BROWN SUGAR-SRIRACHA BACON BITES

Steps:
- Preheat the oven to 375 degrees F. Stir together the sriracha and brown sugar in a medium bowl; add the bacon pieces and toss to coat. Set aside.
- Line a large rimmed baking sheet with aluminum foil; place a wire rack over the foil. Spray the rack liberally with cooking spray. Place the bacon pieces in a single layer on the rack.
- Bake until the bacon is almost crisp, 15 to 20 minutes. Sprinkle the bacon with the toasted and black sesame seeds and bake an additional 5 minutes. Cool for 5 to 8 minutes, moving the bacon pieces slightly on the rack every 2 minutes to prevent sticking. (The bacon will crisp more as it cools.)

A twist on the traditional sweet and spicy sauce. Add to pork, chicken, or tofu as a sauce or brush on while cooking for a glaze. Can be made vegan and/or gluten free. My kids and husband all love this!

Steps:
- Heat your oven to 400 degrees F.
- Line a couple of rimmed baking sheets with parchment or foil. Lay bacon out on the baking sheets making sure the pieces don't overlap.
- Mix together the maple syrup and Soyracha in a small bowl and brush the bacon slices on both sides with it. There should still be a bunch of the sauce left -- use this to brush occasionally as the bacon is cooking.
- Stick the pans of bacon in the oven and bake until browned and crispy (about 18 to 25 minutes-depending on the thickness of your bacon),.
- During the baking of the bacon, take the pans out once about halfway through and once towards the very end when they're looking almost done and brush with more sauce.
- Transfer the cooked bacon to a plate or platter and serve.

- Arrange racks in upper and lower thirds of oven; preheat to 400°. Arrange bacon in a single layer on 2 foil-lined rimmed baking sheets (it’s okay if strips overlap slightly; they’ll shrink as they cook). Bake, rotating pans back to front and top to bottom halfway through, until bacon is browned but not quite crisp, 16–18 minutes. Let cool 5 minutes. (You can also let cooked bacon rest on pans at room temperature up to 2 hours.)
- Whisk maple syrup, soy sauce, and Sriracha in a small bowl to combine. Using tongs, turn bacon on pans. Using a pastry brush, brush bacon on one side with glaze. Return to oven and bake, rotating pans back to front and top to bottom halfway through, until bacon is crisp, 10–15 minutes (time will vary depending on your preferred level of crispiness).
