Steps:
- In a medium saucepan over medium heat, melt butterscotch chips and peanut butter together. Remove from stove and stir in cornflakes. Drop by spoonfuls onto cookie sheets. Chill to harden.

BUTTERSCOTCH CORNFLAKE BARS
We all love butterscotch, my daughter helped come up with this one.

Steps:
- 1. Spray a 13x9 pan with cooking spray.
- 2. In a larg bowl, melt butterscotch chips and peanut butter in the microwave. Start at 1 min., stir then microwave in 20 second intervals until melted. Usually 1 min. has worked for me.
- 3. Spread mixture into pan and gently press down mixture into pan. You might want to use wax paper or spray your hands with cooking spray.
- 4. Allow to cool and set up for about 30 mins.

Steps:
- Cook syrup and sugar until mixture comes to a boil. Stir constantly; do not overcook.
- Remove from heat, add peanut butter, and stir until smooth. Pour mixture over cornflakes in a large bowl. Mix until cereal is thoroughly coated.
- Spread in a buttered 9 x 13 inch pan and press down lightly with buttered hands. When cool, cut into squares.

BUTTERSCOTCH TREATS
I got this recipe from a family member who brought it to every gathering...with good reason...it's so good! I made it once and took it to work. It was gone within 2 hours. I had to start making it a double batch just so everyone could have some. It is so easy, and so quick. It's a great last minute dish to take.

Steps:
- In a large bowl, melt chips and peanut butter in microwave by heating it on low to medium power and stirring every 30 seconds or so till melted.
- Add corn flakes and mix till flakes are well coated with butterscotch mixture.
- Spread into 9" by 13" cake pan and press down lightly with wax paper.
- Cool about 30 minutes.
- Cut and enjoy!

This has been a longtime family favorite. Very easy to make and a great choice for peanut butter lovers. The lighter you press the mixture into the pan, the more tender the candy will be.

Steps:
- Combine white sugar, brown sugar, and corn syrup in a microwave-safe glass or ceramic bowl and heat until sugars have dissolved, about 1 minute. Stir in peanut butter. Place the cornflakes and peanuts into a large bowl and stir in syrup mixture, mixing well.
- Spray a 9x13 inch pan with cooking spray. Lightly press the corn flake mixture into the pan. Melt the butterscotch chips in the same microwave-safe glass or ceramic bowl in 30 second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or butterscotch will scorch. Spread over the cornflake mixture. Allow candy to cool, then cut into 1x2 inch bars.

Steps:
- Place half only of the chip in a small pot and melt over low heat, stirring constantly.
- Combine the melted butterscotch chip with the brown sugar, butter, egg and vanilla.
- Beat all together very well.
- Combine the sifted flour with the baking soda and salt.
- Now sift the dry ingredients into the beaten mixture. Combine well.
- Stir in the remaining butterscotch chipits, cornflakes, and raisins or nuts.
- Shape into small balls.
- Place on ungreased baking sheet. Flatten with a fork in a criss-cross pattern.
- Bake at 375° for 10-12 minutes until nicely browned and desired crispness.
- Remove from cookie sheet while still warm onto a wire rack.
- Makes 60 cookies.

- Add to a large mixing bowl: cereal, 1 cup marshmallows, 1 cup butterscotch chips, toasted coconut (reserve a handful for sprinkling on top of the finished bars, if desired).
- Add butter to a large saucepan over medium heat. Once it’s almost melted, add the remaining marshmallows and stir well to coat in the butter. Cook, stirring constantly, until almost completely melted. Remove from heat and stir in remaining 1 cup of butterscotch chips. Stir well until smooth and, working quickly, pour over bowl with cereal and stir to coat.
- Pour mixture into the prepared pan and press into an even layer. Sprinkle coconut flakes on top, if desired. Cool for a few minutes before cutting into bars.
