Cheese Grits image

Whisk butter, whole milk and sharp cheddar together with ground cornmeal for Alton Brown's creamy Cheese Grits recipe from Good Eats on Food Network.

Number Of Ingredients 7

2 cups whole milk
2 cups water
1 1/2 teaspoons kosher salt
1 cup coarse ground cornmeal
1/2 teaspoon freshly ground black pepper
4 tablespoons unsalted butter
4 ounces sharp Cheddar, shredded

Steps:

  • Place the milk, water, and salt into a large, heavy-bottomed pot over medium-high heat and bring to a boil. Once the milk mixture comes to a boil, gradually add the cornmeal while continually whisking. Once all of the cornmeal has been incorporated, decrease the heat to low and cover. Remove lid and whisk frequently, every 3 to 4 minutes, to prevent grits from sticking or forming lumps; make sure to get into corners of pot when whisking. Cook for 20 to 25 minutes or until mixture is creamy.
  • Remove from the heat, add the pepper and butter, and whisk to combine. Once the butter is melted, gradually whisk in the cheese a little at a time. Serve immediately.

1 1/2 teaspoons salt
1 cup grits, stoneground, if possible
2 tablespoons unsalted butter, plus more for garnish
1 cup grated cheddar cheese, plus more for garnish
Pinch of freshly ground black pepper
Pinch of cayenne pepper or Tabasco for garnish (optional)

Steps:

  • Bring 4 cups water and the salt to a boil in a large saucepan. Slowly stir in grits. Reduce heat to low, cover, and simmer, stirring occasionally until creamy, 4 to 6 minutes. Remove from heat, and stir in butter, cheese, and pepper. Serve hot, garnished with extra butter, cheese, and cayenne pepper if desired.

5 bacon strips, cooked and crumbled
1 can (4 ounces) chopped green chiles
Sliced green onions, optional

Steps:

  • In a 6-qt. stockpot, bring water to a boil. Slowly stir in grits, salt and paprika. Reduce heat; cook, covered, 15-20 minutes or until thickened, stirring occasionally., Reduce heat to low. Stir in cheese, bacon and chiles until cheese is melted. If desired, sprinkle with green onions.

My favorite way to eat grits. This makes a wonderful side dish to ham, fish and seafood, beef, or most any main course. I bet that even those of you who aren't crazy about grits will enjoy these.:)

4 cups water
2 cups whole milk
1 1/2 cups quick-cooking grits (not instant)
3 cups grated sharp white cheddar cheese (about 12 ounces)
3 tablespoons unsalted butter
salt, to taste
hot pepper sauce, to taste (such as Tabasco) (optional)

Steps:

  • In a large saucepan over medium heat, add the water and milk. When bubbles just begin to break the surface, slowly add the grits, whisking constantly. Cook, stirring frequently and scraping the bottom of the pan, until thickened and cooked, about 7 minutes.
  • Add the cheese and butter and stir just until melted. Remove from the heat. Add salt to taste and hot pepper sauce, if desired. Serve immediately.

2 teaspoons kosher salt
1 cup fine quick-cooking grits (not instant)
1 1/4 cups half-and-half
2 tablespoons unsalted butter
1 1/2 cups grated aged sharp Cheddar cheese (4 ounces)
1/2 cup chopped scallions, white and green parts (4 scallions)
1/2 teaspoon freshly ground black pepper
Grated Cheddar and chopped scallions, for garnish

Steps:

  • Bring 4 cups of water to a boil in a heavy 4-quart saucepan. Add the salt, then slowly add the grits in a thin, steady stream, stirring constantly with a wooden spoon. Reduce the heat to low and simmer, stirring occasionally, until the grits thicken, about 5 to 7 minutes.
  • Add the half-and-half and butter to the grits and stir. The mixture will seem thin but it will thicken as it cooks. Bring to a simmer, stirring occasionally. Cover the pot, reduce the heat to low, and cook, stirring occasionally for 45 minutes, until very smooth and creamy. Off the heat, stir in the Cheddar, scallions, and pepper. Season to taste and serve hot with a sprinkle of grated cheese and scallions.

2 tablespoons butter or margarine
1 teaspoon salt
3 1/2 cups milk
2 cups water
1 1/4 cups quick cooking grits
1 package (8 ounces) shredded cheddar cheese (2 cups)
1 teaspoon hot pepper sauce
1/4 teaspoon pepper
5 large eggs

Steps:

  • Preheat oven to 325 degrees F. In 3 quart saucepan, combine butter, salt, 1 1/2 cups milk and water and heat to boiling over a medium high heat. Gradually stir in grits, beating constantly with wire whisk to prevent lumps. Reduce heat; cover and cook, stirring occasionally, 5 minutes (grits will be very stiff). Remove saucepan from heat and blend in cheese.
  • In a large bowl, mix hot pepper sauce, pepper eggs, and remaining 2 cups milk until blended. Gradually stir grits mixture into the egg mixture.
  • Grease shallow 2 1/2 quart casserole. Pour grits mixture into casserole. Bake, uncovered, 45 minutes, or until knife inserted in the center comes out clean

1 large garlic clove, minced

2 medium tomatoes, seeded and finely chopped
4 green onions, finely chopped

2 to 3 teaspoons Cajun seasoning

Steps:

  • Place the first 5 ingredients in a 3-qt. slow cooker; stir to combine.
