HOT DOG PULL-APART CUPCAKE CAKE

- Color about 2 cups buttercream the color of a hotdog bun using ivory food coloring with a few drops of brown. Color about 2 cups of buttercream the color of a hot dog, using equal parts red and brown food coloring. Color a small amount buttercream (about 1/2 cup) deep red, for ketchup. Color a small amount buttercream (about 1/2 cup) deep yellow, for mustard. Color the remaining buttercream (about 1/2 cup) deep black, for grill marks.
- Arrange cupcakes in 3 horizontal rows, with 5 cupcakes in the top and bottom rows and 6 in the middle row.
- Use an ice cream scoop or large spoon to dollop about 1/4 cup hot dog color buttercream on the cupcakes in the middle row. Use an offset spatula to smooth the tops to make a long hotdog shape, curved at both ends. Smooth all the way to the edges of the cupcakes.
- Wash and dry the ice cream scoop and offset spatula. Dollop the hot dog bun color buttercream on the middle row of cupcakes and smooth all the way to the edges of the cupcakes, curving at the ends to resemble the hot dog bun. Dip the offset spatula in a little water and smooth the edges where the hotdog meets the bun last to keep the definition between the hotdog and the bun clean.
- Put the red, yellow and black buttercreams in separate pastry bags fitted with medium round tips. Pipe 5 evenly spaced diagonal lines with the black buttercream to make grill marks along the hot dog. Pipe a wavy row of red buttercream ketchup, then yellow buttercream mustard along the length of the hot dog. Snip the gummy bears into small pieces and scatter over the top of the hot dog for relish.

This 'burger dog' is far more than a hot dog-shaped cheeseburger. It's a one-handed wonder that's perfectly proportioned and easier to eat than a regular cheeseburger.

- Place half the ground beef on a sheet of plastic wrap. Pat it into a rectangular shape, about 1/2 inch thick, 8 1/2 inches long, and 4 inches wide. Season with salt and pepper. Roll the beef into a log, using the plastic wrap as a guide. Season with more salt and pepper. Wrap the plastic tightly around the log and twist both ends tight. Pat gently to slightly flatten. Repeat with remaining ground beef.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove the burger dogs from the plastic wrap and place on the grill, perpendicular to the grates. Cook until burgers are browned but still pink inside, 4 to 5 minutes, flip, and cook another 2 to 3 minutes. Place a slice of cheese on each burger dog and grill to medium doneness (an instant-read thermometer inserted into the center should read at least 140 degrees F/60 degrees C). Remove and rest 3 to 4 minutes.
- Toast hot dog buns on the grill and spread each with 2 teaspoons mayonnaise. Place burger dog on each bun and squirt 1 tablespoon of ketchup on top.

- In the bowl of a standing mixer (or just in a large bowl), add both flours, powdered milk, sugar and yeast. Stir with a whisk to combine. Stir the egg into the water and pour into the flour. Fit your mixer with the dough hook and mix on low (speed level 2) just until the dough comes together in a shaggy mess – about 1 minute. (If you’re not using a mixer, stir with a wooden spoon, or with your hands.) Cover the bowl with plastic wrap and let sit for 20 minutes, or up to 1 hour, at room temperature.
- After this resting period, it’s time to knead. With your mixer fitted with the dough hook, knead the dough on low (speed level 2) for at least 10 minutes, adding the melted butter bit by bit, alternating with the salt. With each addition of butter, the dough will come apart a bit – let it keep kneading until it comes back together in a cohesive ball before adding more. Sprinkling in a bit of the salt after each addition of butter, will help the dough come back together. (If kneading by hand, work the butter and salt into the dough with your hands until fully incorporated. Turn out onto a lightly floured surface and knead for about 10-15 minutes. If you’ve never kneaded dough, here’s a good tutorial.) Knead until the dough is soft, supple, and tacky but not sticky. If the dough feels dry – not tacky at all – after adding all the butter, add additional water, one tablespoon at a time, until the dough is soft, smooth and tacky.
- Grease another large bowl with butter, oil, or non-stick spray. Turn the dough out into this bowl, cover with plastic wrap that’s also been greased with butter, oil or non-stick spray, and let rise for 1 1/2- 2 1/2 hours, until doubled in size. (The length of time this takes will depend on the room temperature. If you want to lengthen the rise time to better accommodate your schedule, place the dough in the refrigerator for up to 12 hours, bringing it to room temperature before continuing with the recipe.)
- Line two baking sheets with parchment paper. After the dough has doubled in size, remove the dough from the bowl to a flat work surface. Divide into 12 even pieces.
