2 medium acorn squash (1-1/2 pounds each)
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 bacon strips, cooked and crumbled
10 tablespoons shredded Parmesan cheese, divided
2 tablespoons thinly sliced green onion
1 tablespoon butter, softened
1/4 teaspoon salt
Dash to 1/8 teaspoon cayenne pepper

Steps:

  • Cut squash in half; discard seeds. Place squash upside down on a baking sheet coated with cooking spray. , Bake at 350° for 50-55 minutes or until tender. Scoop out squash, leaving a 1/4-in. shell., In a large bowl, combine the squash pulp, spinach, bacon, 6 tablespoons Parmesan cheese, green onion, butter, salt and cayenne. , Spoon into shells. Sprinkle with remaining Parmesan cheese. Bake at 350° for 25-30 minutes or until heated through and top is golden brown.

I did not, get this from any one ! This is a hand-me down recipe, my Mom, Grandma, her Mom Ect.... Like it love, "tweek" it to your own taste. I have never been told YUCK just where did you get this recipe? Simple, tasty, smokey and loved !

2 acorn squash
8 slices bacon, use your favorite
8 tablespoons butter
4 teaspoons cinnamon
salt & pepper
after much time i have looked at this recipe and realize my Mistake
there is no sweeteners add about 2 tablespoons per 1/2 brown sugar
use honey or syrup, at your discretion

Steps:

  • I like to buy the squash a month or two ahead of time to let it ripen, so that the squash turns yellow all the way around, not just on the bottom. That is when they are ripe. But if you didn't, don't let it stop you from making this recipe !
  • Cut squash in 1/2 with the grooves.
  • Remove the pulp with the seeds, and cut thin slice off back half, so the half lays steady-flat with out tipping, but try do not cut through the center.
  • Place squash in greased oven proof pan.
  • Place butter around edges of squash, and some in center, of each half.
  • You will use 1 tablespoon for each half, more or less. This depends on how buttery you want it.
  • Sprinkle with cinnamon, salt and pepper to taste, and then place bacon around edges of squash.
  • Cover entire dish with foil, bake at 350 degrees, 45 minutes, or until done.
  • To test for doneness, be careful when removing foil,steam will come out, fork test squash for tenderness, when done it will be soft all the way through, to skin.

This simple sheet-pan squash is a show-stopping side your family will love. It's easy and delicious -- perfect for a big holiday dinner or a weeknight meal.

1 large butternut squash (3 1/2 to 4 pounds), halved and seeded
1 1/2 pounds sweet potatoes, cut in half lengthwise
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/3 cup heavy cream
6 tablespoons unsalted butter, cut into small pieces
3 ounces goat cheese, crumbled
1 scallion, sliced
1/4 cup pepitas

Steps:

  • Preheat the oven to 425 degrees F. Put the squash and potatoes on a baking sheet. Brush the squash with half of the oil and toss the sweet potatoes with the other half, then sprinkle with salt and pepper. Turn the squash and sweet potatoes flesh-side down on the baking sheet and poke the skin of the squash all over with a fork. Roast until the squash flesh is very soft and golden brown and the potatoes are cooked through when poked with a knife, 1 hour 10 minutes to 1 hour 30 minutes.
  • Turn the oven to broil. Scoop out the flesh of the sweet potatoes and put it in a bowl (discard the skins). Scoop the flesh out of the squash, leaving a 1/2-inch border of flesh around the edges, and add it to the bowl along with the heavy cream, butter, 2 teaspoons salt and a few grinds of black pepper. Mash with a potato masher until it is smooth, creamy and resembles mashed potatoes. Put the squash skins back on the baking sheet and divide the filling evenly between the cavities. Top with the goat cheese, then broil until the cheese is bubbly and just beginning to turn brown, 1 to 2 minutes. Sprinkle the scallions and pepitas over tops before serving.

1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1/2 cup KRAFT 2% Milk Shredded Cheddar Cheese
3 Tbsp. OSCAR MAYER Turkey Bacon Bits
3 Tbsp. butter or margarine, softened
1 green onion, thinly sliced
1/8 tsp. ground red pepper (cayenne)
2 Tbsp. fresh bread crumbs
1 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 350°F.
  • Place squash, cut sides down, in 13x9-inch baking dish. Bake 50 to 55 min. or until tender.
  • Scoop out pulp, leaving 1/4-inch-thick shells. Place shells, cut sides up, in same baking dish. Combine pulp with spinach, shredded cheese, bacon bits, butter, green onions and pepper. Spoon into squash shells. Mix bread crumbs and Parmesan; sprinkle over filling.
  • Bake 25 to 30 min. or until heated through.

