I make up this creole seasoning to have on hand when a recipe calls for Creole or Cajun seasoning. -Marian Platt, Sequim, Washington

2 tablespoons plus 1-1/2 teaspoons paprika
2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon cayenne pepper
1 tablespoon pepper

Steps:

  • In a small bowl, combine all ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Use to season chicken, seafood, beef and vegetables.

This Creole Seasoning recipe is super quick to make and tastes WAY better than store-bought! Deliciously versatile, give your food a major boost in FLAVOR!

4 teaspoons garlic powder
4 teaspoons onion powder
2 tablespoons sweet paprika powder
1 teaspoon smoked paprika
1 tablespoon dried thyme
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon dried rosemary
1 bay leaf
2 teaspoons cayenne pepper ((or less if you don't want it as hot))
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper

Steps:

  • Place all of the spices in a spice of coffee grinder or a blender. Pulse until you get a fine powder. Store in an airtight jar in a dark cupboard until ready to use. For optimal flavor use within 2 months. Makes about 1/2 cup.

If you love Cajun food, you're going to love this recipe. Bonus: It's easy to make.

1/4 c olive oil
1/3 c all purpose flour
1/2 lb thick sliced okra, preferably fresh
1 medium chopped onion
1 medium green bell pepper, chopped
3 ribs chopped celery
1 lb uncooked shrimp, peeled & deveined
1/2 lb shredded crab meat or diced white fish
2 clove minced garlic
2 Tbsp **creole seasoning
2 c chicken broth
2 can(s) petite diced tomatoes (14 oz ea)
4 green onion, trimmed and chopped including green shoots

Steps:

  • 1. In a large heavy pot over medium heat, cook oil and flour, stirring constantly, for about 15 minutes, until you have a copper colored roux. Add okra, onion, celery, peppers, and garlic into pot with roux; continue cooking for 5 minutes, stirring constantly. Add tomatoes and broth into pot and bring to a boil. Add seasoning and seafood into pot and simmer for 10 minutes, stirring occasionally. Divide into serving bowls and top with green onions.
  • 2. ** You can use commercial creole seasoning such as Zatarain's if you don't want to make your own. IMPORTANT! PLACE INGREDIENTS IN BAKING PAN IN ORDER LISTED & PER INSTRUCTIONS
1 c warmed milk (105º)
1/8 c melted butter or olive oil
2 Tbsp tomato paste (i use hunts)
3 c white bread flour
1-1/2 Tbsp brown sugar
1 tsp salt

1 tsp parsley flakes
1 pkg rapid rise yeast (1-1/2 tsp)

Steps:

  • 1. Warm milk in microwave for10-15 seconds until just lukewarm (105º). CAUTION: IF MILK IS TOO HOT, IT WILL KILL YOU YEAST ACTION. If you don't have a thermometer, sprinkle a little on the inside of your wrist; it should just be lukewarm. Stir tomato paste and melted butter or oil into milk and whisk until well blended Pour into bread machine baking pan
  • 2. In separate bowl, with wooden spoon mix flour, brown sugar, salt, creole seasoning and parsley flakes just until blended. ***Or you can use Zatarain's Creole seasoning Pour mixture over milk and oil mixture. Make sure flour entirely covers all the liquid.
  • 3. Make a depression in the center of the flour mixture, add the yeast into the depression. Turn bread machine on to basic (white bread) setting with medium or dark crust. When bread is done, you may brush melted butter over the crust if you wish. Enjoy!!!

CREOLE PINTO BEANS AND RICE (SALLYE)



Creole Pinto Beans and Rice (Sallye) image

We were tired of Charro and chili beans, so I came up with a plan. This is the result which turned out to be a great dish.

1 lb pinto beans
1 to 2 lb andouille sausage
3 to 4 Tbsp homemade creole seasoning (link in comments) or you can use zatairan's
1 medium white onion
1 medium green bell pepper
4+ qt water
1 can(s) hunts tomato sauce (10-14 ounces)
2 c steamed rice

Steps:

  • 1. Place beans in colander, run cold tap water over while sorting to remove any stones or other foreign debris. Do not skimp on rinsing to avoid contamination from grower. Place beans in large heavy dutch oven or stew pot and cover with water to completely cover up to 2" above beans. NOTE: BEANS WILL ABSORB A LOT OF LIQUID WHILE COOKING.
  • 2. Place pot on high heat and bring to a rolling boil When water is boiling, add creole seasoning and tomato sauce, stirring well to blend into liquid. Turn heat to low so beans just simmer. Cook for 3 hours, checking often and adding more water if needed
  • 3. AFTER 3 HOURS: Put 1 tablespoon oil in heavy skillet and heat to medium high. Cut sausages into 1" thick "silver dollar" pieces and place in skillet Peel and cut onion into thin wedges; separate pieces and add to skillet Remove stem, seeds and veins on bell pepper, cut into thin wedges and add to skillet Cook until sausage is beginning to brown and veggies are softening.
  • 4. Add sausages and vegetables to beans and stir to blend well. Cook for another hour until beans and veggies are soft. Again, add water if needed to keep liquid up to 2" above beans. Beans will thicken the liquid while cooking.
  • 5. Can be served as a main or side dish. I made cornbread and steamed rice to serve with our meal today.
