BEEF-AND-PORK CHILI

4 dried guajillo chile peppers, stems removed
4 dried chiles de arbol, stems removed
1/4 cup extra-virgin olive oil
2 Fresno chile peppers, sliced
1 red onion, sliced
6 cloves garlic, crushed
2 teaspoons ground cumin
1 teaspoon dried oregano
Kosher salt and freshly ground pepper
2 tablespoons tomato paste
1 28-ounce can whole peeled tomatoes
2 15-ounce cans low-sodium beef broth
2 tablespoons masa harina (corn flour)
1 tablespoon packed brown sugar
1 tablespoon apple cider vinegar
2 pounds beef chuck, cut into 1/2-inch cubes
2 pounds boneless pork shoulder, cut into 1/2-inch cubes
2 15-ounce cans pinto beans, drained and rinsed
Sour cream, diced red onion and chopped avocado, for topping
Tortilla chips, for serving

Steps:

  • Toast the dried chiles in a large heavy-bottomed pot or Dutch oven over medium-high heat, turning often, until slightly darkened and fragrant, about 4 minutes. Remove to a plate and set aside. Heat 2 tablespoons olive oil in the pot. Add the Fresno chiles, red onion, garlic, cumin, oregano, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the onion softens, about 4 minutes. Add the tomato paste and cook, stirring, until the vegetables are coated, about 1 minute.
  • Add the tomatoes, beef broth, masa harina, brown sugar, vinegar and the toasted chiles to the pot. Bring to a boil, then reduce the heat to low; cover and simmer until the dried chiles soften, about 20 minutes. Working in small batches, puree the mixture in a blender and transfer to a large bowl. Wipe the pot clean.
  • Season the beef and pork generously with salt and pepper. Heat the remaining 2 tablespoons olive oil in the pot. Working in batches, add the meat in a single layer and cook, turning, until browned, about 7 minutes. Remove each batch to a bowl with a slotted spoon as you go.
  • Return the meat to the pot along with the pureed mixture and 3 cups water. Bring to a boil, then reduce the heat to low; partially cover and cook, stirring occasionally, until the meat is tender, about 3 1/2 hours. Add the beans and cook until tender, 15 minutes. Serve with assorted toppings and chips.
  • Keep the seeds in the chile peppers for this recipe-they add a nice amount of heat.

Grilled Beef with Porcini and Chile Morita image

The "aha!" moment when I thought to combine porcini and grilled beef with chiles came to me in Argentina, home of the world's best grilled beef. Specifically, I was in Mendoza, the capital of Argentina's wine country and settled by Italian immigrants in the nineteenth century-probably why beef with porcinis is such a common pairing there. This dish is delicious prepared outdoors over a wood-fired grill, but you can also cook it stovetop on a cast-iron griddle or ridged grill pan. Look for porcini powder at specialty food stores or buy dried porcinis and grind them yourself in a spice grinder.

Yield makes 8 tacos

Number Of Ingredients 6

1 tablespoon porcini powder (see headnote)
3/4 teaspoon smoked salt (page 163)
1/4 teaspoon chile powder (preferably morita or chipotle), page 151
1 pound skirt steak, trimmed (no more than one-quarter covered with a thin layer of fat) and pounded 1/3 inch thick
8 (5 1/2-inch) crispy yellow corn tortilla shells (page 17), for serving
Garnish: Roasted corn and sautéed porcini mushrooms

Steps:

  • If grilling on an outdoor grill, preheat the grill.
  • In a bowl, combine the porcini powder, smoked salt, and chile powder. Rub over the meat on both sides. Grill the meat over high heat, about 2 minutes per side-you want it really rare and juicy. If cooking indoors on a cast-iron griddle or ridged grill pan, cook, turning once, over very high heat, about 4 minutes total.
  • Transfer the meat to a cutting board and slice against the grain into 1/4-inch strips. To serve, divide the filling equally between the crispy shells, top with garnishes and salsa, and arrange in a taco holder. Or, lean the filled shells in a row, propped upright, on a platter. Eat right away. To build your own, spoon some filling in a crispy shell, top with garnishes and salsa, and eat right away.

