Steps:
- Spray electric waffle iron with cooking spray. Heat iron to medium-high heat.
- Whisk 1 egg with onion powder and pepper in large bowl until blended. Add potatoes and 1/2 cup cheese; mix well.
- Spoon about 1 cup potato mixture onto center of each waffle grid section. Close lid quickly. Cook 10 to 12 min. or until waffle is lightly browned. (Do not open until waffle is done.) When done, lift waffle off grid with fork. Repeat with remaining potato mixture if necessary.
- Meanwhile, whisk milk and remaining eggs until blended. Add to medium skillet sprayed with cooking spray; cook on medium heat 5 to 7 min. or until eggs are set, stirring occasionally.
- Serve waffles topped with bacon, eggs, remaining cheese and chives.

- In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons. In the same skillet, saute onion and green pepper in drippings until tender; remove with a slotted spoon. , In a large bowl, whisk eggs, milk and seasonings. Stir in the hash browns, cheese, onion mixture and bacon., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-45 minutes or until a knife inserted in the center comes out clean.

- Mix hash browns, eggs, milk, flour, onion, sriracha sauce, garlic, baking powder, salt, and pepper together in a bowl to make batter.

- Heat waffle iron on the medium-high setting. Spray each side generously with non-stick cooking spray or brush with melted butter.
- In a medium-sized mixing bowl, whisk together eggs and milk. Stir in potatoes, cheese, chives and season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Depending on the size of your waffle iron, scoop a layer of the potato mixture onto the surface (for the round waffle maker, I used about 1 cup of the mixture). Spread to about 1/2 inch from the edges and close the waffle iron. Cook for about 5 minutes, checking every few minutes to avoid burning. When the entire waffle is golden brown in color, carefully remove from the waffle iron with a fork or tongs.
- *Tip: Turn your oven to the "warm" function and place finished waffles on a baking sheet in the oven to keep warm which the rest are cooking.
