FARRO WITH BLISTERED TOMATOES, PESTO AND SPINACH



Farro With Blistered Tomatoes, Pesto and Spinach image

Here is an Italian-inspired recipe that uses store-bought or homemade pesto to season farro, which is then tossed with fresh spinach, roasted tomatoes, red onions and mozzarella for a complete vegetarian meal. Make it with fresh-from-the-market cherry tomatoes when they're in season, but during the rest of the year, use grape tomatoes, as they tend to be more flavorful than cherry during the colder months. If you'd like, substitute arugula, or cooked broccoli rabe or kale, for the spinach. It tastes delicious warm or cold the next day - and topping it with shrimp, chicken or scallops can make it feel new again. Before reheating, add a bit more spinach, drizzle it with a little olive oil and give it a good stir.

Kosher salt and black pepper
1 cup farro, rinsed
2 pints cherry or grape tomatoes
1 small red onion, peeled, quartered and cut into 1-inch wedges
2 tablespoons olive oil, plus more for the farro
1/2 teaspoon red-pepper flakes
1/4 cup store-bought or homemade pesto, plus more to taste
1 lemon, zested (about 1 tablespoon) and juiced (about 2 tablespoons)
2 packed cups baby spinach
1 (4-ounce) ball fresh mozzarella, torn into chunks, or 1/2 cup ricotta salata, crumbled (optional)
1/4 cup fresh flat-leaf parsley or basil leaves and tender stems, roughly chopped

Steps:

  • Heat the oven to 400 degrees. Bring a large covered pot of well-salted water to a boil. Add the farro and adjust the heat to maintain a medium boil. Cook uncovered, stirring occasionally to make sure nothing is sticking to the bottom, until tender and not too chewy, about 30 minutes.
  • Meanwhile, on a sheet pan, combine the tomatoes and onion wedges with the oil, making sure everything is well coated and glistening, then season with salt, pepper and the red-pepper flakes. Roast until the tomatoes blister and slightly deflate, 25 to 30 minutes.
  • When the farro is done, drain, then pour into a serving bowl or back into the pot. Toss with some olive oil, then mix in the pesto. Add the lemon zest and juice, then stir in the spinach. Set aside to cool slightly.
  • Scrape the onions, tomatoes and their juices into the farro; season with salt and pepper as needed. Add the cheese, if using, then garnish with herbs and serve.

½ cup farro
1 cup pitted and sliced black cherries
¼ cup red wine
1 pinch salt
1 tablespoon olive oil
3 jalapeno chicken sausages, chopped
1 (8 ounce) package sliced fresh mushrooms
¼ cup dry white wine
5 cups baby spinach leaves
2 tablespoons chopped fresh parsley
2 ounces goat cheese, crumbled

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook farro in the boiling water until tender, 20 to 30 minutes. Drain.
  • Cook and stir cherries in a small saucepan over medium-low heat until liquid is released, 5 to 7 minutes. Add red wine and 1 pinch salt; simmer until cherries soften and sauce is slightly reduced, 15 to 20 minutes. Remove from heat.
  • Heat olive oil in a frying pan; cook and stir sausage until browned, 5 to 10 minutes. Add mushrooms and a pinch salt. Cook and stir until liquid is released from mushrooms, about 5 minutes. Stir farro and white wine into mushroom mixture; cook until wine has evaporated, about 5 minutes.
  • Remove pan from heat. Add spinach, parsley, and cherry sauce; stir until spinach is slightly wilted. Stir in goat cheese until melted; toss well.

A scattering of fresh radishes and scallion greens keeps this simple Italian sausage Instant Pot dinner feeling fresh and springy.

4 large or 6 small leeks, white and pale-greens parts only
1 Tbsp. extra-virgin olive oil, plus more for drizzling
4 fully cooked spicy Italian sausage links (about 12 oz.), sliced crosswise into 1/3"-thick rounds
1 large bunch scallions (about 10)
1/4 cup dry white wine
1 cup farro
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
4 sprigs thyme
Thinly sliced radishes, peperoncini, and lemon wedges (for serving)
Special Equipment
An electric pressure cooker or Instant Pot

Steps:

  • Preheat cooker on "Sauté" setting. Trim roots off leeks and remove and discard tough outer layers, then cut leeks into 1/3"-thick rounds. Rinse well, then pat dry.
  • When pressure cooker is hot, pour 1 Tbsp. oil into insert, then add sausage and cook, stirring occasionally, until browned in places, about 5 minutes.
  • Meanwhile, separate white and light green parts of scallions from dark green parts. Cut white and light green parts into 1/4"-thick rounds. Finely chop dark green parts and set aside for serving.
  • Add leeks and scallion white and light green parts to pressure cooker and stir to coat in oil. Add wine and cook, stirring occasionally, until wine is reduced by half and no longer smells like alcohol, about 1 minute. Add farro, salt, pepper, thyme, and 2 1/2 cups water and stir to combine, then turn off cooker.
  • Lock on lid, making sure steam-release valve is in the proper sealed position. Select "Manual" and program for 3 minutes at high pressure.
  • As soon as the time has elapsed, turn off cooker, "Quick Release" the steam, and unlock lid.
  • Divide farro mixture among bowls. Top with radishes, peperoncini, and reserved scallion greens. Drizzle with oil and squeeze lemons over.
