RUBY RED CANDY APPLES
I loved candy apples as a child. I never knew they had cinnamon until I found this recipe. I was surprized when they turned out just like the ones at the Fair. I forget how many apples it covers so I just guessed 10.

OLD-FASHIONED RED CANDIED APPLES
These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that. Cook time depends on your altitude where you live, heat of your burner, and pot used. NOTE: See review by Canada Goose for helpful hints! Thanks, CG!

THE BEST RED CANDY APPLES
These are awesome. The candy is really crunchy and easy to eat. They remind you of the fair. I use Granny Smith Apples because it's the perfect combination of tart and sweet. You don't taste the lemon juice at all, but it give the candy the perfect flavor.

Meanwhile, wash and dry your favorite apples. Insert wooden popsicle sticks or skewers. Prepare a baking sheet to hold your apples by spraying it with cooking spray. When the syrup is ready, quickly dip apples and place on prepared baking sheet. Let cool, and enjoy!

Steps:
- Lightly grease cookie sheets. Insert sticks into whole, stemmed apples.
- In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 - 310 degrees F (149 - 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring and Kool-Aide.
- Holding the apple by its stick, dip in syrup and remove and turn and coat evenly. Place on grease cookie sheet to harden.
- *Hint - Place syrup mixture in a bowl over a pot with lightly boiling water to keep candy from hardening while dipping!

Steps:
- Bring the first three indgredients to a rapid boil in a large saucepan or dutch oven. Boil for 5 minutes, stirring constantly to prevent boiling over, sticking, and to help melt the candies.
- Reduce to a medium heat and place the apples (peeled side down) into the hot syrup. Cook until done or about 15 minutes. They will fork tender -- don't overcook or you will have red applesauce! Cool and serve. We think they are best chilled overnight.
