Serve up this sensational sausage and sweet potato traybake for an easy family meal. To make things even simpler, you can freeze it for busy weeknights

2 red onions, peeled and quartered
2 corn cobs, cut into 4-6 pieces
1 mango, stoned and chopped
2 large sweet potatoes, cut into wedges
8-12 pork sausages
2 tsp ground cumin
2 tsp ground paprika
2 tsp fennel seeds
2 tsp dried oregano
2 tbsp barbecue sauce
2 tbsp vegetable, rapeseed or olive oil
chopped coriander
chopped chillies (for the grown-ups)

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
  • Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first. Can be frozen for up to one month. Defrost thoroughly before reheating in the oven at 200C/180C fan/gas 6 for 35-40 mins. Serve sprinkled with the coriander and chilli, if you like.

2 large sweet potatoes, cut into 1/2-inch cubes
1 large sweet onion, cut into wedges
2 tablespoons olive oil
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/8 teaspoon pepper
3 small pears, quartered
1 package (19 ounces) Italian sausage links

Steps:

  • Preheat oven to 425º. Place sweet potatoes and onion in 15x10x1-in. baking pan; drizzle with oil. Sprinkle with brown sugar and seasonings; toss to coat. Bake for 15 minutes. Gently stir in pears; top with sausages., Bake 20 minutes longer, stirring once. Increase oven temperature to 450º. Bake until sausages are golden brown and a thermometer inserted in sausage reads at least 160º, 8-10 minutes longer, turning once.

This cheap, crowd-pleasing meal is easy, hearty fare. This needs hardly any prep and it's pure comfort food, with a good helping of veg and hot bubbling cheese

680g cauliflower florets
180g sliced kale
1 tbsp olive oil
400g sausages , meat squeezed out
700g cheese sauce (shop-bought is fine, or see a recipe in our goes well with section)
100g cheddar , grated
mixed leaves , to serve (optional)

Steps:

  • Bring a large pan of salted water to the boil and cook the cauliflower for 6 mins, adding the kale for the final min. Drain well.
  • Meanwhile, heat the oil in a non-stick frying pan and add the sausagemeat, breaking it up with a wooden spoon. Brown all over for 4-5 mins.
  • Heat oven to 200C/180C fan/gas 6 and put the cauliflower and kale in a large baking dish. Pour over the cheese sauce, season and mix to coat well. Scatter over the sausagemeat and the cheddar. Bake for 30 mins until the top is golden and bubbling. Serve with mixed leaves, if you like.

Add ½ cup of water and cook, stirring occasionally, about 5 minutes, or until the kale has wilted and the water has cooked off. Stir in the lemon juice. Remove from heat.
  • In a medium pan, heat the butter on medium-high until melted. Add the garlic and season with salt and pepper. Cook 30 seconds until fragrant. Add the flour and cook, whisking frequently, 30 seconds, or until well combined. Slowly whisk in the milk and ½ cup of water; cook, whisking frequently, about 3 minutes, or until thickened. Turn off the heat and season with salt and pepper to taste.
  • Transfer the cooked vegetables to the pot of béchamel sauce; stir to combine. Transfer the mixture to a baking dish. Bake 15 to 18 minutes, or until golden brown. Remove from the oven. Let stand for about 5 minutes before serving.

  • Preheat oven to 400F with rack on lower middle position. Lightly grease a 9×13 baking dish and set aside.
  • On a large baking sheet, combine sweet potatoes with 2 TB olive oil, 1/2 tsp kosher salt, and 1/4 tsp freshly ground black pepper; toss to coat well. Bake in a single, even layer for 20 minutes until soft.
