1 pound boneless pork loin
2 garlic cloves, minced
4 tablespoons soy sauce, divided
2 tablespoons cornstarch
1/2 to 1 teaspoon ground ginger
1 cup chicken broth
1 tablespoon canola oil
1 cup thinly sliced carrots
1 cup thinly sliced celery
1 cup chopped onion
1 cup coarsely chopped cabbage
1 cup coarsely chopped fresh spinach
Hot cooked rice, optional

Steps:

  • Cut pork into 4x1/4-in. strips; place in a bowl. Add garlic and 2 tablespoons soy sauce. Cover and refrigerate for 2-4 hours., Meanwhile, combine the cornstarch, ginger, broth and remaining soy sauce until smooth; set aside. Heat oil in a large skillet or wok on high; stir-fry pork until no longer pink. , Remove and keep warm. Add carrots and celery; stir-fry for 3-4 minutes. Add the onion, cabbage and spinach; stir-fry for 2-3 minutes. Stir broth mixture; stir into skillet along with pork. Bring to a boil; cook and stir for 3-4 minutes or until thickened. Serve immediately over rice if desired.

8 oz. (226 g) steamed chow mein or fresh chow mein noodles
1 tablespoon soy sauce
1 tablespoon oyster sauce
1/2 teaspoon sugar
1/2 teaspoon dark soy sauce
2 tablespoons water
2 tablespoons cooking oil
3 cloves garlic, finely minced
2 oz. (56 g) chicken, cut into thin strips
6 medium-sized shrimp, shelled and deveined
1/2 cup shredded cabbage
1/4 cup shredded carrot
2 stalks scallions, cut into 2-inch strips (5 cm)

Steps:

  • Soak the chow mein noodles in cold water for about 5 minutes. Rinse a few times until the water turns clear and the noodles have become soft. Drain the excess water and set aside. (Don't over soak the noodles or they will become soggy.) In a small mixing bowl, mix all the ingredients of the Chow Mein Sauce together. Set aside. Heat up a skillet or wok with the oil. Add in the garlic and stir-fry until light brown or aromatic. Add the chicken and shrimp and stir fry until they are half cooked. Add the shredded cabbage and carrot into the wok and do a few quick stirs. Add the noodles and the soy sauce mixture. Continue to stir fry until the noodles are well combined with the soy sauce mixture and completely cooked through. Add the chopped scallions, do a few final stirs, dish out and and serve hot.

  • Cook pasta according to package directions. Meanwhile, in a small bowl, combine the cornstarch, soy sauce, vinegar, hoisin sauce, ginger and garlic; set aside., In a large skillet or wok, stir-fry chicken in 1 tablespoon oil for 5-8 minutes or until no longer pink. Remove with a slotted spoon. Stir-fry broccoli and carrots in remaining oil for 5-6 minutes or until crisp-tender. Drain pasta. Stir cornstarch mixture and add to the pan. 1 (8 ounce) package linguine
⅓ cup low-sodium soy sauce
2 tablespoons rice vinegar
2 teaspoons cornstarch
1 teaspoon white sugar
½ teaspoon sesame oil
2 tablespoons canola oil
2 cups snap peas
1 small sweet onion, chopped
1 (12 ounce) pork tenderloin, cut into thin strips
1 (8 ounce) package sliced white mushrooms
1 red bell pepper, chopped
1 clove garlic, chopped
½ teaspoon chopped fresh ginger, or to taste
2 cloves garlic, chopped
3 green onions, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the linguine at a boil until tender yet firm to the bite, 8 to 9 minutes; drain.
  • Whisk soy sauce, vinegar, cornstarch, sugar, and sesame oil together in a small bowl.
  • Heat canola oil in a large skillet over medium-high heat; cook and stir snap peas and onion in the hot oil until onion is softened, about 2 minutes. Add pork, mushrooms, red bell pepper, 1 clove garlic, and ginger; cook until pork is no longer pink, about 2 minutes.

1/2 pound shrimp
1 tablespoon cornstarch
1/2 pound lean pork
1/2 pound spinach
2 stalks scallion
2 tablespoons oils
1 1/2 tablespoons soy sauce
1 tablespoon sherry
dash pepper

Steps:

  • 1. Shell, devein and dice shrimp then dredge lightly in cornstarch. Sliver pork, or cut in strips. Wash and stem spinach. Mince scallions. 2. Heat oil. Add scallions and stir-fry a few times until translucent. Add pork stir-fry until it loses its pinkness (2 to 3 minutes). Then sprinkle with soy sauce. 3. Add shrimp, stir-fry until pinkish, then sprinkle with sherry and pepper. 4. Add spinach leaves and stir-fry until dark green and softened, but not limp. Then combine mixture with soft-fried (Chow Mein) or tossed noodles (Lo Mein). VARIATION: * For the spinach, substitute Chinese cabbage stems, cut in 1 1/2-inch sections and blanched. 1 tablespoon cornstarch
1/2 teaspoon salt

1/2 pound zucchini
2 teaspoons oils
1 tablespoon sherry
1 tablespoon oil
1 tablespoon soy sauce

