CRISPY BAKED BUFFALO WINGS RECIPE
Steps:
- Preheat the oven to 450 degrees F. Set a baking rack on a large rimmed baking sheet. Spray the rack with nonstick cooking spray.
- Use paper towels to thoroughly squeeze and dry every single wing. The drier the wings are, the crispier they will get.
- In a large bowl, mix the baking powder, garlic powder, salt, and pepper. Add the wings to the bowl and toss to coat. Lay the wings on the baking rack, making sure they do not touch.
- Bake for 30 minutes. Then use tongs to flip the wings. Bake another 15-20 until very brown and crispy.
- Meanwhile, set a small saucepot over medium heat. Add the cayenne pepper sauce, butter, and honey. Once the butter has fully melted, whisk into a smooth sauce, then turn off the heat.
- Once the chicken wings come out of the oven, move them to a large bowl and pour the hot wing sauce over the top. Toss to coat. Serve warm!

- Preheat the oven to 120C/250F and place a rack on a large baking tray.
- Cut each wing at the joint so you have a mini wing and a drumette. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating. Discard any remaining coating once tossed together.
- Place in a single layer on the rack, skin side up. It's fine for them to be touching. Place on the lower shelf of the oven for 30 minutes.
- After 30 minutes, turn the oven up to 220C/425F and rotate the tray for even cooking. Cook for a further 45-50 minutes until the wings are lightly golden and crispy. Take out of the oven to cool slightly.
- To make the Buffalo sauce, place the hot sauce, butter, vinegar, Worcestershire sauce, garlic, honey and salt in a pan. Place over a medium-high heat and bring to a gentle simmer whilst stirring. Turn off the heat.
- Mix the blue cheese sauce ingredients together in a bowl until smooth.
- Toss the Buffalo sauce with the wings and serve with the blue cheese sauce, carrots and celery.

- Preheat the Oven - Adjust the oven rack to the middle position. Preheat to 450°F (232°C).
- Prepare the Baking Sheet - Line a large baking sheet with foil. Add vegetable oil to a folded piece of paper towel, then grease both sides of a wire rack. Alternatively, grease with cooking spray. Set the rack inside of a rimmed foil-lined baking sheet.
- Dry the Meat - Line a separate baking sheet or plate with paper towels. Place the chicken wings and drumettes on top, then thoroughly pat them dry with more paper towels.
- Season the Pieces - In a large bowl, whisk together baking powder, salt, and black pepper. Add the chicken and mix to lightly and evenly coat the surface.
- Bake the Chicken - Evenly space the chicken on the wire rack. Bake for 20 minutes. Flip and bake for 15 minutes. Flip again and bake until skin is golden brown and crisp, and the internal temperature reaches 165ºF (74ºC), about 10 to 15 minutes. Remove from the oven and set aside.
- Simmer - In a medium skillet or saucepan, add hot sauce, Worcestershire sauce, salt, and pepper. Whisk to combine. Bring to a simmer over medium heat until hot, and it begins to bubble, about 3 to 5 minutes.
- Thicken the Consistency - In a small bowl, combine cornstarch and water. Immediately add to the sauce and whisk to combine. Constantly whisk and cook until thickened, 15 to 30 seconds. Turn off heat and whisk in butter until melted and fully incorporated.
- Serve - Immediately transfer the hot chicken wings to a large bowl and toss with enough buffalo sauce to coat-transfer to a serving platter.
- Make the Sauce - In a small bowl, whisk together yogurt and 2 tablespoons of water. Add up to 1 tablespoon more to thin the sauce if desired. Stir in the chives, Dijon mustard, garlic powder, onion powder, salt, and black pepper.

- If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight. Alternatively, pat them dry with paper towels.
- Preheat the oven to 250°F/120°C (all oven types). Put one oven shelf in the lower quarter of the oven and one in the top quarter.
- Line the tray with foil. Spray the rack on the baking tray with oil.
- Place the wings in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well (or shake in ziplock bag) to coat wings evenly.
- Place the wings skin side up on the rack (ok if snug, they shrink). Bake on the lower shelf in the oven for 30 minutes.
- Then move the tray up to the higher shelf and turn the oven up to 425°F / 220°C. Bake for a further 40 to 50 minutes, rotating the tray halfway through. The wings do not need to be turned over.
- The wings are ready when they are dark golden brown and the skin is very crispy.
- Toss with Hot Sauce and serve immediately with Blue Cheese Dip and celery sticks. They can be served plain, with a dipping sauce or tossed in sauce. Wings also reheat crispy!
- Whisk together the Sauce ingredients. Keep warm or reheat just prior to using.
- Mash the blue cheese with sour cream until smooth (or to your taste).
- Add remaining ingredients and mix well until combined, using milk to get it to the consistency you want.
- Store in the fridge until required. Remove from the fridge 15 minutes before serving.

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.
