This beer battered onion rings recipe is easy to make from scratch with simple secrets for light and airy batter that's extra crispy. No beer? No problem! Seltzer water works as well!

1 jumbo yellow onion (about 1 pound)
1/3 cup corn starch
48 oz. vegetable oil (can also use canola)
1 ½ cups flour (+ 2 TBS as needed)
1 teaspoon baking powder
2 teaspoons paprika
1 teaspoon garlic powder
2 teaspoons salt
1/2 teaspoon pepper
1 12 oz. can beer (can sub seltzer water)

Steps:

  • Optional: Soak onions in ice water for 15 minutes and pat them completely dry before frying. This neutralizes the flavors and brings out a hint of sweetness instead of a harsher bite. It also makes them a bit crunchier.
  • Place cooling racks over a baking sheet next to where you'll be frying.
  • Peel the onion and position it so the stem is facing outward (not up or down). Slice onions into ½ inch thick slices and separate the slices into rings. (See post for step by step photos and PRO tips for cutting onion rings.)
  • Toss thein cornstarch. This helps the batter stick to the onions. It also absorbs moisture and prevents gluten from developing, which makes them crispier.
  • Whisk the 1 ½ cups flour and remaining dry ingredients together until well-combined. Gradually pour in the beer, whisking continuously. Add up to 2 additional tablespoons of flour if needed. The consistency should resemble a thin pancake batter.
  • Heat oil to 365-375 degrees. Dip 4-5 onion rings in batter and gently shake off any excess. Carefully lower them, one at a time, into the preheated oil. If the oil is at the right temperature, they should rise to the top almost immediately. If it's not, they'll sink and stick to the bottom and the batter will fall off.
  • Fry for about 1 minute + 20 seconds. Flip them over when the first side is golden brown. Cook for another 45 seconds or so, then remove and place on cooling racks. (I find that using a fork is the best way to handle them.)
  • Repeat until all onion rings have been fried. Serve with dipping sauce. (Ketchup, Ranch, BBQ Sauce, or a combination sauces!)
  • PRO Tip: To keep fried onion rings warm, place the cooling rack with the onion rings in a 200-degree oven.

With their crispy golden outside and soft, sweet interior, these homemade onion rings are impossible to resist. Serve with your favorite dipping sauce like the Awesome Blossom Sauce in the notes below.

1 large sweet or yellow onion (thickly sliced into 1/2-inch thick rings)
1 cup milk
1 Tbsp white vinegar
1/2 cup sour cream
1 cup all-purpose flour
1/2 Tbsp salt
1/4 tsp black pepper
1 tsp garlic powder
Oil for frying (I used canola oil - use something with a high smoke point)

Steps:

  • Heat a dutch oven over medium heat with 1" of oil (or enough to cover the onion rings). You can use a deep fryer if you have one.
  • In a medium bowl, whisk together 1 cup milk with 1 Tbsp vinegar and let sit 5 minutes. Whisk in 1/2 cup sour cream.
  • In a separate bowl, whisk together: 1 cup flour, 1/2 Tbsp salt, 1/4 tsp black pepper, and 1 tsp garlic powder.
  • Separate the onion rings and dip each ring in the milk mixture, then dredge with flour. (I used a fork to transfer from the wet bowl to the dry bowl so my hands didn't get as gunky). Repeat by dipping in milk mixture a second time and dredging again in flour. Place the finished onion rings on a plate until ready to fry.
  • Once the oil is at 375˚F on a thermometer, or hot enough for the onion rings to sizzle, place 3-4 double battered onion rings in a single layer in the hot oil and cook for about 3 minutes, flipping halfway and fry until exterior is crisp and light golden brown. Let onion rings cool on paper towels so soak up any excess oil.

