CLASSIC FRENCH CASSOULET

This Classic French Cassoulet is a classic and simple yet delicious casserole with beans, pork sausage and chicken breast. Served with a french baguette and salad? Oui Oui!

4 links Italian pork sausages (or similar, whole or cut into smaller pieces)
1 pound chicken breasts (boneless and skinless, cut into bite size pieces)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
1 large onion (chopped)
1 medium carrot (chopped)
1 leek (chopped (white and green part))
½ cup white wine (such as a sauvignon blanc or pinot grigio)
2 small shallots (chopped)
4 cloves garlic (minced)
19 ounce cannellini beans ((1 can), drained)
1 teaspoon rosemary (dried)
½ teaspoon herbes de provence
1½ cup water
2 tablespoon parsley (for garnish)

Steps:

  • Preheat your oven to 325 F degrees.
  • Brown the sausage: In a dutch oven or heavy bottomed sauce pan, brown the sausages whole. I prefer a smaller bite so I dice them up in pieces. Remove them once browned.
  • Cook the chicken: Add the chicken breasts to the Dutch oven next, season with salt and pepper, and cook until the chicken is no longer pink and cooked through. Remove and set aside.
  • Saute veggies: Add onion, carrot, and leeks to the pot in the residual sausage fat and cook until tender, about 4 minutes. Then add the shallots and garlic and saute for an additional minute.
  • Deglaze pot: Add the white wine to deglaze the pot, scraping any brown bits from the bottom.
  • Finish the cassoulet: Return the protein to the pot and add beans, herbs, water and seasoning. Bring to a simmer then cover and transfer to the oven to bake for 2 hours.
  • Garnish with parsley and serve.

6 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
8 ounces cremini mushrooms, halved
3 large shallots, diced
2 stalks celery, diced
3 cloves garlic, minced
3 tablespoons all-purpose flour
1/2 cup dry white wine
2 cups chicken stock
1 pound baby gold potatoes, halved
4 sprigs fresh thyme
1 sprig fresh rosemary
1 bay leaf
1/4 cup heavy cream

Steps:

  • Preheat oven to 325 degrees F. Season chicken thighs with 1 teaspoon salt and 1/2 teaspoon pepper. Melt butter in a large skillet over medium heat. Working in batches, add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside. Add mushrooms, shallots and celery, and cook, stirring occasionally, until mushrooms are tender and browned, about 5-7 minutes; season with salt and pepper, to taste. Stir in garlic until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Stir in wine, scraping any browned bits from the bottom of the skillet. Stir in chicken stock, potatoes, thyme, rosemary and bay leaf. Return chicken to the skillet. Place into oven and bake until potatoes are tender and chicken has completely cooked through, reaching an internal temperature of 175 degrees F, about 40-45 minutes. Stir in heavy cream; season with salt and pepper, to taste. Serve immediately.

8 medium onions, sliced
5 tablespoons butter, divided
2 tablespoons all-purpose flour
Dash pepper
3/4 cup beef broth
1/4 cup sherry or additional beef broth
1-1/2 cups salad croutons
1/2 cup shredded Swiss cheese
3 tablespoons grated Parmesan cheese

Steps:

  • In a large cast-iron or other ovenproof skillet, saute onions in 3 tablespoons butter until tender. Stir in flour and pepper until blended; gradually add broth and sherry. Bring to a boil; cook and stir until thickened, about 2 minutes., In a microwave, melt remaining butter. Add croutons; toss to coat. Spoon over onion mixture. Sprinkle with cheeses. , Broil 3-4 in. from the heat until cheese is melted, 1-2 minutes.

1 cup brown sugar
½ cup butter
1 (8 ounce) loaf crusty French bread, cut into bite-size pieces, or as needed
2 cups milk
6 eggs
2 teaspoons vanilla extract
1 pinch ground cinnamon, or to taste
1 tablespoon brown sugar, or as needed

Steps:

  • Grease a 9x12-inch baking dish.
  • Stir 1 cup brown sugar and butter together in a saucepan over medium-low heat until butter melts and sugar dissolves into butter, 2 to 4 minutes. Pour into prepared baking dish and spread a 1 1/2- to 2-inch layer of bread pieces over the top.
  • Beat milk, eggs, and vanilla extract together in a bowl; pour milk mixture over bread into the baking dish and move bread as necessary to ensure all bread is absorbing liquid. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 450 degrees F (230 degrees C). Remove and discard plastic wrap from baking dish and sprinkle remaining brown sugar over the top of the bread mixture.
  • Bake in the preheated oven until browned and bubbling, about 30 minutes.

1 lb kielbasa, cooked,halved lengthwise and cut into 1/4 inch slices
1 (16 ounce) can kidney beans, drained and rinsed
1 (15 1/2 ounce) can great northern beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can tomato sauce
3 medium carrots, thinly sliced
2 small onions, separated into rings
1/2 cup red wine or 1/2 cup beef broth
2 tablespoons brown sugar
2 cloves garlic, minced
1 1/2 teaspoons dried thyme

Steps:

  • Combine all ingredients in a bowl; transfer to an ungreased 3-quart baking dish.
  • Cover and bake at 375ºF for 60 to 70 minutes or until carrots are tender.
