500 g courgettes, grated
1 onion, grated
1 garlic clove, diced
1 teaspoon ground paprika
2 eggs
2 tablespoons olive oil
75 g self raising flour
1/2 teaspoon baking powder
2 tomatoes, cored & roughly chopped

Steps:

  • Preheat the oven to 180°C/gas 4. Place the courgettes in a bowl with the onion & garlic & mix well.
  • In a small bowl, mix together the paprika, eggs and olive oil with a whisk. Season and stir in the flour and baking powder to make a smooth, thick batter. Mix the batter into the grated courgette mixture.
  • Heat a 20cm non stick ovenproof frying pan over a medium heat with a drizzle of olive oil. Add the courgette mixture; top with the chopped tomatoes and cook for 5-6 minutes on the hob, then transfer to the oven and bake for about 1 hour or until golden and firm to the touch.
  • Remove from the oven and gently ease the cake out of the pan.

This is kind of a spice quick bread. It comes from my late Mum's recipes--I grew up eating this.S ounds odd, but tasted yummy with a cuppa tea or coffee.

1/2 cup shortening
1 cup sugar
1 (10 ounce) can tomato soup
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1 dash salt
1 cup raisins, soaked in hot water then drained

Steps:

  • Cream together shortening and sugar then add in tomato soup. Sift together dry ingredients and mix into wet ingredients. Add in raisins.
  • Pour into loaf greased loaf pan and bake for 40-50 minutes at 375°F.

1 tbsp olive oil
1 onion , chopped
2 garlic cloves , crushed
3 courgettes , quartered lengthways and cut into chunks
2 x 400g cans chopped tomatoes
small bunch basil , torn
25g parmesan (or vegetarian alternative), finely grated

Steps:

  • Heat the oil in a large frying pan over a medium heat. Add the onion and cook for about 10 mins until softened and starting to go golden brown. Add the garlic and cook for 5 mins more.
  • Add the courgettes and cook for about 5 mins until starting to soften. Tip in the tomatoes and give everything a good stir. Simmer for 35-40 mins or until tomatoes are reduced and courgettes soft, then stir in the basil and Parmesan.

BAKED COURGETTE & TOMATO GRATIN

Make the most of courgette and tomatoes in this gratin, with melted mozzarella, fresh basil and a crunchy breadcrumb topping. It's a great freezing dish

2 medium courgettes , sliced lengthways about ½cm thick
1 tbsp olive oil , plus extra for the dish and for drizzling
400g can chopped tomatoes , blitzed in a food processor
1 garlic clove , finely chopped
handful of fresh basil (optional)
50g polenta or semolina flour
50g plain flour
1 large egg , beaten
1 ball of mozzarella , sliced (225g)
10g parmesan or vegetarian alternative, grated
50g breadcrumbs

Steps:

  • Sprinkle the courgettes with a pinch of sea salt flakes and lay them on a plate with another plate on top. Put a weight or tin on top to help push out the liquid.
  • Heat 1 tbsp olive oil in a non-stick frying pan and add the tomatoes and garlic. Cook over a medium heat, stirring, for 5 mins until thickened. Tear in the basil, if using, and season.
  • Heat the oven to 200C/180C fan/gas 6 and oil a roasting dish. Combine the flours in a bowl. Pour away the water from the courgette. Dip the courgette slices into the egg, then into the flour, and arrange in a layer over the bottom of the dish. Top with a few slices of mozzarella, followed by a layer of the tomato sauce, and repeat with another layer of courgette, mozzarella and sauce. Toss the cheese and breadcrumbs together, then scatter over the top.
  • Drizzle with a little more olive oil, and bake for 40-45 mins until golden and bubbling. Serve with a herby red onion salad and some bread to mop it up, if you like. Can be frozen for up to two months.

15 ml olive oil
1 sliced onion
225 g mushrooms, sliced
2 garlic cloves, finely chopped
4 medium tomatoes, chopped
2 1/2 ml dried marjoram
1 1/4 ml dried thyme
salt and pepper
2 courgettes
2 small aubergines
55 g fresh breadcrumbs
75 ml parmesan cheese, grated

Steps:

  • In a non-stick frying pan, heat 1 tsp of the oil over medium-high heat; cook onion, mushrooms, garlic and 2 tbsp water, stirring, for 3 minutes or until softened.
  • Add tomatoes, marjoram, thyme and salt and pepper to taste; cook for 20 minutes or until thickened, stirring often.
  • Slice courgettes and aubergines diagonllay into 5 mm thick slices. Toss aubergine with remaining oil.
  • Spread 125 ml of the tomato sauce in a glass baking dish. Layer with half of the courgette, aubergine and sauce, repeat layers.
  • Mix breadcrumbs with cheese; sprinkle over top. Bake, uncovered at 200 C for 35 minutes or until bubbling.