GRILLED PORCINI, ITALIAN STYLE

8 to 12 fresh porcini or other flat-capped mushrooms such as shiitake, Lundy's yellow, cepes or Black Forest, about 1 pound
4 tablespoons olive oil
2 teaspoons dried oregano
2 teaspoons finely minced garlic
Salt to taste if desired
Freshly ground pepper to taste

Steps:

  • Preheat charcoal or gas-fired grill to high.
  • Remove stems from mushrooms. Stems may be chopped and used for another purpose. Wipe caps with damp cloth.
  • Blend olive oil, oregano, garlic, salt and pepper in small bowl. Blend. Brush mushroom caps with mixture.
  • Place mushrooms, stem side up, on grill and cook 2 minutes. Turn and brush with remaining oil mixture. Cook 2 minutes longer.

This is a very hearty dish, ideal for a winter dinner. Serve with just the potatoes, or add your favorite veggies: they will taste great with the dried mushroom sauce!

1 ounce dried porcini mushrooms
1 cup hot water
2 tablespoons butter
6 tablespoons olive oil, divided
1 small red onion, finely chopped
1 teaspoon finely minced garlic
1 cube beef bouillon
salt and black pepper to taste
½ cup heavy cream
2 pounds new potatoes
2 pounds beef tenderloin medallions
½ teaspoon crushed dried thyme

Steps:

  • In a small bowl, soak dried mushrooms in hot water.
  • Heat butter and 2 tablespoons olive oil in a skillet over medium heat. Stir in the onion and garlic; cook until the onion is tender and transparent. Stir in beef bouillon cube, and pour in mushrooms with water. Season with salt and pepper. Mix in cream; simmer gently for 5 minutes. Set aside.
  • Place whole potatoes in a pan with water to cover; bring to a boil over high heat, and cook about 5 minutes. Drain water. When potatoes are cool enough to touch, cut them in half. Heat 2 tablespoons olive oil in a skillet over medium heat, and fry potatoes until golden. Season with salt and thyme. Set aside.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Season beef medallions with salt and pepper. Heat 2 tablespoons olive oil in a wok or large skillet over high heat. Place medallions in hot oil, and brown on both sides. Remove from heat, and place medallions in the center of a roasting dish.
  • Cover medallions with porcini sauce. Arrange potatoes around medallions. Cover dish with aluminum foil. Roast for 15 minutes.

3/4 cup (1 1/2 sticks) butter, room temperature
3 tablespoons chopped fresh chives
1 1/2 tablespoons chopped fresh tarragon
1 small garlic clove, pressed
1 (1/2-ounce) package dried porcini mushrooms*
6 1-inch-thick filet mignon steaks
*Available in the produce section of many supermarkets and at specialty foods stores and Italian markets.

Steps:

  • Mix first 4 ingredients in small bowl for herb butter. Season butter to taste with salt and pepper. Process dried porcini mushrooms in spice grinder to fine powder. Transfer powder to plate. Sprinkle steaks with salt and pepper. Press steaks into porcini powder to coat both sides well.
  • Melt 2 tablespoons herb butter in heavy large nonstick skillet over medium heat. Add steaks to skillet and cook to desired doneness, about 6 minutes per side for medium-rare. Transfer steaks to plates. Spoon rounded tablespoon of herb butter atop each steak and serve.

6 morita chiles, seeds removed
1 pound plum tomatoes

Steps:

  • Soak chiles in a bowl of very hot water until softened, 20-25 minutes. Drain and transfer to a blender.
  • Meanwhile, cook tomatoes, onion, and garlic in a dry large skillet, preferably cast iron, over medium-high, turning often, until softened and charred in spots, 5-8 minutes. Set onion and garlic aside; transfer tomatoes to blender.
  • Once cool enough to handle, peel onion and garlic and place in blender along with oil, vinegar, and sugar. Blend until smooth. Season with salt.
  • Do ahead: Salsa can be made 5 days ahead. Cover and chill.
