Once the lemon is frozen, get your grater, and shred the whole lemon (no need to peel it) and sprinkle it on top of your foods. DEL'S-STYLE FROZEN LEMONADE

2 lemons
1 1/2 cups sugar
1 1/2 cups fresh lemon juice (from about 9 lemons)
1/4 teaspoon kosher salt

Steps:

  • Peel the skin off of the lemons with a vegetable peeler, being careful not to get any of the bitter pith. Chop the peels into the size of large sesame seeds. You should have about 2 tablespoons.
  • In a medium saucepan over medium-high heat, bring 1 cup water, sugar and lemon peel to a boil until the sugar is dissolved and the liquid is clear. Remove from the heat, stir in 1/2 cup water, fresh lemon juice and salt; this will help bring the temperature of the liquid down. Chill completely in the refrigerator, 2 hours.
  • Freeze the mixture in an ice cream freezer according to manufacturer's directions.
  • Cook's Note: It is very important to the flavor that you freshly squeeze the lemon juice for this recipe; store-bought lemon juice often has an extremely metallic taste.

FROZEN LEMONADE

A cooling treat for hot summer days: Just freeze sweet and tangy lemonade into ice cubes, then blitz into a slushie.

14 to 16 lemons
1 1/2 cups sugar
Kosher salt

Steps:

  • Reserve 1 lemon for garnish. Remove wide strips of zest from 2 lemons with a vegetable peeler (do not remove the pith). Juice enough of the lemons to make 2 cups lemon juice.
  • Add the lemon zest strips, sugar and 1 1/2 cups water to a medium saucepan and bring to a boil, stirring until the sugar is dissolved. Turn off the heat and stir in 1/2 teaspoon salt. Discard the zest strips and let cool for 15 minutes.
  • Pour the simple syrup into a pitcher and stir in the lemon juice and 2 cups cold water. Divide the mixture among three 12-compartment ice cube trays and freeze until solid, 8 hours and up to overnight. (The ice cubes will not be as solid as ice.)
  • Add the lemonade cubes and 1/2 cup cold water to a blender and blend, stopping the blender and stirring as needed, until the mixture is smooth and pourable. Pour the lemonade slushie into four 8-ounce glasses. Slice 4 thin slices from the reserved lemon and garnish each glass with a lemon slice.

An excellent dessert to have in your freezer for unexpected company. Light and refreshing. I've tweaked this recipe since I originally submitted it by (1) using more crumbs for the bottom and (2) adding lemon zest.

3/4 cup graham wafer crumbs
1/4 cup margarine or 1/4 cup butter
3/4 cup white sugar
2 eggs
1/3 cup lemon juice (juice from fresh lemons is best)
1 1/4 cups whipping cream

Steps:

  • Lightly grease an 8" pan.
  • Melt butter and add graham wafer crumbs.
  • Mix and press most of the crumbs in the bottom of the pan reserving a couple of tablespoons for later.
  • Combine in a sauce pan a 1/2 cup sugar, 2 egg yolks and lemon juice.
  • Cook over medium heat stirring constantly until thickened. Add a tablespoon of lemon zest (optional but great).
  • Cool.
  • Beat 2 egg whites to form stiff peaks.
  • Gradually add 1/4 cup sugar and beat until stiff.
  • Fold meringue into cooled custard together with 1 1/4 cups of whipping cream whipped.
  • Turn into prepared pan.
  • Sprinkle reserved crumbs and freeze until firm.
  • Serve frozen.
  • Keeps well in freezer.

1/4 cup sugar
1/4 cup butter, melted
3 large egg yolks
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
1/2 cup lemon juice
Yellow food coloring
Heavy cream, whipped or frozen whipped topping

Steps:

  • HEAT oven to 325 degrees F. Combine graham cracker crumbs, sugar and butter in small bowl; press firmly onto bottom of ungreased 8 or 9-inch square pan. BEAT egg yolks, sweetened condensed milk, lemon juice and food coloring in small bowl. Pour into prepared pan. BAKE 30 minutes. Cool. Top with whipped cream. FREEZE 4 hours or until firm. Let stand 10 minutes before serving. Garnish as desired. Dessert can be chilled instead of frozen.

I saw the enclosed hint in an e-mail from a friend and decided to give it a try and see for myself if it worked. I am happy to say it did work and I have been enjoying the "frozen lemon."

Steps:

  • Simple..place a washed lemon in the freezer section of your refrigerator. I placed it in a small zip lock baggie.
  • Once the lemon is frozen, get your grated, and shred the lemon (no need to peel it) and sprinkle it on top of your foods.
  • Sprinkle it on your vegetable salad, soup, noodles, rice, fish and chicken dishes, vegetables, and instant cup of noodles. Put remaining lemon back into freezer to use another day.

FROZEN LEMON MOUSSE



Frozen Lemon Mousse image

This mousse can be made up to 3 days before serving. Ring molds may be purchased at specialty cookware stores. You can also use an 8-inch springform pan.

Number Of Ingredients 11

8 to 10 lemons
2 cups sugar
8 large egg yolks, plus 2 whole eggs
1 cup unsalted butter (2 sticks), cut into pieces
1 1/2 cups plus 2 tablespoons heavy cream, chilled
Candied Lemon Zest (recipe follows)
1 8-ounce container crème fraîche
4 lemons, well scrubbed
2 cups sugar
1 cup cool water
(garnishes 8 servings)

Steps:

  • Prepare an ice-water bath in a large bowl. Juice 1 lemon; reserve the juice. Juice the additional lemons to yield 1 cup. Make the lemon curd: Place 1 cup lemon juice and the sugar, egg yolks, whole eggs, and butter in saucepan; whisk to combine. Cook over medium heat, whisking constantly, until it begins to boil, about 10 minutes.
  • Strain the curd through a fine-mesh strainer into a bowl set in the ice bath. Stir periodically until cool; remove from the ice bath. Place plastic wrap directly on the surface of the curd; refrigerate at least 1 hour and up to 3 days.
  • Place 1 1/2 cups chilled heavy cream in large mixing bowl; whisk until soft peaks form. Reserve 1/2 cup lemon curd for sauce; add the remaining lemon curd to the whipped cream. Fold gently until well combined.
  • Place 8 ring molds, 3 inches in diameter and 2 1/4 inches high, on a baking sheet lined with parchment. Divide the mousse among the molds, filling each with about 3/4 cup. Place in the freezer on the sheet until firm, at least 4 hours.
  • Drain the candied lemon zest; reserve the syrup. Whisk 1/3 cup syrup, reserved 1/2 cup lemon curd, and juice of 1 lemon in a small bowl. Place the frozen mousse on plates; let warm 4 to 5 minutes before removing the molds. Meanwhile, whisk the crème fraîche and remaining 2 tablespoons cream in a medium bowl until soft peaks form. Remove the molds, spoon lemon sauce around the mousse; top with crème fraîche. Garnish with candied zest; serve.
  • Remove the zest from the lemons with a vegetable peeler, keeping the pieces long. Remove the white pith using a paring knife. Cut into a fine julienne using a very sharp knife. Place the julienned zest in a small bowl; cover with boiling water. Let stand 30 minutes; drain.
  • Bring the sugar and the cool water to a boil in a small saucepan over medium-high heat. When the sugar is completely dissolved, add the julienned zest, reduce heat to medium low, and cook 10 minutes. Remove from heat, cover, and let stand overnight. Store the zest in the syrup in an airtight container in the refrigerator for up to 2 weeks.
