MARMITE & GOOEY CHEESE CRUMPET SOLDIERS
Add a twist to a breakfast or teatime classic - toast, mozzarella and strong cheddar-topped crumpets and cut into strips, then dunk into a runny egg

Steps:
- Bring a small pan of water to a simmer, add the egg and cook for 5 mins. Meanwhile, combine the cheddar and mozzarella in a bowl. Toast the crumpets, spread with butter and yeast extract. Top the crumpets with the cheese mix and grill for 30 seconds or until golden and bubbling. Cut into soldiers and serve with the egg.

EGGY CHEESE CRUMPETS

- Heat the grill. Beat the eggs and milk together in a wide dish. Submerge the crumpets in the egg mixture, turning them once, then set aside for a few minutes.
- Arrange the tomatoes cut-side up on a baking tray and grill for a few minutes, then cover the tray with foil to keep the tomatoes warm.
- Heat the oil in a frying pan and cook the crumpets for a few minutes on each side until the egg has set - you may have to do this in batches. Transfer them to a baking tray as you go. Once all the crumpets are cooked, top with the cheese and grill for 1-2 mins until the cheese is bubbling and golden. Serve with the tomatoes and avocado slices.

MARMITE AND CHEESE BREAD
Adapted from the Fleischmann's site. Here's what they say, "This bread combines two of Britain's most characteristic ingredients, Marmite and sharp cheddar Cheese. Hearty in flavor, this bread is best served toasted accompanying a soup, or in making a sandwich on toast". There is about 90 minutes rising time.

Steps:
- In large bowl combine 1/2 cup fall pupose flour, 1/2 cup whole wheat flour salt, and yeast. Heat water until very warm (120º - 130º F) and dissolve Marmite and butter in it. Stir into the dry ingredients.
- Add enough of the remaining flour to make a soft dough. Knead on lightly floured surface until soft and elastic, about 8-10 minutes. Knead in the cheese.
- Cover; let rest on floured surface about 10 minutes.
- Punch down dough and roll into a 12 X 7 inch rectangle. Starting from the shorter end, roll up tightly like a jellyroll. Pinch the seams and ends to seal them. Place seam side down in an 8- X 4-inch loaf pan. Cover; let rise in a warm draft-free place until doubled in size, about 90 minutes.
- Brush the top lightly with milk. Bake on the middle shelf of a preheated 375º oven for 30-40 minutes or until the bread sounds hollow when tapped on the bottom crust. If the crust is browning too quickly, cover with aluminum foil until finished cooking.
- Remove from pan; let cool on wire rack. Enjoy!

- Heat the butter in a pan over a medium heat until melted, then add the flour and stir to make a paste. Add the milk, a splash at a time, continually stirring until all incorporated. Simmer gently until you get a thick white sauce. Add the grated cheddar, 1 teaspoon of Marmite, a little salt and plenty of pepper. Stir until the cheese has melted, then remove from the heat. Preheat the oven to 220°C, fan 200°C, gas 7.
- Put half of the cheese sauce into the bottom of a loaf tin (approx. 18cm x 8cm base) lined with a strip of baking paper, then stack in the crumpets on their sides with a spoon of cheese sauce and a slice of mozzarella. They should fit snugly into the tin.
- Pour over the remaining few tablespoons of cheese sauce, then sprinkle with the grated mozzarella. Bake for 15-20 minutes until bubbling, golden and crisp. Spoon onto plates with lots of cheese sauce.