Steps:

  • 1. Shell, devein and dice shrimp. Sprinkle with cornstarch, salt and pepper, then toss to coat. Cut zucchini in 1/4-inch slices. 2. Heat oil. Add shrimp and stir-fry until pinkish. Sprinkle with sherry, then stir-fry until sherry evaporates. Remove shrimp from pan. 3. Heat remaining oil. Add zucchini and stir-fry a few times. Then sprinkle with soy sauce and stir-fry until zucchini softens. 4. Return shrimp, stir-frying only to blend in and reheat. Then combine mixture with soft-fried (Chow Mein) or tossed noodles (Lo Mein). VARIATION: * For the zucchini, substitute broccoli, broken in flowerets and parboiled. 4 or 5 black, dried mushrooms
1 cup Roast Pork
1/2 cup celery
1 cup chinese cabbage
1/2 cup bamboo shoots
1/2 cup bean sprouts
6 snow peas
2 slices fresh ginger root
1 clove garlic
2 to 3 tablespoons oils
1 tablespoon sherry
1/2 cup Stock, Chicken or favorite stock

Steps:

  • 1. Soak dried mushrooms. 2. Slice roast pork, celery, Chinese cabbage and bamboo shoots. Blanch bean sprouts. Stem snow peas. Shred ginger root and crush garlic. 3. Heat oil. Add ginger root and garlic stir-fry to brown lightly. Add pork and stir-fry a few times. Then stir in sherry to blend. 4. Add all vegetables except snow peas, and stir-fry 1 minute more. 5. Add stock and heat quickly. Then cook, covered, 3 minutes over medium heat. Stir in snow peas. Combine mixture with soft-fried (Chow Mein) or tossed noodles (Lo Mein). VARIATIONS: * For the roast pork, substitute cooked beef, ham, chicken, duck, crabmeat, lobster or shrimp. * In step 3, add with the garlic and ginger root 2 scallion stalks, cut in 1/2-inch sections. * When using the mixture as a topping, as in Soft-Fried Noodles I, thicken at the end of step 5 with a paste made of 1 tablespoon cornstarch, 1 tablespoon cold water, 3 tablespoons soy sauce and 1/2 teaspoon sugar. ¼ cup chicken stock
2 tablespoons dry sherry
2 tablespoons oyster sauce
1 ½ tablespoons soy sauce
2 teaspoons toasted sesame oil
1 teaspoon light brown sugar
¼ teaspoon ground black pepper
2 tablespoons canola oil
½ cup matchstick carrots
½ cup thinly sliced onion
½ stalk celery, diagonally sliced
1 ½ tablespoons finely chopped fresh ginger
1 teaspoon finely chopped garlic
¾ pound uncooked medium shrimp, peeled and deveined
1 cup bean sprouts
4 stalks green onions, thinly sliced on the diagonal
2 cups fresh baby spinach

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook noodles at a boil until tender yet firm to the bite, 3 to 5 minutes. Drain, rinse, and set aside.
  • Whisk together chicken stock, sherry, oyster sauce, soy sauce, sesame oil, brown sugar, and pepper in a small bowl.
  • Heat a large 12-inch cast iron skillet or wok over medium-high heat until hot. Add canola oil and swirl to coat the bottom of the pan; heat until it just begins to smoke. Add carrots, onion, celery, ginger, and garlic to hot oil and cook, stirring constantly, just until vegetables begin to soften, about 1 minute. Add shrimp and cook, stirring constantly, until almost done, about 2 minutes. Push vegetables and shrimp to one side of the pan and add chicken stock mixture; stir constantly until sauce is hot.
  • Add noodles and stir well to mix with sauce and vegetables (using a metal spatula and chopping noodles slightly helps to mix this together.) Cook, stirring constantly, until the noodles have absorbed the sauce, about 2 minutes. Stir in bean sprouts and green onions and cook, stirring constantly, until just cooked, 1 to 2 minutes. Remove from heat and stir in baby spinach until just wilted. Serve immediately.

¼ cup vegetable oil
1 medium onion, chopped
1 cup uncooked medium shrimp, peeled and deveined
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon finely chopped fresh ginger
1 teaspoon parsley flakes
1 teaspoon garlic powder
1 teaspoon seasoned salt
½ teaspoon ground paprika
2 tablespoons soy sauce
1 cup chicken broth
1 ½ teaspoons cornstarch

Steps:

  • Bring a large pot of water to a boil. Add noodles and cook over medium heat until cooked through but still firm to the bite, 4 to 5 minutes. Drain and rinse with cold water.
  • While noodles cook, heat vegetable oil in a wok of large frying pan over medium-high heat. Add onions and fry for 2 minutes. Add shrimp, salt, and pepper; saute for 1 minute. Add ginger, parsley flakes, garlic powder, seasoned salt, and paprika; cook and stir for 1 minute. Stir in soy sauce, then add chicken broth and cook for 3 minutes.
  • Stir in cornstarch and continue to cook until thickened. Add cooked chow mein noodles to the mixture; use tongs to toss and stir until noodles are fully coated. Remove from heat, let cool slightly, and serve.
