Easy Margherita Pizza made from scratch with my yeast-free, thin crust pizza dough topped with a simple raw tomato sauce, fresh mozzarella cheese, and basil.

Number Of Ingredients 12

1 cup all purpose or white whole wheat flour* ((5 oz ) plus more for dusting)
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup 0% Stonyfield Greek yogurt (not regular, drained if there's any liquid)
1/3 cup canned san marzano tomatoes (crushed by hand)
1 small garlic clove (minced)
1/4 teaspoon kosher salt
pinch dried oregano
fresh black pepper to taste
4 ounces fresh mozzarella cheese (sliced thin and torn by hand)
fresh basil (torn for topping)
extra virgin olive oil (optional for drizzling)

Steps:

  • In a medium bowl combine the flour, baking powder and salt and whisk well.
  • Add the yogurt and mix with a fork or spatula until well combined, it will look like small crumbles.
  • Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 20 turns (it should not leave dough on your hand when you pull away).
  • Preheat oven to 450F. I like to use a pizza stone, and preheat the stone in the oven as well. If using a round pizza pan or sheet pan, spray with oil.
  • Sprinkle a work surface and rolling pin with a little flour and roll the dough out into a large thin round or oval (or you can make 2 smaller pies).
  • Lay the dough out onto the oiled nonstick pizza dish or sheet pan.
  • Spread the sauce over the crust. Top with cheese and place the pan on the pizza stone, bake 10 to 12 minutes or until the cheese is bubbly and the crust is cooked through.
  • Transfer to a cutting board, top with basil and drizzle with olive oil, if desired. Slice the pie into 8 slices.

An easy recipe for Tomato Pizza made with vine-ripened tomatoes, sharp arugula, olive oil, garlic and fresh mozzarella for a delicious take on pizza.

1 pound pizza dough
2 large vine-ripened or heirloom tomatoes
1 pound fresh mozzarella cheese (sliced)
1-1/4 tablespoon olive oil (divided)
1 teaspoon dried oregano
1 tablespoon minced garlic
1 cup baby arugula
salt and pepper to taste

Steps:

  • Preheat the oven to 450 degrees F.
  • Brush a 16-inch pizza pan or cookie sheet with a bit of olive oil or non-stick spray. Roll the pizza dough out in a thin 1/4-inch circle to cover the pan.
  • Brush the pizza dough with 1 tablespoon of olive oil, leaving a 1-inch border along the edges to form the crust. Season the dough evenly with garlic and oregano. Season with salt and pepper.
  • Prepare the tomatoes by slicing the top off the tomato and then use a spoon or melon baller to scoop out the seeds gently or give the tomato a gentle squeeze over the sink/trash bin. Slice the tomatoes into 1/4 inch slices.
  • Arrange the tomatoes evenly over the pizza dough in a single, even layer. Add arugula, spinach, or basil if using. Season the tomatoes and greens with salt and pepper. Finally, slice the mozzarella into 1/4-inch thick slices and use it to evenly top the pizza.
  • Bake for 10-15 minutes, or until the crust is nicely browned and the cheese is fully melted.
  • Allow the pizza to cool for 5-10 minutes, and then slice and serve.

Thin Crusted Focaccia Pizza with Fresh Tomato, Basil and Mozzarella image

Number Of Ingredients 11

2 cups warm water, about 110 degrees F
2 1/2 ounces extra-virgin olive oil, plus 4 tablespoons for greasing the baking pan
1/2-ounce dry yeast
1/2-ounce honey
1 3/4 pounds all-purpose flour, plus extra for rolling dough
3/4-ounce kosher salt
1/2 cup cornmeal, to dust baking pan
18 Roma or Italian plum tomatoes, thinly sliced
1 cup packed basil leaves, chiffonade
6 cups grated mozzarella
Salt and white pepper

Steps:

  • Preheat a convection oven to 325 degrees F or a regular oven to 350 degrees F.
  • To make the dough: In the bowl of a standing mixer, combine the water, 2 1/2 ounces of olive oil, yeast and honey. Allow the yeast to proof for 5 minutes. Add the flour and salt, and mix with a dough hook on medium speed until the dough is pliable and elastic, about 5 minutes. If the dough is a little wet, you may need to add a little more flour. The dough should be moist, but not stick to the hands. Cover with plastic wrap, and allow the dough to rise in a warm place until doubled in size, about 20 minutes.
  • Brush the remaining olive oil on a rimmed baking sheet about 18-by-26-inches and dust with the cornmeal. Roll out the dough on a lightly floured surface to about 1/4-inch thick and prick the dough all over with a fork or rolling docker. Brush off any excess flour and transfer to the prepared baking sheet. Bake the dough until lightly browned, about 6 minutes. Cool.
  • When the dough has cooled, evenly top with focaccia with the tomato slices, covering the entire surface and lightly season with kosher salt and white pepper. Sprinkle with the basil chiffonade and lightly top with the mozzarella. You should be able to see the tomatoes through the cheese. Return to the oven and bake until the cheese is melted and slightly colored. Cool the pizza slightly and cut into 2-bite triangles.

