GINGER APPLE SALAD
This is a recipe I adopted because it sounded interesting. It took me a while to get around to making it, which is too bad because I thought it was really delicious. For an apple salad, it will keep fairly well in the fridge; we ate the leftovers a day later and they were still in good condition. The main change I have made from the original recipe is to cut the number of apples in half. It still makes quite a lot, and plenty for 4 servings.

Steps:
- Mix the honey and orange juice in a large bowl, until the honey is dissolved.
- Wash, core and chop the apples, and add them to the orange juice and honey.
- Grate the gingerroot, and add it, with its' juice.
- Wash and chop the celery, and add the celery, dried fruit and walnuts to the salad. Chill the salad.
- Wash and dry a few lettuce leaves, and arrange the salad on them. Serve sprinkled with a little minced fresh mint, if desired.
LIGHT AND CREAMY APPLE SALAD
Steps:
- In a medium bowl, toss together apples, raisins, and juice.
- In a small bowl, whisk together yogurt, mayonnaise and apple pie spice.
- Gently combine yogurt mixture with apple mixture. Refrigerate until ready to serve.
- Just before serving, sprinkle with pecans and coconut.

Steps:
- Heat apple juice to boiling, and let raisins plump in juice for 30 minutes.
- Grate carrots and apple, and blot the apple between pieces of paper towel to get rid of excess moisture.
- Drain raisins, reserving juice, and add the raisins to a bowl with the carrot and apple.
- Whisk honey, vinegar, spices and two teaspoons of the reserved apple juice.
- Pour over carrot/raisin/apple mixture and toss well.

HAPPY APPLE SALAD
This colorful salad is happy because it isn't drowning in a heavy mayonnaise or sour cream dressing. Your heart will be happy because it's a healthy salad and YOU'LL be happy because this salad tastes GREAT! Everyone I have served this to loved it and had no idea it was "healthy".

Steps:
- Core and cut the apples into bite-sized pieces and toss with lemon juice to prevent the apple pieces from browning.
- In a large bowl toss all the ingredients together except the yogurt.
- Gently fold in yogurt and chill the salad before serving.
- NOTE: sometimes I substitute 1/2 c finely chopped celery for the raisins for a less sweet salad.
