3 cups vanilla ice cream
3/4 teaspoon ground cinnamon
COOKIES:
1/3 cup butter, softened
1/2 cup packed brown sugar
1 large egg
1/3 cup molasses
2 cups all-purpose flour
1 teaspoon ground ginger
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt

Steps:

  • In a blender, combine ice cream and cinnamon. Transfer to a freezer container; freeze for at least 2 hours., Meanwhile, in a large bowl, cream butter and brown sugar until light and fluffy. Add egg, then molasses. Combine flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. Cover and refrigerate 2 hours or until easy to handle., Preheat oven to 350°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a floured 3-1/2-in. gingerbread-shaped cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until edges are firm. Remove to wire racks to cool., To make ice cream sandwiches, spread 1/4 cup softened ice cream over the bottom of half of the cookies; top with remaining cookies. Wrap each in plastic wrap; freeze on a baking sheet at least 1 hour.

A double dose of lemon makes these frosty ice cream sandwiches irresistible. The cookies have lemon zest, lemon juice and lemon extract, and before they're sandwiched with vanilla ice cream, they're smeared with tangy lemon curd.

One and a half 1.5-quart cartons vanilla bean ice cream, softened
3 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cornstarch
1/2 teaspoon sea salt
1 cup (2 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
1 large egg
2 teaspoons lemon zest plus 1 tablespoon fresh lemon juice
1 teaspoon lemon extract
Coarse sugar, for rolling, optional
3/4 to 1 1/2 cups lemon curd
Yellow sprinkles, for decorating

Steps:

  • Spoon the ice cream into a rimmed baking sheet and spread to 1/2-inch thickness. Freeze until firm, 2 to 3 hours. Use a 3-inch round cookie cutter to cut the ice cream into 12 rounds, reshaping the ice cream "sheet" as needed. Keep frozen.
  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Stir together the flour, baking soda, baking powder, cornstarch and salt in a large bowl; set aside.
  • Beat the butter and granulated sugar with an electric mixer at high speed until creamy. Add the egg, and beat until the yellow disappears. Beat in the lemon zest, juice and extract.
  • Add the flour mixture in 2 batches and beat until combined. Roll the dough into twenty-four 2-inch balls. Roll the balls in coarse sugar, if using, and place on the prepared pans. Use the bottom of a glass to press down the dough balls.
  • Bake until the cookies are set and lightly golden on the bottoms, 15 to 18 minutes. Remove to wire racks to cool completely.
  • To assemble the sandwiches, spread 1 to 2 tablespoons lemon curd on the flat sides of 12 cookies. Sandwich an ice cream round between 2 cookies (one lemon curd-coated and one uncoated). Roll the edges in the sprinkles. Wrap and freeze the ice cream sandwiches until ready to serve.

1/3 cup molasses
1/2 teaspoon baking soda
1/4 cup boiling water
2 cups all-purpose flour
2 1/2 teaspoons ginger, ground
2 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground black pepper
1/4 teaspoon salt
8 tablespoons soy margarine, softened
1/2 cup light brown sugar
2 pints lemon sorbet
4 cups vanilla soy ice cream

Steps:

  • Put molasses in heatproof bowl. Sprinkling the baking soda over top then adding the boiling water. Whisk.
  • Blend flour to the salt in a large bowl. In other bowl cream the margarine and the sugar Then add the flour mix and then add the moslasses mix and beat until it forms a soft dough. Divide, wrap in plastic and chill for one hour.
  • Put the dough ball into 2 sheets of wax paper. Roll into 8 1/2 inch by 12 1/2 inch shape and remove top sheet. Use a sharp knife and trim dough edges then cut into 12 2x4 inch rectangles. Prick with fork. Transfer to a cookie sheet. Chill for 30 minutes. repeat wtih remaining dough.
  • Preheat oven to 325°F Grease the cookie sheets. Transfer the rectangles. Bake 8 to 10 mins or until set but still soft. Franfer to wire rack and cook completely unless you want soup.
  • Meanwhile scoop the sorbet and ice cream together and blend with a wooden spoon. Freez 20 mins or until firm.
  • When bread is cooled, spread the ice cream on the bread. Pat filling down with a spatula. Place the second cookie on top. Press down gently. NOTE GENTLY. Too much pressure and you will have an interesting jigsaw pattern. Scrape away the filling that goes past the edge. Use it to fill in the corners. Smooth. Repeat with remaining cookies. Wrap in plastic wrap and freeze until firm about 30 minutes.
  • Note of course other flavors besides lemon can be used.

