Grandma's Honey Muffins image

I can remember my Grandma Wheeler making these delicious muffins-we'd eat them nice and warm, fresh from the oven! She was a "pinch of this and handful of that" kind of cook, so getting the ingredient amounts correct for the recipe was a challenge. Now it's a family treasure! -Darlis A. Yield 1 dozen.

Number Of Ingredients 8

2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature
1 cup 2% milk
1/4 cup butter, melted
1/4 cup honey

Steps:

  • Preheat oven to 400°. In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, combine egg, milk, butter and honey. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-18 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm., Freeze option: Freeze cooled muffins in freezer containers. To use, thaw at room temperature or, if desired, microwave each muffin on high until heated through, 20-30 seconds.

When I have over ripe bananas, I always make muffins or bread. This time its a deliciously moist muffin, that's great for breakfast, kids lunches or anytime. Somewhat healthy too and could be made healthier with a sugar substitute. Love the honey and oat addition in my muffins. Yum! Enjoy!

Number Of Ingredients 11

1 stick butter, softened ( 1/2 cup )
1/2 c sugar
2 eggs
1/2 tsp vanilla extract
1 c mashed bananas
3/4 c honey
1 1/2 c flour
1 c quick oats
1 tsp each - baking powder & baking soda
1/2 tsp salt
1/2 c chopped walnuts

Steps:

  • 1. Preheat oven to 350 degree F. Line muffin tin with paper cups. In a large bowl, beat butter and sugar until fluffy. Add banana, eggs, vanilla and honey - beat until well blended. Mix flour, oats, baking soda, baking powder and salt. Stir the dry mixture into the wet, just until incorporated. Fold in the nuts.
  • 2. To each muffin cup fill 2/3 of the way full.
  • 3. Bake for 15 - 18 minutes or until golden and pick comes out clean. Cool in pan for 10 minutes, then remove and finish cooling on rack.
  • 4. Enjoy these tasty moist muffins.

1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1/3 cup packed brown sugar
3 teaspoons baking powder
3/4 teaspoon salt
1 egg
2/3 cup milk
1/3 cup vegetable oil
1/4 cup honey
1/2 cup raisins, optional
1/2 cup chopped walnuts, optional

Steps:

  • In a bowl, combine the oats, flour, brown sugar, baking powder and salt. In another bowl, combine egg, milk, oil and honey. Stir into dry ingredients just until moistened. Fold in raisins and walnuts if desired., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

I developed this recipe because I couldn't bear to throw away the nutritious nut solids that are left after I make almond milk or walnut milk. My first batch was tasty and wonderfully moist, but a bit on the heavy side, so I made a few modifications, and came up with a lighter muffin. I'm posting here for others to try, and welcome your feedback and suggestions.

Number Of Ingredients 15

2 cups flour
2 teaspoons cinnamon
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup coconut oil
1/4 cup honey or 1/4 cup maple syrup
3/4 cup brown sugar (if you prefer a sweet muffin)
3 eggs, lightly beaten
1/2 cup Greek yogurt
2 cups almond paste left over from making almond milk (or other nut paste)
2 medium bananas, mashed or 1 cup applesauce
1 teaspoon vanilla or 1 teaspoon almond extract
1 -2 cup raisins or 1 -2 cup chocolate chips

Steps:

  • Preheat oven to 325 degrees fahrenheit.
  • Sift together dry ingredients: flour, cinnamon, baking powder, baking soda, salt, and nutmeg.
  • In a separate bowl mix wet ingredients: eggs, coconut oil, honey or maple syrup, sugar (if desired), yogurt, nut paste, bananas/applesauce, extract.
  • Combine wet and dry ingredients until just moist and fold in your addition(s) of choice: raisins, chocolate chips, coconut, or blueberries.
  • Line 2 regular muffin pans (1 dozen each) with muffin papers. Fill muffin cups 2/3 full.
  • Bake muffins for 30-40 minutes.

I got this recipe from a good friend. The muffins can be eaten anytime, of course, but they are especially popular for coffee breaks and brunches. One thing you can count on...they're really nice and moist!

Number Of Ingredients 11

4 cups diced peeled tart apples
1 cup sugar
1-1/2 cups raisins
1-1/2 cups chopped nuts
2 large eggs
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1/8 teaspoon salt

Steps:

  • In a large bowl, combine apples, sugar, raisins and nuts; set aside. In another bowl, beat eggs, oil and vanilla; stir into apple mixture. Combine dry ingredients; carefully fold into apple mixture. Do not overmix. Fill 18 greased muffin cups almost to the top. Bake at 375° for 18-20 minutes or until muffins test done.
