RICOTTA PANCAKES



Ricotta Pancakes image

Soft and fluffy Ricotta Pancakes made from scratch.

Number Of Ingredients 11

210 grams (1 and 1/2 cups) plain flour or all purpose flour, sifted
50 grams (1/4 cup) caster sugar or granulated sugar
2 teaspoons baking powder
Pinch of salt
2 large eggs
180 ml (3/4 cup) full fat or whole milk
190 grams (3/4 cup) full fat ricotta*
1 teaspoon vanilla extract
Butter, for frying
Blueberries, for serving
Maple syrup, for serving

Steps:

  • In a large mixing bowl, add flour, sugar, baking powder and salt. Whisk briefly to combine.
  • In a separate mixing bowl, add eggs, milk, ricotta and vanilla. Whisk for 30 seconds to break up the egg yolks and combine the wet ingredients.
  • Pour wet ingredients into dry ingredients and whisk to combine. Batter should be thick and smooth.
  • Place a medium-sized frying pan on low-medium heat. Add a teaspoon of butter and smear it around to cover the base of the frying pan. Add approximately 3 tablespoons of pancake batter to the middle of the pan.
  • Fry pancake until golden. Flip and cook on the other side until lightly golden. Repeat with the remaining pancake batter, smearing the pan with butter after every pancake. Serve warm with fresh blueberries and maple syrup.

Using instant potato flakes and an instant pancake mix for my starter, I'm always ready for my B-and-B guests. Works great if you're cooking for 2 or 20. Great by themselves -- or top with bacon, poached egg, and cheese (we like applesauce on the side, also.) Great finger food, just fold it over a slice of cheese or bacon.

⅔ cup instant mashed potato flakes
⅓ cup complete dry pancake mix
½ cup chopped onion
1 cup shredded Cheddar cheese
1 cup skim milk
1 egg, beaten
1 tablespoon extra-virgin olive oil
½ teaspoon garlic powder
1 pinch salt and pepper to taste
1 pinch cayenne pepper

Steps:

  • Stir together the potato flakes, pancake mix, onion, Cheddar cheese, milk, egg, olive oil, garlic powder, salt, pepper, and cayenne pepper in a bowl until well combined.
  • Grease a griddle or large skillet, and place over medium heat. Drop pancakes, 1/4 cup at a time, onto the hot griddle, and cook until the edges look dry and 1 bubble appears in the center, about 3 minutes. Flip the pancakes, and cook until browned on the other side, about 3 more minutes.

This recipe came from Sun Valley Celebrity Local Heroes Cookbook. Muzzie Braun and the Boys from Clayton, Idaho submitted their favorite pancake recipe, and Joann says the kids pile 'em high because they're so thin. The recipe instructions were a little vague so I revised them, and I wasn't sure how they'd taste, but they're very good. They remind me of Baby Dutchman or Dutch Babies in a pancake. It didn't say to oil the griddle, and you probably don't need to because of the ingredients in the recipe. I wasn't sure so I heated a teaspoon of oil just in case. Serving size is approximate because it wasn't listed.

1 1/2 cups flour
2 tablespoons baking powder
6 eggs
1 tablespoon oil
4 tablespoons butter, melted
1 1/2 cups milk

Steps:

  • Combine flour and baking powder.
  • Blend eggs, oil, melted butter, and milk with a wire whip (I call it a whisk).
  • Make sure to keep the mixture loose and not real thick (I just combined the ingredients--I didn't overbeat, but I could have misinterpreted the instructions).
  • Combine wet ingredients with dry and cook on a hot griddle.

Low in carbs and gluten-free, these quick and easy pancakes are made with almond flour and are a wonderful treat to have for breakfast or brunch at home.

1 1/2 cups finely ground blanched almond flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
3/4 cup whole milk
2 large eggs
1 teaspoon pure vanilla extract
Vegetable oil, for pan
Softened butter, sliced strawberries, and warmed maple syrup, for serving

Steps:

  • In a medium bowl, whisk together almond flour, sugar, baking powder, and salt. Add milk, eggs, and vanilla and whisk until well combined.
  • Preheat oven to 200°F and place a rimmed baking sheet fitted with a wire rack inside. Heat a large cast iron skillet, griddle, or nonstick pan over medium-low. Add 1 teaspoon oil, then wipe with a paper towel, leaving behind a thin film.
  • Working in batches, add scant quarter-cups of batter to skillet, gently spreading them out into circles using the bottom of the measuring cup.
  • Cook pancakes until a few bubbles come to the surface, edges have set, and undersides are golden-brown, 3 to 4 minutes. Flip and cook about 2 minutes more. Transfer pancakes to oven to keep warm and repeat with remaining batter (oiling the skillet in between batches).
  • Serve pancakes with butter, strawberries, and maple syrup.

  • In a small bowl, whisk together creme fraiche, milk, egg, and melted butter. Pour creme fraiche mixture into dry ingredients and mix just until combined. A few lumps are ok!
  • Heat a non-stick skillet over medium heat. Melt a bit of butter or spray pan with cooking spray. Working in batches, pour about 3 tablespoons or so of batter per pancake into skillet and cook until bubbles appear on surface and undersides are golden brown, about 3 minutes. Flip pancakes and cook about 1 minute more. Repeat until all pancakes are done.
  • Serve with butter (duh!), warm maple syrup, a dollop of Vermont Creamery vanilla crème fraîche and whatever fruit is in season!
