EGGS FLORENTINE CASSEROLE

Steps:
- Melt the butter in a large skillet over medium-high heat. Add half of the spinach and cook until wilted, about 2 minutes. Add the remaining spinach, the nutmeg, 1 teaspoon salt and a few grinds of pepper. Cook until all of the spinach wilts, about 3 more minutes. Drain the spinach in a colander and let cool, then squeeze out the excess moisture. Chop the spinach.
- Butter a 9-by-13-inch baking dish. Whisk the eggs, milk, lemon zest, 1 teaspoon salt and a few grinds of pepper in a large bowl. Arrange half of the English muffin pieces in the prepared baking dish. Top with half each of the spinach, scallions and cheese. Top with the remaining English muffin pieces, spinach, scallions and cheese. Pour the egg mixture onto the casserole, then press down on the English muffins to submerge them. Cover with foil and refrigerate 3 hours or overnight.
- Remove the casserole from the refrigerator 30 minutes before baking. Preheat the oven to 375 degrees F. Bake the casserole, covered, until just set, about 25 minutes. Uncover and bake until the top is lightly browned, about 20 more minutes. Let cool 10 minutes before serving. Serve with creme fraiche.

- Melt butter in a large skillet over medium heat; cook and stir mushrooms and garlic until garlic is fragrant, about 1 minute. Add spinach to mushroom mixture and cook until spinach is wilted, 2 to 3 minutes.
- Stir eggs into mushroom-spinach mixture; season with salt and pepper. Cook, without stirring, until eggs start to firm; flip. Sprinkle cream cheese over egg mixture and cook until cream cheese starts to soften, about 5 minutes.

- In a large bowl, combine the hash browns and oil. Press into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 25-30 minutes or until edges are golden brown. , Combine the spinach and Swiss cheese; sprinkle over crust. Top with ham. In a large bowl, whisk the eggs, buttermilk and pesto. - Preheat oven to 375°F Coat a 9x13 pan with nonstick cooking spray.
- In a large bowl, whisk together eggs, spinach, onion, ham, salt, and black pepper. Gently fold in the tater tots (so as not to break them up too much).
- Pour half the egg mixture into prepared baking dish. Place half the american cheese on top. Pour remaining egg mixture over that. Sprinkle the bacon over the top. Bake for 30 minutes.
- Place remaining half of cheese slices on top and bake for 5 minutes more.

- Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain and transfer to a greased 13x9-in. baking dish., In same skillet, heat butter over medium-high heat. Add onion and mushrooms; cook and stir 3-5 minutes or until tender. Stir in spinach. Spoon vegetable mixture over sausage., In a large bowl, whisk eggs and milk until blended; pour egg mixture over vegetables. Sprinkle with cheeses and paprika. Bake, uncovered, 30-35 minutes or until the center is set and a thermometer inserted in center reads 165°. Let stand 10 minutes before serving.

BAKED BRIE, POTATOES, HAM AND EGGS
This would make a wonderful and different Brunch recipe or a special treat for Christmas morning. I found the recipe in a very old magazine in the Doctor's office and I didn't note the magazine. I think it was Canadian Living. I think this is the only recipe I have posted untried but I don't want to lose it. I am making it public just in case you would like to try it as well. I have since made this recipe and we all enjoyed it. It will be made many more times. Just a note of caution, watch so that the eggs don't get overcooked. I think my oven is a bit hot. Enjoy!

- Scrub potatoes; boil in salted water until tender but firm, approximtely 15 minutes. Drain the potatoes well and refrigerate until cold; cut into 1/4" cubes.
- In large non-stick skillet heat oil and butter on medium-high heat. Fry potatoes about 10 minutes, stirring often, until crisp and golden; cool. Stir in Brie, ham, parsley, green onion, and pepper.
- Transfer to greased, shallow 10 cup oval container and spread evenly. Make 8 wells in the potatoe mixture. Cover with foil (It can be refrigerated for up to 24 hours at this point).
- Heat oven to 400 degrees Fahrenheit; heat mixture until warm, about 15 minutes. Remove from oven; drop 1 egg into each well, sprinkle with paprika. Bake uncovered until egg whites are set and yolks are soft, 15 to 20 minutes.

- Put the spinach into a large colander and stand it in the sink. Pour over boiling water until all the leaves are wilted. Shake well to drain off all the water.
- Preheat the grill to medium. Line two small, shallow ovenproof dishes with the slices of ham. Don't worry if it flops over the edge. Spread the spinach evenly over the ham and season well with salt and pepper. Crack in the eggs and drizzle over the cream. Sprinkle evenly with the cheese and slide under the grill for 10-12 minutes, or until the cheese is golden and the eggs are cooked to your liking. Serve with ciabatta soldiers for dipping.