3/4 cup parmesan cheese, divided
2 hard-cooked eggs, finely chopped
1/4 cup margarine
6 slices bacon, cooked and crumbled
2 tablespoons chopped green onions
salt and pepper
1/4 cup soft breadcrumbs

Steps:

  • Halve squash. Remove seeds. Place the halved squash, cut side down, in a 9x13 dish. Cover and bake at 350 for 45-60 minutes, until tender.
  • Remove pulp from squash, leaving a 1/4" shell in each half.
  • In bowl, combine pulp, spinach, 1/2 of the Parmesan, the eggs, margarine,bacon, onion, salt and pepper.
  • Fill shells with this mixture. Mix remaining cheese with breadcrumbs, sprinkle on top of squash.
  • Bake at 350, 25-30 minutes.

This impressive side dish is a play on the classic twice-baked potato with amped-up toppings of Parmesan whipped cream, candied hazelnut-bacon bits, and fresh chives.

1 large (about 5 pounds) and 1 medium (about 3 1/2 pounds) butternut squash
2 cups heavy whipping cream, divided
1 cup finely grated Parmesan (about 3 ounces), divided
3 strips bacon (about 3 ounces)
4 tablespoons sugar, divided
2 tablespoons finely chopped hazelnuts
1 1/4 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons chopped chives, divided

Steps:

  • Preheat oven to 400°F. Cut both squash in half lengthwise; scoop out seeds. Transfer cut side down to a parchment-lined rimmed baking sheet. Poke outside of skin all over with a fork, then roast until flesh is very soft, about 1 1/2 hours for large squash and about 1 hour for medium squash.
  • Meanwhile, heat 1 cup cream in a medium pot over medium until just beginning to simmer. Reduce heat to medium-low and whisk in 1/4 cup cheese and cook, whisking, until smooth, about 1 minute. Transfer to a medium bowl and chill until very cold, about 45 minutes (do not freeze).
  • Cook bacon in a medium skillet over medium heat, turning occasionally, until crisp, 8-10 minutes. Transfer to paper towels, reserving bacon fat in skillet. Let cool, then finely chop.
  • Spread 3 Tbsp. sugar in a thin layer in the center of a medium dry skillet. Cook over medium heat, mostly undisturbed (it's ok to swirl pan gently to get sugar to melt evenly), until sugar melts and starts to turn light brown, about 6 minutes. Quickly stir in bacon and hazelnuts and cook, stirring, until coated and melted sugar is chestnut brown, about 1 minute more. Scrape onto a parchment-lined rimmed baking sheet and spread out to cool, then finely chop.
  • Reduce oven temperature to 375°F. Using a spoon, scoop flesh out of large squash into a large bowl, leaving a 1/2" border around squash shell to help maintain its shape. Transfer large shells to a rimmed baking sheet; arrange a few pieces of crumpled foil around shells to keep them upright. Scoop flesh out of medium shells into same bowl (you should have 6 cups squash); discard medium shells. Using a potato masher or spatula, mix in salt, pepper, nutmeg, 1 Tbsp. reserved bacon fat, and remaining 1 cup cream, 3/4 cup cheese, and 1 Tbsp. sugar until smooth. Fold in 2 Tbsp. chives. Divide filling between large squash shells, then create attractive swoops with a spoon. Bake squash until warmed through, 20-30 minutes.
  • Meanwhile, using an electric mixer on medium-high speed or a whisk, whip chilled cream to medium peaks. Chill until ready to use.
  • Dollop squash with whipped cream, then top with candied bacon bits and remaining 1 Tbsp. chives. Serve extra candied hazelnut-bacon bits on the side.

  • Squash shells can be filled (not baked) 2 days ahead; cover and chill.

  • Wash and dry your squash. Using a sharp, large knife, and a sturdy cutting board that doesn’t move carefully slice your squash in half. You can cut it widthwise or lengthwise. Scoop out any seeds and excess flesh with an ice cream scoop. Discard seeds into the compost bin. Coat flesh sides of squash with olive oil. Place squash flesh side down on a parchment-lined baking sheet. Bake for 30-35 minutes at 400° Fahrenheit. Squash will be fork tender with a caramelized flesh and soft outer skin.
  • Heat a large skillet and add bacon pieces to it. Cook until bacon is crisp and a deep reddish color. Remove pan from heat and remove bacon pieces using a slotted spoon. I put mine in a paper towel lined dish.
  • Add ground sausage, chopped celery, apple, and onion to the pan and cook until sausage is browned and veggies are tender. Place the spinach in the pan and cook for about 45 seconds or until spinach is wilted. Add back the cooked bacon pieces, and bread crumbs. Stir to combine the filling.
  • Scoop about 3/4 of stuffing to each baked acorn squash. Return squash to the oven and bake for an additional ten minutes. You can add some 4C Parmesan Cheese if you please. Simply sprinkle each with about a tablespoon of cheese before baking.
