Fresh strawberries, a touch of lime, real whipped cream and a pastry crust. What's not to like?

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
3/4 cup boiling water
1 package (4-serving size) strawberry-flavored gelatin
1 teaspoon grated lime peel
1/2 cup lime juice (4 limes)
1 1/2 cups whipping cream
3/4 cup powdered sugar
1 pint (2 cups) strawberries, slightly crushed
Whipped cream, if desired
Strawberry halves, if desired

Steps:

  • In medium bowl, mix flour and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 475°F. With floured rolling pin, roll pastry into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired. Prick bottom and side of pastry thoroughly with fork. Bake 8 to 10 minutes or until light brown; cool on cooling rack.
  • In large bowl, pour boiling water over gelatin; stir until gelatin is dissolved. Stir in lime peel and lime juice. Refrigerate about 1 hour or until very thick but not set.
  • Beat gelatin mixture with electric mixer on high speed about 4 minutes, scraping bowl occasionally, until thick and fluffy; set aside. In chilled large bowl, beat whipping cream and powdered sugar on high speed until stiff. Gently stir whipped cream and crushed strawberries into gelatin mixture. Pour into crust. Refrigerate about 3 hours or until set. Garnish with whipped cream and strawberry halves. Store in refrigerator.

A light and luscious ending to a meal. Adopted from the Recipezaar account Feb 2005. This pie works well using all light products, such as sugar free strawberry Jello, fat free, sugar free vanilla Jello pudding, ultra low fat cool whip and skim milk. I used a graham crust when I tried it, but a standard pastry crust or shortbread crust would be good too. The packet size in the recipe is the standard 4 serving size package.

1 packet strawberry gelatin
3/4 cup milk, cold
3/4 cup boiling water
3 1/2 cups Cool Whip Topping
1/2 cup ice cube
1 pint strawberry, hulled & sliced
1 packet instant vanilla pudding
1 9-inch baked pie crust, cooled

Steps:

  • Completely dissolve gelatin in boiling water.
  • Add ice cubes and stir until melted.
  • Prepare pie filling mix with 3/4 cup milk as directed on package for about 2 minutes.
  • Blend in gelatin.
  • Chill, if necessary, until thickened.
  • Fold in 2 cups of the whipped topping and strawberries.
  • Pour into crust.
  • Chill in refrigerator 3 hours before serving.
  • Garnish with remaining whipped topping and additional strawberries, if desired.

My grandmother made this pie every year for Thanksgiving. She would make it with a homemade pie crust, but I love it with a graham cracker crust. Either way is great! It's good with any type of pie crust. It's perfect for a very sweet and light dessert. It just melts in your mouth! Enjoy! It does not freeze well.

1 (3 ounce) package strawberry-flavored Jell-O® mix
¼ cup white sugar
½ cup boiling water
1 (8 ounce) container frozen whipped topping, thawed
2 ½ cups sliced fresh strawberries
1 (9 inch) prepared graham cracker crust
4 fresh strawberries, halved

Steps:

  • Mix strawberry-flavored gelatin mix, sugar, and boiling water together in a large bowl, stirring until gelatin and sugar have dissolved.
  • Refrigerate gelatin mixture until it begins to turn thick and syrupy, about 10 minutes.
  • Gently fold frozen whipped topping into the gelatin mixture until thoroughly combined.
  • Fold the 2 1/2 cups of sliced strawberries into the whipped topping mixture.
  • Spoon filling into the graham cracker crust and decorate edge of filling with 8 strawberry halves.
  • Refrigerate at least 2 hours before serving.

2/3 cup boiling water
3 ounces jello strawberry gelatin
ice cube
1/2 cup cold water
8 ounces Cool Whip Lite, thawed
1 cup chopped strawberry
6 ounces ready-to-use graham cracker crumb crust
1 cup sliced fresh strawberries (or chopped)

Steps:

  • Stir boiling water into dry gelatin mix in large bowl at least 2 minutes until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
  • Add whipped topping; stir with wire whisk until well-blended. Stir in chopped strawberries. Refrigerate 20-30 minutes or until mixture is very thick and will mound. Spoon into crust.
  • Refrigerate 6 hours or overnight until firm. Top with sliced strawberries. (Update: the last few times I've made this, I have coarsely chopped the strawberries for the topping. I think it is better that way instead of the big slices of strawberry.) Store in refrigerator.

4 large egg whites
1 1/4 cups sugar
1 1/2 cups (3 sticks) unsalted butter, room temperature, cut into tablespoons
1 teaspoon pure vanilla extract
1 1/2 cups (12 ounces) strawberry jam, pureed in a food processor

Steps:

  • In the heatproof bowl of an electric mixer set over a saucepan of simmering water, combine egg whites and sugar. Cook, whisking constantly, until sugar has dissolved and mixture is warm to the touch (about 160 degrees).
  • Attach the bowl to the mixer fitted with the whisk attachment. Beat the egg-white mixture on high speed until it holds stiff (but not dry) peaks. Continue beating until the mixture is fluffy and cooled, about 6 minutes.
  • Switch to the paddle attachment. With mixer on medium-low speed, add butter several tablespoons at a time, beating well after each addition. (If frosting appears to separate after all the butter has been added, beat on medium-high speed until smooth again, 3 to 5 minutes more.) Beat in vanilla. Beat on lowest speed to eliminate any air bubbles, about 2 minutes. Stir in strawberry jam with a rubber spatula until frosting is smooth.

1/4 teaspoon salt
1 teaspoon vanilla
1 cup sugar

3 egg yolks
1 tablespoon lemon juice
1 teaspoon grated lemon, rind of
1 pint fresh strawberries
1/2 cup whipping cream

Steps:

  • Combine egg whites, cream of tartar, and salt with 1/2 teaspoon of the vanilla in a large bowl.
  • Beat with an electric mixer until partially stiff.
  • Add sugar gradually, beating until stiff.
  • Spread meringue about 1 inch thick over a buttered 9 inch pie plate, building up a high fluffy border.
  • Bake in a preheated 275 degree oven for 1 hour or until it feels dry and firm.
  • Meringue shell will crack while it's baking.
  • Let cool in plate.
  • Cream 2 cups powdered sugar,butter, and egg yolks until light and fluffy, then beat in lemon juice and peel.
  • Spread over meringue shell.
  • Wash, drain, and hull strawberries,reserving a few for garnish. Arrange berries over over creamy layer,pressing down lightly.
  • Whip cream,remaining powdered sugar,unflavored gelatin, and remaining vanilla until stiff; spread over berries.
  • Chill in refrigerator for several hours or overnight.
  • Garnish with reserved berries and serve.

Steps:

  • Preheat oven to 325°F.

  • Bake in preheated oven 25 minutes. Remove from oven. Increase oven temperature to 350°F.
  • Place sliced strawberries over baked filling.
  • Beat egg whites with cream of tartar until foamy; gradually add sugar, beating until stiff peaks form, but not dry. Spread meringue on top of strawberries, sealing carefully to edge of crust.
  • Return to oven and bake for 10 minutes or until meringue is golden brown. Cool. Chill before serving, if desired,.
