This scalloped potatoes and ham dish is a crowd-pleaser with its creamy sauce, chunks of ham and potato slices. I always enjoyed it when Mother made it. I added the parsley and the thyme, and now my husband and five children request it. -Wendy Rhoades, Yacolt, Washington

6 tablespoons butter, divided
1/4 cup all-purpose flour
1 teaspoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 cups 2% milk
6 cups thinly sliced peeled potatoes
1-1/2 cups chopped fully cooked ham
1 small onion, grated

Steps:

  • Preheat oven to 375°. In a large saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, parsley, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes. , Combine potatoes, ham and onion; place half in a greased 2-1/2-qt. baking dish. Top with half of the sauce; repeat layers. , Cover and bake until potatoes are almost tender, 65-75 minutes. Dot with remaining 2 tablespoons butter. Bake, uncovered, until potatoes are tender, 15-20 minutes.

With a creamy flavorful sauce, chunks of ham, and sliced potatoes, this main dish has become a tried and true family favorite recipe.

Number Of Ingredients 10

6 tablespoons of butter, divided
1/4 cup flour
1 tsp dried parsley flakes
1 tsp salt
1/2 tsp dried thyme
1/4 tsp pepper
1-2 tsp minced onion
3 cups milk
6 cups thinly sliced potatoes (about 5 medium-large potatoes)
1.5 cups cooked ham, chopped

Steps:

  • Preheat your oven to 375 degrees.
  • In a saucepan, melt 4 tablespoons of butter. Stir in flour, parsley, salt, thyme, pepper, and minced onion until smooth. Gradually add milk and bring to a boil over medium heat. Whisk to keep smooth. Cook and stir for 2 minutes.
  • In a greased 2.5 quart casserole dish, layer potatoes and ham with sauce spooned over. Repeat layers (usually 3-4). Top with the remaining sauce.
  • Cover and bake for 65-75 minutes or until potatoes are almost tender. Dot with remaining butter and bake, uncovered, for 15-20 minutes longer or until potatoes are fully tender.

10 medium potatoes (about 3 pounds), peeled and thinly sliced
3 cups cubed fully cooked ham
2 large onions, thinly sliced
2 cups shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • In a greased 6-qt. slow cooker, layer half of the potatoes, ham, onions and cheese. Repeat layers. Pour soup over top. Sprinkle with paprika and pepper., Cover and cook on low for 8-10 hours or until potatoes are tender.

These scalloped potatoes were one of my favorite foods growing up, but then I went to culinary school and learned, according to classical methods, how it was "supposed" to be made--and that's how I've been making it ever since. But recently, for whatever reason, I went back and tried to recreate my mother's version and was reminded of why I loved hers in the first place.

Number Of Ingredients 6

2 tablespoons unsalted butter, at room temperature
3 large russet potatoes, or more to taste
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
¾ cup grated sharp white Cheddar cheese
3 ½ cups whole milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish with 2 tablespoons butter and set aside.
  • Peel potatoes and cut at a 45-degree angle into 1/4-inch thick round slices.
  • Arrange 1/3 of the potato slices in an even layer in the bottom of the prepared dish. Season the layer very generously with salt, and sparingly with the freshly ground black pepper, and cayenne, if using. Top evenly with 1/3 of the Cheddar cheese. Repeat this process two more times for a total of three layers of potatoes, except for the last third of the cheese. Slowly and carefully pour in the milk, without upsetting the layers. The milk should almost, but not quite, cover the potatoes.
  • Top with remaining Cheddar cheese and place the casserole dish on a sheet pan to catch any drips.
  • Bake in the center of the preheated oven until potatoes are tender and the top is well browned and bubbling, about 1 hour and 15 minutes. Let rest for 10 minutes before serving.

This makes a great main dish or side dish. The family cheers when they hear it's scalloped potato night. I will warn you that they take some time to bake, but they are well worth the effort! It reheats fabulously too. You can omit the ham if desired.

1/2 c chopped onion
1/2 c unsalted butter
1/2 c all purpose flour
1 1/2 tsp salt
1/4 tsp ground black pepper
5 c whole milk
1 thick slice ham (1 pound or so), chopped
5 lb russet potatoes, peeled and thinly sliced

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. To make sauce, cook onion in butter till tender but not brown. Stir in flour, salt and pepper. Add milk slowly. Cook and stir constantly till thickened and bubbly. Cook and stir 1 to 2 minutes more. Remove from heat.
  • 3. Place half of the sliced potatoes in a greased 2-quart casserole. Cover with half of the sauce; sprinkle half of the ham evenly over the potatoes and sauce. Repeat layers. Bake, covered, in a 375 degree oven for 1 hour and 15 minutes.
  • 4. Uncover; bake about 45 minutes more or until potatoes are done and slightly browned on top. Check with a fork to see if they are tender. Makes 8 to 12 servings.

  • 6. CHEESY SCALLOPED POTATOES: Prepare scalloped potatoes as above, except reduce salt to 1 teaspoon and stir in 2 cups shredded sharp cheddar cheese into sauce after it is cooked, till melted.

This is the way my mother always made her scalloped potatoes. The measurements are taken from other recipes because she always just winged it, but the method is the same. The key is to heat the milk first!

½ onion, thinly sliced
9 tablespoons all-purpose flour, divided
6 tablespoons butter, diced and divided
salt and ground black pepper to taste
3 cups whole milk, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.
  • Heat milk in a saucepan until warm. Pour enough warm milk over the mixture in the baking dish so the top of the liquid is level with the final layer of potatoes.
  • Bake in preheated oven until potatoes are tender, 45 to 60 minutes.

Steps:
