OYSTERS ROCKEFELLER
My husband and I are oyster farmers, and this classic Oysters Rockefeller dish always delights our guests. It's deliciously simple! -Beth Walton, Eastham, Massachusetts

Steps:
- In a large skillet, saute onion in butter until tender. Add spinach; cook and stir until wilted. Remove from the heat; stir in cheese, lemon juice and pepper. Spread kosher salt into 2 ungreased 15x10x1-in. baking pans. Shuck oysters, reserving oyster and its liquid in bottom shell. Lightly press oyster shells down into the salt, using salt to keep oysters level. Top each with 2-1/2 tsp. spinach mixture. Bake, uncovered, at 450° until oysters are plump, 6-8 minutes. Serve immediately.,

SPINACH ROCKEFELLER
Steps:
- Preheat the oven to 400 degrees F.
- Saute spinach and garlic in olive oil. Deglaze with liqueur and season with salt and pepper, to taste. Add cream and Parmesan. Fill oysters with spinach mixture. Bake for 10 minutes.

This is a wonderful holiday or party side dish with red and green Christmas colors. Great make ahead too.

Steps:
- Cook spinach and drain thoroughly.
- In a bowl, place spinach, bread crumbs, green onion, eggs, melted butter, Parmesan, garlic, thyme, pepper, and salt.
- Mix well to blend thoroughly.
- Arrange tomato slices on a baking sheet and sprinkle lightly with garlic salt.
- Spoon 1/4 cup spinach mixture on each, shaping into a dome.
- Bake at 350° for 15 to 20 minutes, until set and heated through.
- Can be assembled ahead and refrigerated.
- If cold, bake 25 to 30 minutes.
- As an alternate, you can also pile the spinach mixture on cooked artichoke bottoms.

BAKER HOTEL'S SPINACH ROCKEFELLER
This was served in the famous Baker Hotel in Mineral Wells, TX. The hotel(the first spa in history) has been closed since 1972. It was the hot spot for the rich and famous. It's guest included: Judy Garland, Clark Gable, Lucille Ball, the Three Stooges, Lyndon Johnson and Lady Bird, Roy Rogers, Lawrence Welk, Will Rogers, Marlene Dietrich, Mary Martin (owned dance studio in the Baker), General Pershing, Dorothy Lamour, Sammy Kaye, Jack Dempsey, Helen Keller, and Ronald Reagan. The hotel is haunted now and is said to house the ghost of Bonnie and Clyde who stayed there often under an assumed name. Steps:
- Preheat oven to 350 F. Cook spinach according to package directions; drain well.
- Place spinach, bread crumbs, scallions, egg, melted butter, parmesan cheese, optional MSG, garlic, thyme, black pepper, cayenne and salt in a medium bowl. Mix well.
- Arrange tomato slices in a glass pie plate or other shallow baking dish; sprinkle with garlic salt. Spoon about 1/4 cup spinach mixture onto each tomato slice and shape into a dome.
- Bake 15 minutes, or until set and heated through.
- Alternate method.
- Bake spinch mixture in a (Pam- sprayed) baking dish for 15min.
- Place cold firm tomato slices on plate, top with spinch mixture and serve.
- Fantastic when topped with fresh grated parmesan!
"NAKED" OYSTERS ROCKEFELLER
sometimes called "Naked" Rockefeller because of the missing shell, but that is all that is missing because the abundance of Oyster and flavor will have the table singing your PRAISE!!!!!

- The Prep: Prepare your spinach (package instructions) drain well separate and set aside. Place your bacon on a baking pan in a single layer cook 10-12 minutes at 350* remove from oven and place on paper towels to drain then chop in small pieces. Grate your asiago and mozzarella cheese and place in separate bowls. Last but not least place your oysters in a bowl and gently pick through for shell particles.
- in a large skillet add your spinach to 2tbs of melted butter and gently saute 2-3 minutes over med heat, add your chopped bacon & garlic powder and saute another 2 minutes, finally add your grated asiago cheese over top of your spinach mixture sprinkle with salt and pepper and remove from heat.
- Here is the best part. Take a muffin pan and place two of your prepared oysters in each cup, place your spinach mixture over the top, sprinkle lightly with bread crumbs, then add your grated mozzarella over the top of your spinach and sprinkle with remaining bacon pieces. Place in your 400* degree oven for 4-5 minutes (or until cheese on top becomes melty) switch oven to broil and cook until the tops become a golden brown. remove from oven and carefully spoon mixture onto your plate of choice. If you really want to be fancy place over the top of a toasted french bread point.