1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

SPICED BURGERS WITH CHILI ONION RINGS



Spiced Burgers with Chili Onion Rings image

1 large poblano chile pepper
1 14-ounce bag frozen onion rings
Kosher salt and freshly ground pepper
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 cup spicy ketchup
1 tablespoon chopped fresh cilantro
Grated zest and juice of 1 small lime
1 1/4 pounds lean ground beef
1 tablespoon vegetable oil
4 sesame hamburger buns, split and toasted
4 small romaine lettuce leaves

Steps:

  • Preheat the broiler. Put the poblano on a baking sheet and broil, turning, until charred in spots, about 8 minutes. Transfer to a plate and let cool. Reduce the oven temperature and bake the onion rings as the label directs. Season with salt, pepper and 1/4 teaspoon each chili powder and cumin.
  • Meanwhile, combine the ketchup, cilantro, a pinch of lime zest and half of the lime juice in a small bowl; add more lime juice and salt and pepper to taste. Refrigerate until ready to use.
  • Mix the ground beef, 1/2 teaspoon lime zest and the remaining 1 3/4 teaspoons chili powder and 3/4 teaspoon cumin in a large bowl with your hands until just combined. Form into four 3/4-inch-thick patties; season both sides with salt and pepper. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the burgers and cook until browned, 2 to 3 minutes per side for medium rare.
  • Peel, stem and seed the broiled poblano; cut into strips. Place the burgers on the buns with the ketchup sauce, lettuce and poblano. Serve with the onion rings and the remaining ketchup sauce.

1 (1 lb) vidalia onion, peeled, cut into 1/3-inch slices and separated into rings
1 1/2 cups buttermilk
1 cup flour
1/2 cup cornmeal
1 1/2 tablespoons chili powder
1 tablespoon cumin
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper (I used about 1/4 tsp)

Steps:

  • Heat oil to 375 degrees in deep fat fryer.
  • Combine onion rings and buttermilk in a large bowl.
  • Mix dry ingredients in another large bowl.
  • Remove 1/3 of onion rings from buttermilk.
  • Add to flour mixture and toss to coat.
  • Place coated onion rings in hot oil and fry for about 3 minutes or until golden brown.

  • Repeat with remaining 2 batches.

2 large Spanish onions, sliced into 1/2-inch-thick pieces
Whole milk, as needed
3 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons fine salt, plus more for sprinkling
2 teaspoons chili powder (optional)
1 teaspoon ground cumin (optional)
2 lager-style beers (12-ounces each)
Vegetable oil for deep frying

Steps:

  • Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
  • Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
  • Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
  • In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
  • Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.

GEORGE'S HOMEMADE ONION RINGS



George's Homemade Onion Rings image

10 large/jumbo yellow onions
1 quart buttermilk or whole milk
Salt
3 cups all-purpose white flour
3 cups finely ground cracker meal
1 quart vegetable oil
Ketchup or ranch dressing, for dipping, optional

Steps:

  • Remove the outer skins from the onions. Slice the onions into 1/4-inch-thick slices and separate into rings. Combine the buttermilk and 3 tablespoons salt in a large bowl. Put the flour in a second large bowl and the cracker meal in a third large bowl.
  • Working in handful-size batches, dip the onion rings in the buttermilk until all are moistened, then put in the bowl of flour and use your hands to dust with the flour to coat. Carefully shake off excess flour and then quickly dip the rings back in the buttermilk to moisten once again. Put the rings in the bowl of cracker meal and use your hands to dust with the meal to coat. Carefully shake off excess meal from each ring and transfer to a shallow pan or baking sheet. Repeat the process with the remaining rings so all are dipped and coated. Refrigerate the rings for at least 4 hours to set the coating (overnight is best).
  • Heat the oil in an electric deep fryer to 350 degrees F. Gently drop enough of the coated rings into the fryer basket so that it is two-thirds full. Lower the basket into the hot oil and cook the rings until lightly golden brown, about 2 1/2 minutes. Remove the basket and shake off the excess oil, or allow the basket to rest until the basket has stopped dripping. Turn the basket over or use tongs to remove the rings and place them on a large plate or serving tray. Repeat with the remaining onion rings. Salt to taste or allow each person to season individually. Serve with ketchup or ranch dressing for dipping, if desired. Best served warm.
