CREAMY CHICKEN TOMATO TORTELLINI SOUP
This easy, one-pot, rich and comforting creamy chicken tomato tortellini soup is full of hearty goodness. Cheese tortellini and shredded chicken are coated in a tomato-cream soup full of herbs and fresh parmesan cheese!

Steps:
- In a dutch oven, warm up the olive oil on medium heat, then add diced onions. Saute for 3-5 minutes, or until onions are translucent and beginning to turn golden. Add garlic and basil, stir around frequently so they don't burn. Cook for one minute, then add tomatoes, chicken stock, bay leaf, and shredded chicken.
- Let soup come to a simmer, cooking for five minutes or so to heat chicken through.
- Add cheese tortellini and let cook for five minutes until cooked through.
- Take pot off the heat, add heavy cream and parmesan cheese, then stir well to melt cheese into the soup. Taste and season with salt and freshly cracked black pepper. Add parsley and extra parmesan to garnish.
- Serve immediately.

Reduce heat; simmer, uncovered, until thickened, 8-10 minutes. , Drain tortellini; toss with sauce. Sprinkle with additional cheese if desired.

- Place the bacon in a large skillet over medium high heat and cook until the bacon is cooked and crisp. Remove with a slotted spoon. Discard all but about 1 tablespoon of the bacon grease, and return the pan to the heat. Add the garlic and cook until fragrant, about 30 seconds, then stir in the chicken stock and the diced tomatoes. Season with the Italian seasoning. Cook until heated through, then reduce the heat to medium-low. Add the cream cheese. Continue to cook, stirring often, until the cream cheese is melted and the mixture has slightly thickened, about 10 minutes.
- When the sauce is thickened, add the cooked tortellini, the chicken, and the bacon. Stir to combine. Serve topped with parmesan cheese, if desired.