1 stick (1/2 cup) unsalted butter, softened
1/2 cup granulated sugar plus additional for coating the cookies
1/2 cup firmly packed light brown sugar
1/3 cup unsulfured molasses
1 large egg
2 cups all-purpose flour
2 1/2 teaspoons ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon ground allspice
1 teaspoon baking soda
3/4 teaspoon salt
Lemon Ice Cream
1 cup shelled natural pistachio nuts, the loose skins rubbed off in a kitchen towel and the nuts chopped

Steps:

  • Make the gingersnaps:
  • Preheat the oven to 350°F. In a bowl with an electric mixer cream together the butter, 1/2 cup of the granulated sugar, and the brown sugar until the mixture is light and fluffy, add the molasses, and beat the mixture until it is smooth. In another bowl whisk together the flour, the ginger, the cinnamon, the allspice, the baking soda, and the salt, add the flour mixture to the butter mixture, and stir the mixture until it forms a soft dough. Form the dough into 24 balls (each about 1 1/2 inches in diameter), roll the balls in the additional granulated sugar, coating them, and arrange them 2 inches apart on buttered baking sheets. Bake the gingersnaps in batches in the middle of the oven for 13 to 15 minutes, until they are crisp and cracked but still soft inside, and let them cool on the sheets for 5 minutes. Transfer the gingersnaps with a metal spatula to racks and let them cool completely.
  • Sandwich a scoop of the ice cream between 2 of the gingersnaps, pressing the cookies together, form 11 more sandwiches in the same manner, and roll the edges in the pistachios. Freeze the sandwiches on a tray, covered, until they are hard. The sandwiches may be made 2 days in advance and kept covered and frozen.

This is amazing! It really does taste like a slice of gingerbread. I used leftover diced pieces of SueL's Gingerbread #44268, which i highly recommend. The ice cream is good plain if you don't have gingerbread or chocolate to add to it. It's very flavorful and rich, so a little goes a long way.

2 cups light cream
1 cup milk
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/8 teaspoon freshly ground nutmeg
1 ounce fresh ginger, peeled and sliced
5 egg yolks
1/2 cup granulated sugar
1/4 cup molasses
3/4 cup diced gingerbread (optional)
1/3 cup chopped bittersweet chocolate (optional)

Steps:

  • In a medium saucepan, combine the first 6 ingredients and bring to a very gentle boil.
  • Once it begins to boil, remove from heat immediately and allow to steep for 25 minutes.
  • Strain mixture into a container, and whisk in molasses.
  • Pour mixture back into saucepan and put on low to medium heat.
  • Beat the egg yolks and sugar together until frothy.
  • Whisk 1 cup of the warm milk mixture into the beaten eggs.
  • Gradually whisk all of the egg mixture into the remaining milk mixture.
  • Cook, whisking constantly for about 5 minutes, or until the mixture coats the back of a spoon.
  • Remove from heat and strain back into a container sitting in an ice bath.
  • Stir to help cool.
  • After it's cooled, cover with plastic wrap pressed directly against the surface to prevent a skin from forming.
  • Refrigerate about 1 hour, until well-chilled.
  • Freeze in ice-cream maker according to manufacturer's instructions.
  • When the ice cream is almost done freezing-about 5 minutes before-add the gingerbread cubes and chocolate if using.
