Pan-Fried Soft-Shell Crabs image

Ask your fishmonger to clean soft-shell crabs for you. Crabs should be cooked no more than six hours after they are cleaned.

1 1/2 cups all-purpose flour
2 teaspoons coarse salt
1 teaspoon freshly ground pepper
12 soft-shell crabs, cleaned
12 tablespoons vegetable oil
6 tablespoons unsalted butter
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
3 lemons, cut in half

Steps:

  • Whisk flour, salt, and pepper; place on a dinner plate. Dredge 2 soft-shell crabs in flour mixture, shaking off excess (make sure crabs are completely coated).
  • Heat 2 tablespoons oil in a medium sauté pan over medium-high heat. The oil should be very hot but not smoking. Place flour-coated crabs, back side down, in sauté pan; reduce heat to medium if pan starts to smoke. Sauté crabs until golden and crisp, about 3 minutes (do not stand too close to pan; crabs tend to spatter during cooking). Turn crabs over, and cook 2 minutes more.
  • Add 1 tablespoon butter and a large pinch of parsley to skillet. Squeeze the juice of half a lemon over crabs. Keep warm in a low oven. Repeat process until all the crabs are cooked.

SAUTEED SOFT-SHELL CRABS WITH GARLIC AND BUTTER



Sauteed Soft-shell Crabs with Garlic and Butter image

3 soft-shell crabs, cleaned and patted dry
Salt and freshly ground black pepper
1 cup flour
2 tablespoon extra-virgin olive oil
3 garlic, sliced
2 tablespoons capers, drained
1/2 cup white wine
1 tablespoon butter
Few chive blades, chopped
Essence, for garnish, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Season crabs with salt and pepper and dredge in the flour, shaking off excess. Set aside.
  • In a large skillet over medium high heat, add the oil and saute the crabs until soft, about 2 minutes on each side. Remove the crabs and set aside. Add the garlic and cook for 1 minute. Then add the capers and white wine. Cook until wine has reduced to about 1/2. Swirl in the butter and the chopped chives. Season with salt and pepper.
  • Transfer crabs to a plate, spoon sauce over the crabs and garnish with Essence.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

FRIED SOFT-SHELL CRAB

These crabs are fried to a light crisp, and you can eat the whole crab. It is my favorite food.

4 soft-shell crabs
1 egg
½ cup milk
1 cup all-purpose flour
salt and pepper to taste
4 cups oil for frying, or as needed

Steps:

  • Clean each crab. Lift one pointed side of top shell and remove the gills by pulling them out. Put top shell back down and repeat on other side. On the bottom side remove tail flap by twisting and pulling off. Using a pair of scissors, remove the face by cutting behind the eyes. Rinse the crabs thoroughly with cold water. Dry on paper towels.
  • Heat oil in a deep fryer to 365 degrees F (180 degrees F). In a shallow dish, whisk together the egg and milk using a fork. In a separate bowl, stir salt and pepper into the flour. Lightly salt the crab, then dip in the flour, dip in the egg, then in the flour again.
  • Carefully place crabs into the deep-fryer. Cook for 1 to 2 minutes, or until golden brown on one side. Carefully turn over, and cook until golden on the other side. Drain on paper towels. Serve as soon as they are cool enough to eat. You can eat the whole crab.

CRUNCHY SOFT-SHELL CRABS

6 soft-shell crabs, cleaned
Buttermilk, for soaking
Vegetable oil, for frying
1 cup fine cornmeal
1 cup flour
Kosher salt
Black pepper
Lemon wedges, for serving optional

Steps:

  • Soak crabs in a bowl of buttermilk.
  • In a deep fryer or saucepan, heat 4 inches of oil to 375 degrees.
  • Whisk together cornmeal and flour, and salt and pepper to taste.
  • Remove crabs from buttermilk, letting excess drip back into bowl. Coat crabs evenly in the cornmeal mixture. Working in batches, fry until golden brown and crisp all over, turning if needed, 2 to 3 minutes. Drain on paper towels. While warm, season with salt. Serve with lemon wedges, if desired.

CLASSIC SOFT-SHELL CRABS



Classic Soft-Shell Crabs image

Soft-shell crab season starts the night of the first full moon in May and lasts through September. A soft-shell crab is a blue crab fortuitously interrupted (for us, not the crab) in the middle of a growth spurt. A blue crab emerges from the muddy waters to shed its outer covering (exoskeleton). A soft-shell crab is a blue crab before its new shell hardens. Fishermen use baskets to catch crabs known as "peelers," crabs that are beginning to split at the ends and are about to molt. They bring them onshore and hold them in water tanks until they complete the molting process. Once the peelers are in the tanks, they are watched closely to catch them within one hour of shedding. Softshell crabs that are newly shed and not pulled from the tanks are in danger, since they are immobile and basically dinner to other crabs in the water tank. Another reason to harvest them soon after shedding: if the new shell gets too hard, the fishermen have lost their harvest.

