LEMON GARLIC MARINATED GRILLED PORK CHOPS
Recipe VIDEO above. Nothing infuses pork chops with flavour like a good marinade! This one is ideal for grilling so the high heat sears the crust beautifully. But the pork chops can of course be cooked on the stove, or even bake them! Also use this marinade for the proteins - see notes.

Steps:
- Whisk Marinade ingredients in a bowl (or ziplock bag). Add pork. Marinade for 1 hr minimum, 3 hours ideal, 12 hours max (Note 3).
- Take the pork out of the fridge 20 minutes before cooking.
- Shake excess marinade off (but don't wipe dry) and cook using preferred method. Pictured in post served with Minted Yoghurt - see notes!

LEMON GARLIC PORK CHOP MARINADE
This lemon garlic pork chop marinade is easy to mix up and adds so much flavour. Marinate and then grill, pan fry, or bake, or freeze for later!

- Place the pork chops in a large ziplock bag. In a small bowl, whisk together the olive oil, lemon juice, soy sauce, garlic, oregano, salt, and pepper.
- Pour the marinade over the pork chops and seal the bag, squeezing out all the air.
- Move the pork chops around in the marinade until they are all evenly coated.
- Refrigerate and let them marinate for at least 30 minutes and up to 4 hours (see note).
- You can freeze the pork chops in the marinade immediately and let them marinate as they defrost, or marinate and cook them immediately.
- Either grill the pork chops for 4-8 minutes per side over medium heat (about 400F), pan fry for 4-8 minutes per side over medium heat, or bake at 400 degrees F for 20-30 minutes, or until an internal temperature of 145 degrees F has been reached.
- Let the pork chops rest, tented with foil, for 5 minutes before serving.

LEMON MARMALADE PORK CHOPS
These are a quick to fix chop recipe with a nice sauce that goes great over rice. We like it with steamed broccoli. I almost always make extra sauce. Try it also with chicken tenders or with orange marmalade!

Steps:
- Brush chops lightly with vegetable oil and sprinkle with lemon pepper.
- Heat large nonstick skillet over medium-high; add chops and cook 4 to 5 minutes per side or until done (internal temp 155°F) and well browned.
- Remove chops from pan and keep warm.
- Lower heat and carefully add vinegar and marmalade to skillet.
- Cook 1 or 2 minutes, stirring to scrape up any brown bits on the bottom of the skillet.
- Return chops to skillet; turn chops once to coat with sauce.
- Refrigerate leftovers.

BRINED PORK LOIN WITH MEYER LEMON MARMALADE

- In a large pot or bowl, combine salt, sugar, water, peppercorns and bay leaves. Submerge pork loin in mixture and let brine for about 4 hours. Preheat oven to 375 degrees F. Remove pork loin from brine and dry well. Season well with Gray salt and freshly ground black pepper.
- Heat 2 tablespoons of olive oil in the bottom of a heavy, stove top and oven-safe casserole dish over medium-high heat. Brown pork well and place in preheated oven to cook about halfway, about 35 minutes. Meanwhile, heat 1/4-cup olive oil in a medium saute pan over high heat. Add shallots and cook until they begin to caramelize, about 8 minutes. Turn heat to medium and season with salt and pepper. Add rosemary and let cook until golden brown (about 10 minutes more). Add marmalade and stir to combine. Remove from heat and set aside.
- After 35 minutes, remove pork from oven and spoon half the shallot mixture over the top and sides of the pork. Place back in the oven and continue to roast until a meat thermometer (inserted into the center of the pork) reads 165 degrees F (about 30 minutes more). Remove and let rest 15 minutes before carving. Serve with reserved shallot mixture on the side.
MARMALADE GLAZED PORK CHOPS
These pan fried chops are coated with a tasty glaze of orange marmalade, chili sauce and mustard. Fast and yummy.

- In a bowl combine marmalade, chili sauce, mustard and cumin, mixing well to combine, then set aside.
- Heat oil in a non-stick skillet over medium high heat.
- Sprinkle chops with salt and pepper and brown in hot oil about 4 minutes on each side.
- Remove from pan and cover with foil to keep warm.
- Lower heat a bit and saute onion until softened, about 5 minutes, adding a little more oil if needed.
- Add marmalade mixture to onions, stirring well, and let cook for about 2 minutes.

- In a large resealable bag, combine lemon juice, oil, garlic, salt, oregano, and pepper. Place chops in bag, seal, and refrigerate 2 hours or overnight. Turn bag frequently to distribute marinade.

- Heat the oil in a large frying pan and briefly cook the garlic, stirring with a wooden spoon, to start it softening. Add the pork to the pan in a single layer, season and cook for 6 mins each side, until golden and cooked through.
- Meanwhile, mix the stock with the thyme and marmalade. Remove the pork from the pan and set aside briefly to rest on a warm plate. Pour off any oil from the pan, then pour in the marmalade mixture and bubble to make a sauce. PORK CHOPS WITH MARMALADE SAUCE
Steps:
- To make the marinade, in a small bowl, combine the marmalade, chili powder, salt, pepper, vinegar, mustard, olive oil, and garlic.
- Tenderize both sides of the pork with a fork, piercing the meat all the way through about 10 times per side. Place the pork in a large resealable plastic bag or a large bowl and add the marinade. Make sure the pork is coated on all sides. Refrigerate the pork for at least 3 hours and no more than 6 hours.
- Remove the pork from the refrigerator 30 minutes prior to grilling.
- Prepare your grill by scraping it, oiling it, and heating it to medium-high heat.
- Remove the pork chops from the marinade, reserving the marinade, and lay them in the center of the grill. Grill for 3 minutes. Turn the pork chops 45 degrees and grill for another 3 minutes. Flip the pork chops and grill for 3 minutes before turning 45 degrees and cooking an additional 3 minutes for medium. A meat thermometer inserted in the thickest part of the meat should read 125˚F.
- Transfer the pork chops to a cutting board to rest while you make the sauce. Pour the reserved marinade into a medium skillet. Add the stock and bring to a boil. Boil for 3 minutes.
- To serve, slice the pork into 1/2-inch-thick slices and drizzle the sauce on top.
