Cod is pan-fried, covered with a savory potato crust, and baked in the oven. You can use any type of white fish fillet for this recipe, no need to buy high-quality fish, because the potato crust adds lots of flavor.

2 (4 ounce) cod fillets
salt to taste
1 tablespoon vegetable oil
4 potatoes, grated
2 shallots, grated
1 egg
1 tablespoon chopped fresh parsley
1 pinch ground nutmeg
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Season cod with salt on both sides. Heat oil in a large skillet and cook cod until lightly browned, 2 to 3 minutes per side.
  • Combine grated potatoes, shallots, and egg in a bowl. Season with parsley, nutmeg, and salt. Spread potato mixture on top side of each cod fillet and sprinkle with butter.
  • Bake in the preheated oven until potato crust is lightly browned and cod flakes easily with a fork, about 10 minutes.

2 lbs skinless cod fish fillets, making sure all bones are removed
2 ounces butter
2 ounces flour
1/2 liter milk
5 ounces grated cheese
4 cups mashed potatoes
4 tablespoons softened butter

Steps:

  • Place cod fillets in the bottom of a 8x8x2 buttered oven dish.Place dish on a cookie sheet pan because there will be sauce that escapes and runs down the outside of the casserole dish.
  • Make a cheese sauce by mixing 2 oz each of butter and flour, 1/2 liter of milk and 3 1/2 oz grated cheese cook till slightly thickened: pour over fish.
  • Top with mashed potatoes sprinkle grated cheese over them and dot with butter.
  • Bake in a hot oven (450 F) for 25-30 minutes, until the potatoes are golden brown.
  • Optional -- I just made this again and put in 2 sliced scallions into the cheese sauce after it was cooked{step #2}.Garnish with scallions.
  • Optional -- 1/2- 1 cup peeled and deviened Shrimp added unto the fish gives some added flavor as well!

Modified recipe from Quick From Scratch Fish & Shellfish, Food & Wine JANUARY 1997. You can totally "cheat" on this recipe and use instant mashed potatoes (buttery or garlic are nice, just omit the garlic if you're using garlic mashed potatoes.) The cooking times were perfect and the dish came together quickly.

2 lbs baking potatoes, peeled and cut into chunks or 4 baking potatoes
1 1/4 teaspoons salt
1/2 teaspoon fresh ground black pepper
4 tablespoons butter, at room temperature
1/2 cup milk
2 lbs cod fish fillets, cut to make 4 pieces
2 teaspoons olive oil
4 garlic cloves, minced
parmesan-romano cheese mix

Steps:

  • Heat the oven to 450°. Put the potatoes in a medium saucepan of salted water. Bring to a boil and continue boiling until tender, about 15 minutes.
  • Drain the potatoes and put them back into the saucepan along with 3/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Mash the potatoes over very low heat, gradually incorporating the butter and cream.
  • Rub the cod with the oil and sprinkle with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Put the cod in a large roasting pan, sprinkle the fillets with the garlic, and then spread with the mashed potatoes. Roast until the fish is nearly done, 8 to 10 minutes for 3/4-inch-thick fillets.
  • Heat the broiler. Sprinkle desired amount of Parmesan-Romano atop mashed potatoes. Broil the fish until the mashed potatoes have a golden brown crust, about 2 minutes.
  • Fish Alternatives: Use other relatively thick, white-fleshed fillets in place of the cod. Good choices include grouper, haddock, orange roughy, red snapper, and turbot.

1/2 cup finely chopped red onion
5 anchovy fillets, minced
3 large garlic cloves (2 minced, 1 halved)
4 7- to 8-ounce cod fillets or other white fish fillets (such as halibut; about 1 inch thick)
5 tablespoons olive oil, divided
4 1/2-inch-thick slices country white bread
1/2 cup fresh basil leaves

Steps:

  • Preheat oven to 475°F. Combine first 3 ingredients in large bowl. Add minced garlic and stir to blend. Season tomato mixture to taste with salt and pepper.
  • Arrange fish on rimmed baking sheet. Brush both sides with 2 tablespoons oil; sprinkle with salt and pepper. Roast until just opaque in center, about 8 minutes.
  • Meanwhile, heat remaining 3 tablespoons oil in heavy large skillet over medium-high heat. Add tomato mixture. Cook until tomatoes soften and sauce thickens, stirring occasionally, about 5 minutes; season with salt and pepper.
  • Toast bread; rub 1 side with cut side of halved garlic. Top with tomato sauce, basil leaves, fish, and more sauce.
