FRESH RASPBERRY GRATINS

8 extra-large egg yolks
2/3 cup superfine or caster sugar
1 cup sweet Marsala wine
1/4 teaspoon pure vanilla extract
6 half-pints fresh raspberries
Granulated sugar

Steps:

  • Preheat the broiler for at least 15 minutes, with the rack about 5 inches away from the heat.
  • To make the sabayon, whisk together the egg yolks and sugar in a heat-proof bowl set over a pan of simmering (not boiling) water until thick and creamy, about 4 to 5 minutes. Whisk almost constantly, scraping the egg mixture from the bottom of the bowl. Slowly whisk in the Marsala wine and continue whisking over the simmering water for about 5 more minutes, until the mixture is thick and smooth, like a soft whipped cream. It should register about 150 degrees F on an instant-read thermometer. Whisk in the vanilla, remove from the heat, and set aside.
  • Place one snug layer of raspberries in 6 (6 to 7-inch) shallow gratin dishes. (Each of my dishes holds about one half-pint of raspberries.) Spoon enough sabayon over the raspberries to cover them. Sprinkle each one lightly with granulated sugar. Arrange the dishes on 2 sheet pans and place themone pan at a timeunder the broiler for 2 to 3 minutes, or until the tops of the gratins are lightly browned. Watch them carefully; they burn really quickly! Serve warm.

3 very ripe white nectarines, halved, pitted and cut into eighths
1/2 pint fresh raspberries
2 tablespoons sugar
2 pints vanilla ice cream
1 bottle chilled Champagne, Prosecco, or sparkling wine
1/4 cup Chambord
Mint sprigs, for garnish

Steps:

  • Combine nectarine slices, raspberries and sugar in a small bowl and mash with a fork.
  • Add scoops of ice cream to 4 large glasses and divide most of the nectarine and raspberry puree among the glasses. Top each with a few more scoops of ice cream then the remaining puree. Fill the glasses to the top with the prosecco and drizzle each with some of the Chambord. Garnish with mint sprigs.

A cobbler is a traditional baked dish of sweetened fruit with a biscuit-dough topping. It's best to bake the fruit untopped for a half-hour or more before adding the raw disks of dough - some say they look like cobblestones - and baking them for another 15 minutes. It is the ideal home dessert, all bubbly fruit and golden crisp. This particular biscuit dough is studded with pistachios and candied ginger. Let it cool a bit before serving, with whipped cream, crème fraîche or ice cream.

3 cups/385 grams all-purpose flour, plus more for dusting
1/4 cup/50 grams granulated sugar
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
4 tablespoons/55 grams cold unsalted butter (1/2 stick), cut into small cubes
1/4 cup/28 grams coarsely chopped pistachios
1 cup/170 grams candied ginger, diced small, about pea-size
2 eggs, beaten
1 cup/240 milliliters heavy cream or half-and-half, plus more for brushing tops
1 tablespoon granulated sugar, for sprinkling (optional)
10 cups/about 1 kilogram thickly sliced pitted nectarines (8 to 10 nectarines)
3/4 cup/165 grams light brown sugar
Zest and juice of 1 small lemon (about 2 to 3 tablespoons)
1/4 teaspoon grated nutmeg
1/4 cup/30 grams all-purpose flour
2 pints/490 grams raspberries

Steps:

  • Heat oven to 375 degrees. In large mixing bowl, combine flour, sugar, baking powder, baking soda and salt. Stir together, then add butter pieces and work into flour mixture with fingers or fork until mixture looks like moist sand. Stir in pistachios and candied ginger.
  • Combine eggs and cream and pour over flour mixture, stirring briefly until dough comes together. Turn dough out onto a work surface lightly dusted with flour. Knead dough for a minute or so, then wrap and refrigerate.
  • Make filling: Add nectarine slices, brown sugar, lemon zest and juice and nutmeg to a large mixing bowl. Toss with your hands, to ensure seasoning is distributed well. Sprinkle with flour and toss one more time. Fold in raspberries, taking care not to smash them.
  • Transfer fruit mixture to a 9-by-13-inch baking dish, cover with foil and bake for about 30 minutes, until fruit and juices are bubbling.
  • Meanwhile, roll out dough to a rough rectangle about 3/4-inch thick. Using a 3-inch biscuit cutter or a water glass whose rim has been dipped in flour, cut out as many biscuits as possible. Roll out scraps, and continue cutting out rounds until you have 12 biscuits. Place biscuits rounds on a plate, and refrigerate them for a few minutes.
  • Remove baked fruit from oven and arrange biscuit rounds evenly over the top. Brush each biscuit with about 1 teaspoon cream and sprinkle with a pinch of sugar.
  • Bake, uncovered, for 12 to 15 minutes, until biscuits are well browned. Let cool slightly before serving.

