FANTASTIC ONION RING BATTER
These are great homemade onion rings that are batter-fried rather than having a bread crumb coating. They are addictive, so be careful!

Steps:
- Soak onion rings in a bowl of ice water for 1 hour; drain and pat dry with paper towels.
- Whisk 1 cup plus 2 tablespoons flour, milk, egg, 2 tablespoons vegetable oil, and salt together in a bowl until smooth.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Dip onion rings in the batter, working in batches, until evenly coated and arrange in 1 layer on a plate.
- Fry the battered onion rings, working in batches, until browned, about 5 minutes. Transfer fried onion rings to a paper towel-lined plate using a slotted spoon.

CRISPY ONION RINGS

- Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
- Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
- Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
- In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
- Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.

- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
- Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

COFFEE ONION RINGS
These onion rings are extra light and crispy because we carbonate the batter. If you don't have a home carbonation system, you can substitute seltzer water and a tablespoon of freeze-dried coffee. Simple home carbonation systems run the gamut from about $60 for an iSi carbonator to several hundred dollars for a carbonation rig and CO2 tank. Once you start playing with one, you'll wonder how you ever got along without it. The tiny bit of xanthan gum in the recipe helps the batter stick to the onion slices and keeps it from separating. You can season the onion rings with salt and serve with ketchup, but we think you'll find that the Beef Seasoning and smoked ketchup really take the flavor to the next level.

- Pour the coffee into a blender. Turn on low and increase the speed until a vortex forms in the center. Sprinkle in the xanthan gum and increase the speed to evenly disperse it. Reduce the speed to medium and add the flour, egg yolk, salt, and baking soda. Puree to just combine. Pour the mixture into a whipped cream canister and charge with one CO2 charge. Alternatively, if you have a carbonation rig, carbonate the batter to 50 psi.
- Fill a medium pot half full of canola or rice bran oil and heat over medium-high heat until it reaches 350°F (175°C).
- Put the flour and onion powder on a plate and mix well. Dispense the coffee batter from the whipped cream canister into a bowl. Dredge the onion rings in the onion flour mixture, dip them into the batter, and immediately drop them in the hot oil. Fry 3 or 4 rings at a time, flipping them once halfway through cooking. When they are golden brown, remove the rings from the pot with a slotted spoon or skimmer and put on a wire rack set over a baking sheet to drain. Season lightly with the beef seasoning and serve with a side of smoked ketchup.

- Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
- Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.

- Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
- Cut the onion crosswise into ½-inch (1 cm) slices and gently push apart each layer to get individual rings. Set aside.

- Prepping the Onions. The name itself suggests that the onions are supposed to be round. So unlike traditional way of cutting onions, we need to chop them down as thick slices horizontally.
- The Flour Coat. We go through three layers of coating for the onion rings. The first one is the flour coat. For this mix some salt with the corn flour.
- Prepping the Other Two Coats. Now once the flour coat is set properly on the onions, add milk and eggs to a bowl and whisk it properly so that they blend in to form a nice smooth texture.
- Finish the Coating. Now that you have the other two coatings ready, take the flour coated onions and give it a gentle tap such that all the extra flour gets dusted off.
- Deep Fry Time. While the onions are taking a bath in the freshly made bread crumbs, add oil into a deep-frying pan and heat it up. When the oil is heated up, give the onion one final tap to dust off the remaining bread crumbs, but don't be so hard on it such that all the coating comes off.
