1 tablespoon Dijon mustard
1/4 cup water
2 tablespoons olive oil
1/4 cup balsamic vinegar
1 tablespoon minced fresh basil
1/2 teaspoon pepper
Salad greens and vegetables of your choice

Steps:

  • In a jar with a tight-fitting lid, combine the first six ingredients; shake well. Serve over salad.

A great all-purpose balsamic vinaigrette to drizzle over greens, tomatoes, mozzarella, and more.

Yield Makes about ¾ cup or enough for 4 to 6 small salads

Number Of Ingredients 8

1 tablespoon Dijon mustard
1 small clove garlic, finely minced
1 tablespoon finely minced shallot, from 1 small shallot
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1½ teaspoons sugar
3 tablespoons balsamic vinegar
½ cup extra virgin olive oil

Steps:

  • In a medium bowl, whisk together the mustard, garlic, shallot, salt, freshly ground black pepper, sugar and balsamic vinegar. While whisking vigorously, slowly pour in the oil to create an emulsion; the dressing should be slightly thickened and emulsified when all the oil is added. Taste and adjust seasoning, if necessary. Store the vinaigrette in a jar at room temperature for up to 4 days. Shake to re-emulsify when ready to use.

1/3 cup balsamic vinegar
1 tablespoon Dijon mustard (or a favorite gourmet stone-ground mustard)
1/4 teaspoon garlic powder
1/2 teaspoon salt
Dash ground black pepper

Steps:

  • Gather the ingredients.
  • Combine all ingredients-oil, vinegar, mustard, garlic powder, salt, and pepper-in a jar. Cover and shake until well blended. Alternatively, you can use a whisk or electric blender to combine the ingredients. Taste and adjust seasonings.
  • Serve with salads or cover and refrigerate until serving time. Shake again before using.

2 tablespoons olive oil
2 cloves garlic, thinly sliced
3 pounds mustard greens, well rinsed and tough stems removed, very coarsely chopped
2 tablespoons aged balsamic vinegar
Kosher salt and freshly ground black pepper to taste

Steps:

  • In a very large pot, heat the oil over medium-high heat. Add the garlic and cook, stirring, for 1 minute. Add the mustard greens, stirring and working them down into the pot until they all fit. Cook for 5 minutes, stirring occasionally. Cover the pot, lower the heat to medium and continue to cook until the greens are very tender, about 10 minutes more. Remove from the heat, stir in the vinegar and season to taste with salt and pepper. Serve immediately.

Steps:

  • Heat oil in large wide pot over medium-high heat. Add onions and sauté until soft, about 7 minutes. Stir in garlic, cumin seeds, and crushed red pepper; sauté 3 minutes. Add mustard greens to pot in batches (about 1/3 at a time) and stir until each batch begins to wilt before adding next, about 3 minutes per batch. Reduce heat to medium-low, cover, and cook until greens are very tender, stirring frequently, about 30 minutes. Season with salt and pepper. Mix in vinegar. (Can be made 3 hours ahead.) Transfer to bowl and serve hot or at room temperature.