3 ½ pounds nectarines
1 (6 ounce) container fresh raspberries
2 tablespoons white sugar
¾ cup brown sugar
7 tablespoons unsalted butter, room temperature and cut into chunks
¾ cup all-purpose flour
½ cup rolled oats
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of water to a boil. Submerge nectarines for about 30 seconds. Remove with a slotted spoon and let cool until safe to handle. Peel, halve, remove pit, and slice. Combine sliced nectarines, raspberries, and white sugar in a bowl. Transfer to a baking dish.
  • Combine brown sugar, butter, flour, oats, cinnamon, nutmeg, and salt in a bowl. Rub between your fingers to create streusel. Sprinkle streusel evenly over fruit.

5 cups all-purpose flour
3 sticks (1 1/2 cups) cold unsalted butter, cut into 1/2-inch cubes but left in sticks
1/2 cup cold vegetable shortening (preferably trans-fat-free)
1 teaspoon salt
About 3/4 cup ice water
1 tablespoon milk
2 tablespoons sugar
For filling
6 lb nectarines
3 cups raspberries (3/4 pound)
3 tablespoons fresh lemon juice
1/4 cup quick-cooking tapioca
1/4 cup cornstarch
1/4 teaspoon salt
1 1/2 cups sugar
Special Equipment
a pastry or bench scraper; an electric coffee/spice grinder; 2 (9-inch) glass or metal pie plates (5-cup capacity)

Steps:

  • Make pastry:
  • Blend together 2 1/2 cups flour, 1 1/2 sticks butter, 1/4 cup shortening, and 1/2 teaspoon salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) until mixture resembles coarse meal with some roughly pea-size butter lumps. Drizzle evenly with 5 tablespoons ice water and gently stir with a fork (or pulse) until incorporated.
  • Squeeze a small handful: If it doesn't hold together, add more ice water to dough, 1 tablespoon at a time, stirring (or pulsing) until just combined. (Do not overwork mixture, or pastry will be tough.)
  • Turn out dough onto a work surface and divide into 6 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather all of dough together with scraper and press into 2 balls, then flatten each into a 5-inch disk. Make 2 more disks in same manner with remaining 2 1/2 cups flour, 1 1/2 sticks butter, 1/4 cup shortening, and 1/2 teaspoon salt. Chill dough, each disk wrapped tightly in plastic wrap, until firm, at least 1 hour.
  • Prepare filling while dough chills:
  • Cut nectarines into 1/2-inch-wide wedges, then toss with raspberries and lemon juice in a large bowl.
  • Grind tapioca to a powder in grinder, then whisk together with cornstarch, salt, and sugar in a small bowl (do not toss with fruit until dough is rolled out).
  • Roll out pastry and prepare pies:
  • Put oven rack in lower third of oven and put a large sheet of foil on rack. Preheat oven to 425°F.
  • Roll out 2 disks of dough, 1 at a time (keep remaining disks chilled), on a lightly floured surface with a lightly floured rolling pin, into 13-inch rounds, then fit into pie plates (do not trim) and chill until ready to use.
  • Roll out remaining 2 disks (for top crusts) in same manner and set aside (keep flat).
  • Gently toss sugar mixture with fruit and divide between pie shells.
  • Cover pies with pastry rounds and trim edges with kitchen shears, leaving a 1/2-inch overhang. Press edges together, then crimp decoratively. Brush pastry tops with milk and sprinkle all over with sugar (2 tablespoons total). Cut several steam vents in top of each pie with a small sharp knife.
  • Bake pies on foil 20 minutes. Reduce oven temperature to 375°F and continue to bake, checking frequently and covering edge of each pie with a strip of foil or pie shield if crusts are browning too fast, until crusts are golden brown and filling is bubbling, about 40 minutes more.
  • Cool pies to room temperature on racks, at least 2 hours.

1/2 cup dark-brown sugar, packed

2 ripe mangoes, (about 1 1/2 pounds)
1 pint raspberries

Steps:

  • Preheat oven to 375 degrees. In the bowl of an electric mixer fitted with the paddle attachment, combine 1 cup flour, brown sugar, cinnamon, salt, and oats. Mix on low for 30 seconds, add butter, and mix until clumps form, 4 to 5 minutes. Transfer to a bowl, cover, and refrigerate until ready to use.
  • Peel and pit nectarines, and cut into 1-inch chunks; place in a large bowl. Halve mangoes lengthwise, angling the knife slightly to cut around the pit. Remove and discard pit and peel. Cut flesh into 1-inch chunks, and add to nectarines; add raspberries. Add remaining 1 1/2 tablespoons flour, granulated sugar, and lime juice; toss gently to combine.
  • Transfer fruit to a shallow 12-inch round gratin dish. Distribute topping evenly over fruit. Bake until topping is golden brown and juices bubble, about 50 minutes. Remove from oven, and let cool slightly. Serve warm with ice cream.
