taste
¼ cup onion, minced
½ cup grated peeled apple
2 pounds red cabbage, thinly sliced
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter. Add apple cider vinegar, brown sugar, and salt. Stir to combine. Mix in onion, grated apple, and red cabbage until well combined. Close and lock the lid. Select Steam function. Set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Mix in ground cloves and allspice.

2 bay leaves
5 star anise
½ tsp ground cinnamon
200ml vegetable stock or water
50g golden caster sugar
75ml cider vinegar
2 apples, cored and cut into wedges

Steps:

  • Place all the ingredients except for the apples in a large saucepan and season. Place over a medium heat, bring to the boil, then turn down the heat and simmer for 30 mins. Add the apples, then continue cooking for 15 mins until tender.

1 ½kg red cabbage
2 onions, chopped
4 Granny Smiths apples, peeled and cored and chopped
zest 1 orange or 2 clementines
2 tsp ground mixed spice
100g light soft brown sugar
3 tbsp cider vinegar
300ml dry cider
25g butter

Steps:

  • Peel off the outer leaves from the cabbage and discard. Quarter the cabbage, removing the tough stem, then thinly slice. Arrange a layer of the cabbage on the bottom of a large saucepan, followed by some of the onions, apples, zest, mixed spice, sugar and seasoning. Continue to create layers until you have used up the ingredients.
  • Pour over the vinegar and cider and dot the butter on top. Bring to the boil then simmer with a lid on over low heat for 1½ hrs, until tender. The cabbage will keep for 2 days, covered, in the fridge or freeze for up to 1 month. Reheat in either a pan or in the microwave.

3 tbsp olive oil
2 large onions, halved and thinly sliced
1 tsp ground cloves
1 medium red cabbage, quartered, cored and thinly sliced
200ml vegetable stock
3 tbsp balsamic vinegar
100g brown sugar
200g fresh or frozen cranberry

Steps:

  • Heat the oil in a large pan. Add the onions and fry, stirring every now and then, for about 10 mins, until they start to caramelise. Stir in the cloves, then add the cabbage and continue cooking, stirring more frequently this time, until the cabbage starts to soften.
  • Pour in the stock, add the vinegar and sugar, then cover and cook for 10 mins.
  • Stir in the cranberries and cook for 10 mins more. Cool and keep in the fridge for up to 4 days, or freeze for 1 month. Thaw in the fridge overnight. Reheat until very hot before serving.

1 medium onion, chopped
1/4 cup butter
1 medium head red cabbage (2 pounds) , shredded
2 medium tart apples, peeled and chopped
1 cup apple cider or apple juice
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
Minced fresh parsley, optional

Steps:

  • In a large skillet, saute onion in butter until golden and tender. Add the cabbage, apples, cider, sugar, vinegar, salt and pepper. Bring to a boil.   • Add red cabbage, apples, onion, 1 1/2 cup water, vinegar, sugar and salt to the pressure cooker pot and stir.
  • Close the lid and make sure the valve is set to seal. Set the pressure cooker on high for 10 minutes.
  • Once the pressure cooker has cooked for the 10 minutes and beeped, manually release the pressure by turning the valve to vent. Once the air pressure is released, remove the lid and stir.
  • Whisk together the corn starch and 3 tbsp water to make a slurry. Slowly pour into the cooked cabbage and stir until fully dissolved into the sauce. Continue to stir until the sauce has thickened.
