This slow cooker Creole garlic shrimp will be an instant hit with your family and friends. The dish is surprisingly easy to fix and cooks unattended.

For the Garlic Shrimp
4 tablespoons butter
1/4 cup olive oil
5 cloves garlic (peeled and thinly sliced)
1 scant teaspoon Creole seasoning
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
1 1/2 pounds extra-large shrimp (or jumbo shrimp, or about 21 to 30 per pound)
Garnish: 1 to 2 tablespoons fresh parsley (minced)
For the Creole Seasoning
1 tablespoon paprika
1 tablespoon salt
1 tablespoon garlic powder
2 teaspoons freshly ground black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried leaf oregano
1 teaspoon dried leaf thyme

Steps:

  • Gather the ingredients.
  • In a bowl, combine all of the ingredients and mix until well blended.
  • Set aside 1 teaspoon and store the remaining seasoning, covered, in a cool, dark place.
  • Gather the ingredients.
  • Combine the butter, oil, sliced garlic, Creole seasoning, and the black and cayenne peppers in the crockery insert of a slow cooker.
  • Cover and cook on HIGH for 25 to 30 minutes.
  • Meanwhile, peel the shrimp.
  • Run a small, sharp knife down the back of each shrimp. Pull out the dark-colored vein or scrape it out with the tip of the knife.
  • Rinse the shrimp under cold running water and pat dry.
  • Add the prepared shrimp to the slow cooker and stir to coat them with the oil and butter mixture.
  • Cover and cook on HIGH for 20 to 30 minutes, stirring about halfway through the cooking time. The shrimp are done when they are opaque and pink in color.
  • Remove them to a serving dish and pour the sauce over them.
  • Garnish with fresh chopped parsley, if desired, and serve as an appetizer or main dish.

1 1/4 cups onion (chopped)
1 cup bell pepper (chopped)
1 8-ounce can tomato sauce
1 28-ounce can whole tomatoes (broken up)
1 clove garlic ( minced )
1 teaspoon salt (or to taste)
1/2 teaspoon Creole seasoning
1/4 teaspoon freshly ground black pepper
6 drops Tabasco (or to taste)
1 to 1 1 /2 pounds shrimp (deveined and shelled)

Steps:

  • Combine all ingredients except shrimp.
  • Cook 3 to 4 hours on high or 6 to 8 hours on low.
  • Add shrimp during last 30 minutes of cooking.
  • Serve over hot cooked rice.
  • Chicken, rabbit, or crawfish may be substituted for shrimp.
  • Sauté celery, onion, and bell peppers in oil or butter until tender.
  • Add remaining ingredients, except shrimp.
  • Simmer for at least 30 minutes to an hour.
  • Add shrimp (or cubed cooked chicken or other seafood) and simmer for 15 to 20 minutes more.

3/4 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped green pepper
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 cup tomato juice
1/4 cup water
1/4 cup salsa
2 tablespoons lemon juice
1 tablespoon minced fresh parsley
2 teaspoons chili powder
1-1/4 teaspoons garlic powder
1/4 teaspoon pepper
1 pound cooked medium shrimp, peeled and deveined
Hot cooked rice

Steps:

  • In a large skillet, saute the onion, celery and green pepper in oil for 6-7 minutes or until crisp-tender. Stir in the soup, tomato juice, water, salsa, lemon juice, parsley, chili powder, garlic powder and pepper. Bring to a boil. Reduce heat to medium; cover and cook for 6-8 minutes or until heated through. , Add the shrimp; cook, uncovered, for 3-4 minutes or until heated through. Serve with rice.

This is an easy, healthy, flavorful and spicy soup. It is an impressive first course for company if you use large or jumbo shrimp. Alternatively, you can use tiny shrimp and the cost will be much lower but the taste will be the same. It is a regular main dish for my family (using smaller shrimp) and for my annual 'soup party'. I found this recipe on southernfood.about.com and have improved upon it (in my opinion) since first posting by adding vinegar, red wine and Worcestershire sauce. These ingredients are noted as "optional'.

2 lb uncooked medium shrimp in shells, thawed if frozen
1/4 cup butter or margarine
3 medium onions, chopped (1 1/2 cups)
2 medium green bell peppers, finely chopped (2 cups)
2 medium stalks celery, finely chopped (1 cup)
2 cloves garlic, finely chopped
1 cup water
2 teaspoons chopped fresh parsley
1 1/2 teaspoons salt
1/4 teaspoon ground red pepper (cayenne)
2 dried bay leaves
1 can (15 oz) tomato sauce
6 cups hot cooked rice

Steps:

  • Peel shrimp. Make a shallow cut lengthwise down back of each shrimp; wash out vein. Cover and refrigerate.
  • In 3-quart saucepan, melt butter over medium heat. Cook onions, bell peppers, celery and garlic in butter about 10 minutes, stirring occasionally, until onions are tender.
  • Stir in remaining ingredients except rice and shrimp. Heat to boiling; reduce heat to low. Simmer uncovered 10 minutes.
  • Stir in shrimp. Heat to boiling; reduce heat to medium. Cover and cook 4 to 6 minutes, stirring occasionally, until shrimp are pink and firm. Remove bay leaves. Serve shrimp mixture over rice.