1 tablespoon yellow cornmeal
Two 8-ounce pieces of homemade or purchased Pizza Dough, recipe follows
6 teaspoons extra-virgin olive oil
1 1/3 cups, grated pasteurized mozzarella
2 Roma tomatoes, cut crosswise into 1/4-inch-thick slices
1/4 cup grated Parmesan
1 large garlic clove, minced, optional
6 fresh basil leaves, plus extra for garnish
1/2 teaspoon salt
1/2 cup warm water (105 to 110 degrees F)
2 teaspoons dry yeast
2 cups all-purpose flour
1 teaspoon salt
3 tablespoons olive oil

Steps:

  • Position 1 oven rack in the center and the second rack on the bottom of the oven and preheat to 450 degrees F. Sprinkle the cornmeal over 2 rimless baking sheets. Roll out each piece of Pizza Dough into a 10 to 11-inch-diameter round. Transfer 1 dough to each prepared baking sheet.
  • Drizzle 2 teaspoons of oil over each Pizza Dough. Sprinkle the mozzarella over the Pizza Dough, dividing equaling and leaving a 1-inch border around each pizza. Arrange the tomato slices in a single layer over the cheese. Sprinkle with the Parmesan. Arrange basil leaves on top, drizzle with a little more olive oil and sprinkle garlic all over. Bake the pizzas until the crusts are crisp and brown on the bottom and the cheese is melted on top, about 15 minutes. Drizzle 1 teaspoon of oil over each pizza. Sprinkle with basil for garnish and salt. Cut the pizza into wedges and serve immediately.
  • Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and divide into 2 equal balls. (The dough can be used immediately or stored airtight in the refrigerator for 1 day.)

3 tablespoons olive oil
1 clove garlic, finely chopped
2 cups canned plum tomatoes, crushed by hand, seeds removed
1/2 teaspoon salt and pepper
1 teaspoon dry oregano
2 12-inch pizza crusts (recipe follows)
4 tablespoons grated Parmesan cheese
1/2 pound fresh mozzarella, thinly sliced
8 basil leaves
Ceramic pizza stone
Pizza peel
3 1/4 cups unbleached flour
2 teaspoons salt
1 cup warm water
1 envelope active dry yeast
3 tablespoons olive oil

Steps:

  • Set the pizza stone into a cold oven and preheat the oven to 450 degrees. In a small sauce pan set over a low flame, heat 1 tablespoon of olive oil. Add the garlic and cook for 1 minute before adding the tomatoes. Season the tomatoes with the salt, pepper and oregano and cook over medium heat for 10 minutes. Working on a lightly floured surface, pat one of the pizza dough balls into a flat round shape, working from the center outward. While forming the shape of a pizza crust, work with the tips of the fingers and form a 1/2-inch thick edge. Continue to work outward trying to achieve as even a thickness as possible. When the pizza dough is formed into shape transfer the dough to the peel and drizzle 1 tablespoon of olive oil over the surface. Sprinkle half the Parmesan cheese evenly over the oiled pizza dough and spoon 3 tablespoons of sauce over the surface. Evenly spread half of the mozzarella over the tomato and finish building your pizza with a few basil leaves roughly torn by hand. Place the pizza onto the pizza stone in the oven by sliding the pizza off of the peel and onto the hot stone. Repeat the process for the second pizza. Bake for 15 to 20 minutes or until the surface is bubbling and the bottom of the crust is well browned.;
  • In a bowl, combine the flour and salt, and mix thoroughly. In a separate stainless steel bowl, combine the water and yeast, and using a whisk, add 2 tablespoons of oil. Let rest for 5 minutes. Pour the water into the center of the flour, and with a spatula, stir to combine well into a sticky mass. Pour this mass out onto a lightly floured surface and begin to knead the dough by working the dough with the heel of the palm of your hand. Push outward and pull the inside edge over the top. Repeating the process over again to create a smooth ball of dough free of stickiness. Place the ball of dough into a clean stainless steel bowl that has been brushed with the remaining 1 tablespoon of olive oil. Cover with a clean cloth and let rise at room temperature for 1 1/2 hours or until it has doubled in size. When the dough has risen it can be divided in half and the two pieces formed into two balls which will later be patted into the traditional pizza shape. Yield: 2 12-inch pizza crusts;

These pizza pockets couldn't be easier to make, and they are delicious whether eaten with a knife and fork or your fingers.

4 ounces fresh mozzarella, shredded
3/4 cup cherry tomatoes, quartered
6 tablespoons chopped, pitted Kalamata olives
5 tablespoons grated Parmesan cheese
3 tablespoons chopped fresh basil
1 large garlic clove, minced
1/4 teaspoon salt
Ground black pepper, to taste
1 pound refrigerated pizza dough
Flour for rolling dough

Steps:

  • Heat oven to 425 degrees. Line a rimmed baking sheet with parchment paper or aluminum foil. In a large bowl, combine all ingredients except dough.
  • Divide dough into four equal pieces; roll each piece into a ball. On a lightly floured surface, roll one ball into a 7-inch round. Mound 1/4 of the filling on half the dough. Fold other dough half over the filling and pinch edges together to seal. Transfer pocket to prepared baking sheet. Repeat with remaining dough and filling.
  • With a sharp knife, cut several slits in top of each pastry. Bake pockets until golden brown, 15 to 20 minutes. Let cool 5 minutes before serving.

  • Set a pizza stone on a rack in the top third of the oven. Preheat the oven to 500° for at least 45 minutes. Meanwhile, remove the dough ball from the refrigerator and let stand for 20 minutes.
  • Working on a floured surface and using your fingers, press and stretch the dough ball out to a 10-inch round, working from the center toward the edge; avoid pressing on the outermost edge.
