Apple, Bacon, and Cheddar Panini image

Three slices of bread with Cheddar cheese, bacon, and sliced apples, all heated through on a panini press until browned on the outside - this will send your taste buds to another world...enjoy!

2 tablespoons butter, or to taste
3 slices bread
¼ cup shredded Cheddar cheese
4 slices cooked bacon
¼ apple, peeled and sliced thinly

Steps:

  • Preheat a panini press.
  • Butter 2 of the bread slices. Place 1 slice on the panini press, buttered-side-down. Arrange Cheddar cheese on the bread; lay unbuttered bread on top. Place bacon and apple on top; cover with the remaining slice of bread, buttered side-up. Close the press and cook until panini is browned, about 4 minutes.

8 slices whole grain bread
1/4 cup honey mustard
2 crisp apples, thinly sliced (I like Braeburn or Fuji or Gala)
8 ounces mild cheddar cheese, thinly sliced
cooking spray

Steps:

  • Preheat panini press on medium heat(or use 2 heavy skillets-one to put on top of the panini while cooking to press it).
  • Lightly spread honey mustard evenly over each slice of bread.
  • Layer apple slices and cheese over 4 slices of bread, using about ½ apple and 2 ounces of cheese for each sandwich. Top each with remaining bread slices. Lightly coat panini press with cooking spray(or coat skillet.
  • Grill each sandwich for 3 to 5 minutes or until cheese has melted and bread has toasted.
  • Remove from pan and allow to cool slightly before serving. Enjoy!

Butter, for greasing the pie dish
5 medium Granny Smith apples, peeled, cored and quartered (about 2 1/2 pounds)
1 cup coarsely grated sharp white Cheddar (4 ounces)
2/3 cup dark brown sugar
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon kosher salt
Two 9-inch-diameter, unroll-and-bake refrigerated pie crusts
1 egg white, beaten until frothy

Steps:

  • Position an oven rack on the bottom third of the oven and preheat to 400 degrees F. Butter the sides and bottom of a 9-inch-diameter glass or ceramic pie dish.
  • Cut the apple quarters into 3 wedges. Mix the apples, cheese, sugar, butter, flour, cinnamon, nutmeg and salt in a medium bowl.
  • Unroll one crust and place in the buttered pie dish. Brush the inside of the crust with some of the egg white to coat. Pour the apple filling into the crust. Unroll the second crust and place on top of the filling. Pinch the edge of the top crust and the edge of the bottom crust together to seal. Fold the double edge under and crimp, making a decorative edge. Brush the top of the pie with more of the egg white. Cut several slits in the top crust to allow steam to escape.
  • Bake the pie until the crust is deep golden and the filling is bubbling through the slits, about 1 hour. Cover the edges of the pie with foil if the crust browns too quickly. Cool the pie for about 20 minutes before serving.

One of my favorite combinations is apple and cheddar cheese. When I make apple pie, I usually top it with a slice of cheese. So in honor of National Grilled Cheese month, I thought I'd try my own take on the classic grilled cheese sandwich with some Cameo apples and my panini press.

8 slices whole wheat bread
1 apple, peeled, cored, then chopped (Cameo or Granny Smith)
1/2-1 cup shredded cheddar cheese
1/8 cup granulated sugar
1/4 teaspoon cinnamon
2 tablespoons butter, at room temperature
cooking spray

Steps:

  • Mix together the cinnamon and sugar
  • Toss cinnamon sugar with the apples
  • Lightly grease pan with cooking spray and place on stove
  • Let pan get warm before placing 4 slices of the bread on it
  • Top each slice of bread with 1/8th of the shredded cheese
  • Top each with 1/4th of the apple mixture and 1/4 tablespoon of butter
  • Add the remaining cheese to each, before placing down the top slices.
  • Spread the remaining butter upon each top slice of bread
  • Lightly sprinkle a bit of cinnamon on top slices.

1 tablespoon butter, melted
1/4 cup mango chutney
2 ounces baked ham, thinly sliced
2 ounces cheddar cheese, thinly sliced
1/2 granny smith apple, thinly sliced

Steps:

  • Preheat panini grill to high.
  • Place rolls, cut side down, on a work surface and brush crusts with butter.
  • Turn rolls over and spread with chutney.
  • On bottom halves, evenly layer with ham, cheese, and apple.
  • Cover with top halves and press gently to pack.
  • Place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
  • Serve immediately.
