- In a small saucepan bring 2 cups water to boiling. Stir in bulgur. Return to boiling; remove from heat. Cover and let stand at least 15 minutes. Drain off any remaining liquid.
- Meanwhile, in a large skillet cook onion, bell pepper, and celery over medium 7 to 8 minutes, stirring occasionally and adding additional water, 1 to 2 Tbsp. at a time, as needed to prevent sticking. Add garlic; cook 1 minute or until softened.
- Stir in bulgur, barbecue sauce, and soy sauce. Reduce heat to medium-low. Cook 10 minutes.
- In a dry skillet heat pita rounds, one at a time, on both sides until warm. Cut in half crosswise and fill with bulgur mixture.

- In a large saucepan, bring the water to a boil over high heat.
- Stir in the bulgur and lightly salt the water.
- Cover, remove from heat, and set aside until the bulgur softens and the water is absorbed, about 20 minutes.
- Meanwhile, in a large skillet, heat the oil over medium heat.
- Add the onion and bell pepper; cover and cook until soft, about 7 minutes.
- Stir in the tomatoes, sugar, mustard, soy sauce, chili powder, salt, and pepper to taste.
- Simmer for 10 minutes, stirring frequently.
- Add bulgur to sauce mixture; stir to combine.
- Spoon the bulgur mixture onto the bottom half of each of the rolls, top with the other half, and serve.

- Bring rice vinegar, water, sugar, and sriracha to a boil in a small saucepan over medium heat. Cook until sugar has dissolved, about 2 minutes. Place cucumber and red onion in a flat-bottomed dish and pour vinegar mixture over the top. Set aside to pickle as you prepare the bulgogi.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until no longer pink, about 5 minutes. Drain and discard grease; return beef to skillet. Add soy sauce, brown sugar, green onions, sesame oil, sriracha, garlic, and ginger. Cook, stirring occasionally, until sauce begins to thicken, about 8 minutes.
- Serve bulgogi mixture on hamburger buns topped with the pickled cucumbers and onions.
