SPINACH LOVERS DELIGHT
A favorite of the spinach lovers in our family.

Steps:
- 1. Thaw and drain chopped spinach. Sprinkle with garlic powder, seasoned salt and pepper (to your taste.)
- 2. In a large bowl mix eggbeaters, cheeses, onions and dill. Pour mixture in a ligtly greased 9x9 pan.
- 3. Bake in preheated oven at 350' for 50-60 minutes. A knife inserted in the center should come out clean. Cool slightly before cutting. Enjoy !

Steps:
- Cook, drain, and chop the spinach; set aside.
- Saute the mushrooms and scallions in the butter in a saucepan until tender.
- Whisk in the flour.
- Gradually add the chicken broth and mix well. Stir in the milk and mix well. Reduce heat. Cook until thickened, stirring constantly.
- Stir in the Swiss cheese, cream cheese, salt, and nutmeg. Add pepper to taste. Cook until the cheeses melt, stirring constantly.
- Add the cooked spinach and mix well. Cook just until heated through, stirring gently.