Number Of Ingredients 9

2 cups whole milk
Coarse salt and freshly ground white pepper
4 to 6 soft-shell crabs, cleaned and patted dry (see page 147)
1 cup all-purpose flour
2 tablespoons canola oil, plus more if needed
2 tablespoons clarified butter (see below)
2 tablespoons unsalted butter, cut into bits
Juice of 1/2 lemon
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Place the milk in a bowl and season with salt and pepper. Add the crabs and let soak for 5 minutes. Place the flour in a shallow dish and season with salt and pepper.
  • Heat the oil and clarified butter in a large nonstick skillet over high heat. Lift the crabs out of the milk, one at a time, letting the excess drip off, and dredge in the seasoned flour.
  • Add the crabs, without crowding, to the skillet and saute, in batches, until golden, 3 to 5 minutes per side. Transfer the crabs to a warm platter. Discard the oil from the skillet.
  • To make the sauce, return the skillet to the heat, add the butter pieces, and cook until golden brown. Add the lemon juice and parsley and remove from the heat. Season the sauce with salt and pepper and drizzle over the crabs.
  • Clarified butter has a higher smoke point than regular butter and can be used to cook at higher temperatures. (The smoke point is the temperature at which oil or fat starts to smoke and break down.) When clarified, butter loses about one fourth of its original volume. To clarify butter, cut unsalted butter into 1-inch pieces and melt over low heat in a heavy-bottomed saucepan. It will begin to sizzle as the water evaporates. When the butter stops sizzling, the water has evaporated. Remove the pan from the heat and let the butter stand for 2 to 3 minutes. Using a spoon, skim the froth off the top and discard. Slowly pour the molten butter into a measuring cup, leaving the milky solids in the bottom of the pan. Discard the milky solids. Pour the clarified butter into an airtight container and store in the refrigerator for up to 1 month.

MARYLAND FRIED SOFT-SHELL CRABS

1 cup flour
1/2 teaspoon baking powder
Salt and pepper to taste
Vegetable oil
Lemon wedges and tartar sauce, optional

Steps:

  • Wash and clean crabs by cutting off the face just behind the eyes. Lift top of shell and remove the spongy fingers. If the crab is a female (identified by striped markings), remove the back or apron. Rinse and dry.
  • Season flour with salt and pepper and mix in baking powder. Dredge crabs in mixture.
  • Pour oil into skillet to depth of 1 inch. Heat to 375 degrees. Cook crabs on both sides until brown, 4 to 5 minutes. Drain and serve with lemon wedges and tartar sauce, if desired.

6 medium soft-shell crabs (cleaned)
1 1/2 tablespoons Chinese salted black beans (see note)
2 tablespoons Chinese rice wine or dry sherry
2 cloves garlic, minced (any green part removed)
2 tablespoons fresh ginger, minced
2 scallions, chopped
1/2 teaspoon dried hot pepper flakes
1 tablespoon soy sauce
1/4 teaspoon sugar
1/2 cup chicken stock
2 tablespoons peanut or vegetable oil
1 teaspoon cornstarch dissolved in 1 tablespoon water
1 teaspoon sesame oil
2 tablespoons fresh coriander, chopped

Steps:

  • Pat the crabs dry with paper towels and set aside.
  • Chop the black beans and combine with the rice wine, garlic, ginger and scallions. Set aside.
  • In a separate bowl, combine the hot pepper flakes, soy sauce, sugar and chicken stock. Set aside.
  • Heat the peanut or vegetable oil in a large wok or skillet and add the crabs. Stir fry for about three minutes over medium heat. Add the black-bean mixture and continue stir-frying for about one minute.
  • Add the soy-sauce mixture, stir and bring to boil. Cover the pan and cook for two minutes. Then add the cornstarch mixture and stir until the sauce thickens and becomes glossy. Correct seasoning (you may wish to add more soy sauce or pepper) and add the sesame oil. Remove from heat and place on heated plates. Sprinkle with coriander and serve.

1 tablespoon seafood seasoning (such as Old Bay®)
1 large egg, beaten
1 tablespoon milk
3 (4.5 ounce) soft-shell crabs, cleaned
3 tablespoons extra-virgin olive oil
½ cup mayonnaise
1 tablespoon minced fresh chives
1 tablespoon dill pickle juice
1 tablespoon Creole mustard
½ tablespoon seafood seasoning (such as Old Bay®)
1 teaspoon lemon juice
kosher salt and freshly ground black pepper to taste

Steps:

  • Combine flour and seafood seasoning in a resealable zip-top bag. Seal and shake to mix. Combine egg and milk in a bowl. Dredge crabs in egg mixture, then add to seasoned flour and shake to coat. Shake off excess when removing from bag.
  • Heat olive oil in a large saute pan or skillet over medium heat. Add crabs in a single layer and cook for 3 minutes; flip and cook until golden brown, about 3 minutes more. Remove to a serving dish.
