Number Of Ingredients 8

1 small garlic clove
3 tablespoons cream Sherry
2 tablespoons white-wine vinegar
1 teaspoon Dijon mustard
1 tablespoon finely chopped shallot
1/4 teaspoon plus 1/8 teaspoon sugar
1/3 cup olive oil (not extra-virgin)
3/4 pound mixed seasonal baby greens (20 cups)

Steps:

  • Mince and mash garlic to a paste with 1/4 teaspoon salt. Cook Sherry, vinegar, mustard, shallot, garlic paste, and sugar in a small saucepan over medium-low heat, whisking, until heated through. Add oil in a slow stream, whisking until emulsified.
  • Toss greens with warm dressing. Serve immediately.

APPLE TART WITH TOSSED GREENS, CANDIED WALNUTS AND SHERRY VINAIGRETTE



Apple Tart with Tossed Greens, Candied Walnuts and Sherry Vinaigrette image

4 cups greens (such as romaine, radicchio, green leaf and red leaf lettuce)
1 puff pastry sheet
2 Granny Smith apples, cored and sliced as thin as possible, preferably on a mandoline
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup brown sugar
1 tablespoon apple juice or orange juice
1 egg, beaten, to brush on the puff pastry
1 cup candied walnuts
11/2 cups grape or cherry tomatoes cut in 1/2
Salt
Pepper
1/2 cup sherry vinegar
1 tablespoon diced red onion
2 teaspoons chopped chives
3/4 cup salad oil

Steps:

  • Clean the greens and dry them with paper towels and/or a salad spinner to remove excess moisture.
  • Preheat oven to 400 degrees F.
  • Lay the pastry on a parchment lined baking sheet, and cut into 6 (4-inch) circles, removing the excess dough. In a small bowl toss the apple slices with cinnamon, nutmeg, brown sugar and juice. Brush the puff pastry with the egg wash and arrange the apple slices daisy-petal style on top of each circle. Bake for 12 to 15 minutes, remove to a rack and let cool.
  • Place the vinegar, onion, chives, and oil in a container and shake to combine. Toss the greens, tomatoes and candied walnuts in the dressing to coat, and season with salt and pepper.
  • Arrange the seasoned greens on top of the puff pastry and serve immediately.

1/4 cup rice vinegar
1 1/2 teaspoons Dijon mustard
2 tablespoons honey
1/4 teaspoon salt, plus more for seasoning
Freshly ground black pepper
3/4 cup walnut oil
1 (10-ounce) package mixed salad greens
1 mango, seeded, peeled, diced
1 cup goat cheese (Chevre) crumbled
1/2 cup dried cranberries
Mint sprigs, for garnish

Steps:

  • In a blender combine vinegar, mustard, honey, the 1/4 teaspoon salt, and some fresh ground black pepper. Cover and blend for 30 seconds. With the blender running slowly, add oil in a thin, steady stream. (If necessary, stop blender and scrape down sides.) In a salad bowl, combine greens, mango, goat cheese, and cranberries. Add mint sprigs, to liking; drizzle with dressing. Toss gently to coat. Season, to taste, with salt and pepper.

7 ounces (210 g) mixed salad greens (8 cups, loosely packed), such as escarole, oak-leaf, and romaine, rinsed, patted dry, and torn into bite-size pieces

Steps:

  • 1. Place the vinegar, salt, pepper, mustard, and garlic in a medium-size bowl and whisk together until blended. Slowly add the olive oil, whisking constantly, until the dressing is emulsified.
  • 2. Add the greens and toss well until they are coated with the dressing. Season with pepper to taste and serve the salad immediately.

4 large handfuls salad greens-such as red leaf, spinach, arugula, frisée, or premixed mesclun
4 generous tablespoons chopped dried figs (we use Calmyrna and Black Mission figs, plumped in warm water and drained)
3 tablespoons chopped toasted walnuts (see Toasting Nuts, p. 99)
1/2 cup Sherry Vinaigrette
4 tablespoons crumbled Valdeon (Spanish blue cheese), or your favorite blue cheese
Sherry Vinaigrette
1 medium shallot, finely minced
2 tablespoons sherry wine vinegar
1 tablespoon fig preserves, or 1 tablespoon honey
2 teaspoons chopped capers
1 teaspoon Dijon mustard
1/2 cup olive oil
Salt and pepper
(makes 3/4 cup or 4 to 6 servings)

Steps:

  • Place the salad greens, figs, walnuts, and dressing in a bowl and toss. Divide among plates and crumble the blue cheese on top of each salad.
  • Sherry Vinaigrette
  • Whisk together the shallot, vinegar, preserves, capers, and mustard in a small bowl. Whisk in the olive oil until the dressing is emulsified. Taste for balance, and add a little more olive oil, if you like. Season with salt and pepper.

1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard
4 ripe figs, peeled and mashed
3 tablespoons olive oil

Steps:

  • Put shallot in a small bowl. Cover with vinegars and season with salt and pepper. Macerate for 5 minutes.
  • Stir in mustard and mashed figs and mix well. Whisk in olive oil.

1 clove garlic, halved
2 teaspoons crushed dried rosemary
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1/4 cup orange juice
1/4 cup grapeseed oil or other mild-flavored oil
FOR THE SALAD:
3 ounces chopped prosciutto (about 3/4 cup)
1 medium red onion, diced
1 large head Romaine lettuce, or 3 romaine hearts, trimmed and torn into bite-size pieces
2 (7-ounce) bags baby spinach

Steps:

  • To make the dressing, puree the dressing ingredients in a blender or food processor until smooth. To make the salad, sauté the prosciutto in a medium skillet over medium heat until its fat renders and some of the pieces get crisp at their edges. Add the onion and cook for a minute to soften slightly. Toss the romaine and spinach in a large salad bowl. Add the dressing, prosciutto, and onion toss. Serve immediately.From Homemade In A Hurry.
