I started with Nigella's Blueberry Muffin Recipe from "How To Be A Domestic Goddess" and re-vamped it to make it much healthier - but still delicious!

4 tablespoons canola oil
1 1/3 cups whole wheat flour
1/4 cup Splenda brown sugar blend
1/2 teaspoon baking soda
2 teaspoons baking powder
1 pinch salt
1 cup nonfat yogurt
1 egg
1 cup frozen blueberries
1 orange, zest of

Steps:

  • Preheat oven to 400°F.
  • Combine the dry ingredients in a large bowl.
  • Whisk wet ingredients in a separate smaller bowl.
  • Pour wet into dry and combine - but do not over work.
  • Add the orange zest.
  • Fold in blueberries.
  • Spoon into greased 12-muffin pan.
  • Bake for 20 minutes.
  • Enjoy!

1/2 cup walnuts, chopped
1/3 cup sugar
1 1/2 teaspoons cinnamon
3 tablespoons butter, melted
1 cup flour
7 tablespoons flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup sugar
1 large egg
3 tablespoons unsalted butter, melted
1 cup buttermilk
2 tablespoons buttermilk
1/2 cup honey

Steps:

  • Preheat oven to 400F degrees.
  • Mix all the filling ingredients together in a small bowl, set aside.
  • In a large bowl, mix together the flour, baking powder, baking soda and sugar.
  • Mix the egg, melted butter and buttermilk.
  • Make a well in the dry ingredients and add gently mix in the wet ingredients.
  • Fill 12 miffin cups 1/3 full, add a scant tablespoon of filling, cover with more muffin mixture until 2/3 full.
  • Sprinkle any remaining filling on top of the muffins.
  • Bake for 15 minutes.
  • Put the muffins onto a rack to cool and drizzle with honey (it may be easier to drizzle the honey if it has been warmed first).

1/2 banana
1/2 cup unsweetened applesauce
1/2 teaspoon salt
1/4 cup honey
1/4 cup agave syrup
2 cups flour
1 tablespoon baking powder
1 teaspoon vanilla
1/2 cup almond milk
2 cups frozen blueberries

Steps:

  • 1. Rinse frozen blueberries under water in strainer until thawed.
  • 2. In a mixer on high speed, whip the 1/2 banana and 1/2 cup applesauce until mixed without lumps.
  • 3. Add remaining ingredients except for blueberries. Mix until batter is combined. Add 1-2 tsp of almond milk if batter is too dry.
  • 4. Mix batter with blueberries by hand.
  • 5. Bake in preheated oven at 350F or at 330F in a convection oven. Bake for 35 mins or until firm.

5 tablespoons unsweetened applesauce
1/2 cup sugar
1 large egg
3/4 cup fat free Greek yogurt
1/2 teaspoon lemon zest
1 1/2 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup blueberries, fresh
1 banana
3/4 cup steel cut oats
1/4 teaspoon lemon juice

Steps:

  • Preheat oven to 375°F.
  • Line a muffin tin with paper liners or spray with nonstick cooking spray.
  • If you have an electric mixer, use it to beat the applesauce and sugar until light and fluffy. I mixed the ingredients by hand, with a whisk, since I don't have an electric mixer.
  • Add egg and beat well, then yogurt, lemon juice, banana and zest.
  • If you have a sifter, sift together flour, baking powder, baking soda and salt and sift half of dry ingredients over batter. I don't have a sifter, so I mixed the dry ingredients together in a separate bowl and added it to the bowl of liquid ingredients.
  • Mix until combined.
  • Sift (or add) remaining dry ingredients into batter and mix just until the flour disappears.
  • Gently fold in your blueberries (or whatever fruit you're using).
  • Bake for 25 to 30 minutes, until the tops are golden.

My mom always liked coming up with extremely healthy meals for my brother and I when we were kids. This slightly modified version of her muffin recipe is one of my favorites. The types of nut butter and flour used can be changed to taste and the blueberries can be replaced with other berries, chocolate chips, or whatever you prefer.

Number Of Ingredients 8

1 cup water
1/4 cup nut butter (peanut and almond both work well)
1/2 teaspoon salt
4 -5 bananas (the riper the better)
3 cups flour (wheat, whole wheat, or barley)
1 tablespoon baking powder
2 cups blueberries (or other filling)
1/4-1/3 cup macadamia nuts (chopped) (optional)

Steps:

  • Put the water, nut butter, salt, and bananas in a blender and blend until well mixed (can also be mixed by hand, though it takes longer).
  • Pour the mixture into a large bowl and add the flour and baking powder. Mix moderately well.
  • Add the blueberries (and the nuts if wanted) and mix well.
  • Place the batter in a muffin tin (there should be enough to fill a standard 12 muffin tin). A large spoon or a moderate sized ice cream scoop work well.
  • Preheat oven to 375.
  • Place the tin in the oven and cook for 25-30 minutes.
