1 (8 ounce) package cream cheese, softened
2 cups confectioners' sugar
2 tablespoons grated lemon zest
1 cup heavy cream

Steps:

  • In a medium bowl, beat cream cheese until soft. Blend in confectioners' sugar, and beat until creamy. Mix in lemon zest. Whip cream in a chilled bowl. Fold into cream cheese mixture.

1 package lemon cake mix (regular size)
2-1/4 cups whipped topping
1 large egg, room temperature
Confectioners' sugar

Steps:

  • In a large bowl, combine the cake mix, whipped topping and egg until well blended. Batter will be very sticky., Drop by teaspoonfuls into confectioners' sugar; roll lightly to coat. Place on ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned and tops are cracked. Remove to wire racks to cool.

My mother first served this light and refreshing dessert at a dinner for my brother, his new bride and their wedding guests back in the early '40's. When I go married in '47, I made sure I had the recipe.

Number Of Ingredients 13

1-1/2 cups water
Juice of 1 large lemon (1/4 cup)
3/4 cup sugar
1/2 teaspoon salt
2 tablespoons cornstarch
2 tablespoons cold water
3 large egg whites
CUSTARD SAUCE:
3 large egg yolks
1/8 teaspoon salt
1/2 cup sugar
1 cup whole milk, scalded and cooled
1 teaspoon vanilla extract

Steps:

  • In a medium saucepan, combine water, lemon juice, sugar and salt. Bring to a boil. Combine cornstarch and cold water until smooth; add to saucepan. Cook and stir over low heat until smooth and clear. , In a small bowl, beat egg whites until stiff peaks form. Add to saucepan and beat with a wire whisk until mixed, about 2 minutes. Let stand for 4 minutes. Remove from the heat and cool. , Meanwhile, for sauce, combine egg yolks, salt and sugar in a heavy saucepan. Gradually stir in milk. Cook over low heat, stirring constantly, until mixture coats the back of a spoon. Remove from the heat; immediately place pan in cold water to cool. Stir for 1-2 minutes. Add vanilla. Chill. , To serve, spoon pudding into individual serving dishes and top with sauce. Sauce will settle to bottom of dish. Refrigerate leftovers.

2 eggs
1 package lemon flavor instant pudding and pie filling
2 cups boiling water
1 teaspoon sugar

Steps:

  • Separate yolks from whites.
  • Place whites (and beaters) in freezer to cool.
  • Stir yolks& combine with lemon pie filling in a heavy saucepan.
  • Add boiling water& mix well.
  • Cook over low heat until thickened.
  • Add sugar to egg whites& whip.
  • Mix with lemon/yolk mixture.
  • Pour into dessert dishes& refrigerate.
  • Top with a dollop of whip cream (optional).

1/4 cup granulated sugar
1 envelope unflavored gelatin
4 teaspoons finely shredded orange rind
1/4 cup orange juice
2 teaspoons finely shredded lemons, rind of
3 tablespoons lemon juice
3 egg whites
3/4 cup granulated sugar
1 cup whipping cream

Steps:

  • In a small bowl, bet the egg yolks and 1/4c.
  • sugar for 5 minutes, or'til thick and lemon-colored; set aside.
  • In a small saucepan, soften gelatin in 1/4c.
  • cold water for 5 minutes.
  • Place on low heat; cook and stir until gelatin is dissolved.
  • Remove from heat and add orange and lemon peel and juices.
  • Stir gelatin mixture into egg yolk mixture.
  • Chill until slightly thickened.
  • In a large bowl, beat egg whites until soft peaks form.
  • Gradually beat in 3/4c.
  • sugar; beat until stiff peaks form.
  • Fold egg whites into egg yolk mixture.
  • Beat whipping cream until soft peaks form; fold into egg mixture.
  • Chill until mixture mounds and spoon into serving dishes; chill until set.

This recipe is from my mother's collection and is torn out of an old Ladies' Home Journal. It must be from the 60's...I wish I could show you the great hair flip on the woman with pearls making this. Did all our mother's wear dresses and pearls to cook in?

Number Of Ingredients 8

1 cup graham cracker crumbs
6 tablespoons sugar
3 tablespoons butter, melted
2 eggs, separated
1 (1 1/3 cup) can sweetened condensed milk
1 teaspoon lemon rind, grated
1/2 cup lemon juice
1 1/2 cups angel flake coconut (the recipe calls for a can)

Steps:

  • Combine graham cracker crumbs with 2 tablespoon of the sugar, and melted butter.
  • Press mixture on bottom and sides of lightly buttered pie pan.(the recipe calls for a refrigerator tray but I don't have a clue what that is).
  • Beat egg yolks until thick.
  • Combine with condensed milk.
  • Add lemon rind and juice gradually, stirring until thick.
  • Stir in 1 cup coconut.
  • Whip egg whites until foamy.
  • Gradually beat in rest of sugar, then beat until stiff.
  • Fold into lemon mixture.
  • Pour into tray (pie pan)
  • Sprinkle top with remaining coconut.
  • Chill in freezer until firm about 4 to 6 hours.
