Almost No-Knead Bread With Olives, Rosemary, and Parmesan image

Another great version of Cook's Illustrated Almost No-Knead Bread. Makes an unbelievable loaf of bread! An enameled cast-iron Dutch oven with a tight-fitting lid yields best results, but the recipe also works in a regular cast-iron Dutch oven or heavy stockpot. Because of the high temperature required besure the pot (and lid) can handle the heat. You may have to improvise a new handle on the lid. I've also used my Romertofp clay baker and had wonderful results. This bread is so good, I'm tempted to invest in a La Cloche.

3 cups unbleached all-purpose flour, plus additional for dusting work surface (15 ounces)
1/4 teaspoon fast rise yeast
1 1/2 teaspoons table salt
4 ounces finely grated parmesan cheese
1 tablespoon minced fresh rosemary
3/4 cup water, plus
2 tablespoons water, at room temperature
1/2 cup chopped green olives (pitted)
1/4 cup mild-flavored lager beer, plus
2 tablespoons mild-flavored lager beer
1 tablespoon white vinegar

Steps:

  • Whisk together flour, yeast, salt, Parmesan, and rosemary in large bowl. Add water, olives, beer, and vinegar.
  • Using rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy ball forms. (The dough will be very wet.).
  • Cover bowl with plastic wrap and let sit at room temperature for 8 to 18 hours.
  • Line inside of 10 inch skillet with a 12- by 18-inch sheet of parchment paper.
  • Spray paper with nonstick cooking spray.
  • Transfer dough to lightly floured work surface and knead 10 to 15 times. Shape dough into ball by pulling edges into middle.
  • Transfer dough, seam-side down, to parchment-lined skillet and spray surface of dough with nonstick cooking spray.
  • Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 2 hours. (I've also retarded the rising by placing dough in the refrigerator for up to 12 hours.).
  • About 30 minutes before baking, adjust oven rack to lowest position, place a large heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 500 degrees.
  • Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2-inch-deep slit along top of dough.
  • Carefully remove pot from oven and remove lid.
  • Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge).
  • Cover pot and place in oven.
  • Reduce oven temperature to 425 degrees and bake covered for approximately 30 minutes.
  • Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 210 degrees, 20 to 30 minutes longer.
  • Carefully remove bread from pot; transfer to wire rack and cool to room temperature, about 2 hours.

  • In a large bowl combine the flour, rosemary, salt, and yeast. Stir in the water and olive oil with a large silicone spatula until the flour is completely incorporated and holds together in a ball. The dough should be wet and sticky. Pour about a Tbsp. of oil around the ball and coat it in the oil. Cover the bowl with plastic wrap and let it sit in a warm spot in the kitchen overnight, about 10 hours. The dough will double or triple in size by morning.
  • Dust a work surface with flour and sprinkle a little flour over the top of the dough. Scrape the dough onto the floured surface. Grab the furthest part of the dough and fold towards you, turn the dough a quarter turn and fold towards you, then another quarter turn and fold over a final time. Turn the dough over and gently form into a ball. Brush a piece of parchment paper with oil. Place the dough on the parchment and cover with a damp kitchen towel. Let the dough rest for 1 hour.
  • Halfway through the rest period, place a large, oven safe pot with a lid (like a Dutch oven) on the center rack of the oven and heat to 475°F.
  • Using a very sharp knife, cut four small slits in a square around the top of the bread. Remove the pot from the oven and remove the lid. Lift the parchment by the corners and gently lower it into the hot pot. Cover the pot and put it back in the oven. Lower the heat to 425°F and bake the bread for 30 minutes.

  • In a large mixing bowl, whisk the flour, salt, and yeast together until mixed. Stir in the water until a chunky, thick dough forms. If needed, add a few more teaspoons of water, just enough to get the dough barely wet throughout. Cover the mixing bowl with a cloth or plastic wrap and let it rest overnight (about 12 hours) at room temperature.
  • In the morning, preheat the oven to 450°F (230°C) and place a 4 to 6-quart heavy covered pot (cast iron, enamel or ceramic) inside, until you reach the desired temperature, or ideally for 30 minutes.*
  • While the oven is pre-heating, add the fresh rosemary leaves to the bread, as well as the green olives if using. Gently reshape the bread to make sur rosmary and olives are spread evenly.
  • Once the oven is hot, remove the covered pot, and carefully line with parchment paper (be careful, it’s hot!). Gently scrape the dough from the bowl, shape onto a ball with your hands and place in the pot (the dough will look a little bit sticky and messy but it’s normal, just let it be). Sprinkle sea salt on top, and place in the oven with the lid on for 30 minutes. Remove the lid, and bake for another 10-15 minutes to get the outside crust golden brown and crispy. Transfer onto a cooling rack, and let cool. It’s done!
