POTSIE'S WHITE TRASH DIRTY MARTINI
What makes a classy martini become white trash? A pickled pod of okra instead of an olive, of course. I came up with this 10 years ago when I was out of olives and then noticed a jar of pickled okra in the fridge. A local bar that I frequent began making them for me and now it's very popular there.

Steps:
- For best results and taste keep vodka in the freezer.
- Pour 1/4 oz of vermouth into a frozen martini glass and swirl it around til the inside of the glass has been coated. Discard vermouth.
- Combine vodka and brine in a cold shaker glass with ice and shake vigorously.
- Strain into the cold martini glass swirled with vermouth.
- Place pickled okra pod into glass.
- Don't forget to eat the drunken okra pod after you have finished the drink!
- Repeat steps 2-6 as often as needed.

Steps:
- Form the blue cheese into 12 narrow tube shapes and stuff them into the pitted olives. Skewer 3 olives on each of 4 cocktail picks.
- Fill a cocktail shaker with ice and add the vodka, vermouth and olive brine. Shake vigorously, then strain the cocktail into 4 martini glasses. Garnish with the olives and serve immediately.

- Combine the gin, vermouth, and olive juice in a cocktail mixing glass (or any other type of glass). Fill the mixing glass with 1 handful ice and stir continuously for 30 seconds until very cold.
- Strain the drink into a cocktail or martini glass (purists chill the glass first). Garnish with an olive.

THE DIRTY MARTINI

- Place the olives in a glass jar with a tight-sealing lid. Recycled olive jars are a natural choice, and Mason jars work great as well.
- Gently press the olives with the back of a wooden spoon firmly enough to release their juice. Try not to smash them as if you're muddling fruit for a cocktail.
- In a bowl, combine the other ingredients and mix well.
- Pour the liquid over the olives until they are completely covered. Leave a little room for air at the top of the jar.
- Seal the jar and shake it vigorously.
- Refrigerate for at least one day (longer is better) and shake before using the juice. If your juice gets a little low for the olives left in the jar, add more vermouth and give the mix a good shake.

- Put two martini glasses in the fridge to chill. Thread the olives onto two cocktail sticks and set aside.
- Fill a jug or mixing glass with the ice, then pour in the gin, vermouth and olive brine. Stir until the outside of the jug feels cold. Taste to make sure that it's icy cold and that you're happy with the dilution.
- Strain the mix into the chilled glasses and garnish with the olive skewers.
