3 Tbsp. mayonnaise
6 hard-boiled eggs chopped
1-1/2 cups chopped red onion
8 oz. cream cheese at room temp
2/3 cup sour cream
2 (4 oz.) jars black lumpfish caviar
Crackers, thinly sliced baguette, or endive cups as accompaniments.

Steps:

  • In a small bowl, stir together the mayonnaise and the hard-boiled eggs. Spread the mixture over the bottom of an 8-inch springform pan. Layer the onion on top. Combine the cream cheese and sour cream, and spread evenly over the onions. Sprinkle with the caviar. Refrigerate. The recipe can be completed to this point up to 2 days before serving. To serve, remove the sides of the springform pan. Transfer the bottom of the pan to a serving plate. Serve chilled with the crackers or others.

3/4 cup sour cream
2 tablespoons chives, finely chopped
2 tablespoons dry white wine
1/2 teaspoon salt
1/2 teaspoon white pepper
2 tablespoons olive oil
1 cup fresh sweet corn kernels, from 1 medium-size ear
2 tablespoons minced shallots
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 large eggs
1 cup heavy cream
1/4 cup yellow cornmeal
1/2 cup bleached all-purpose flour
1/2 cup masa harina flour
2 teaspoons baking powder
1/8 teaspoon cayenne
3/4 cup water
2 teaspoons vegetable oil
1 teaspoon Creole seasoning
1/4 cup capers, drained
2 hard-boiled yolks, finely chopped
2 hard-boiled egg whites, finely chopped
1/4 cup chopped red onions
2 tablespoons finely chopped fresh parsley leaves
One 7-ounce tin caviar

Steps:

  • For the chive crema: Combine all of the ingredients in a small bowl and whisk until thoroughly blended. Serve immediately or store, refrigerated, in an airtight container for 2 days.
  • For the corn cakes with caviar: Heat the olive oil in a medium-size saute pan over medium heat. Add the corn, shallots, 1/2 teaspoon of the salt, and the black pepper, and cook, stirring, until the corn and shallots are tender, about 5 minutes. Remove from the heat.
  • Combine the eggs and cream in a large mixing bowl and whisk to blend well. Add the cornmeal, flour, masa harina, baking powder, cayenne, the remaining 1/2 teaspoon salt, and the water. Mix well. Fold in the corn and shallot mixture.
  • Heat 1/2 teaspoon of the vegetable oil in a large nonstick saute pan over medium-high heat. When the oil is hot, but not smoking, gently drop the batter, a tablespoon at a time, into the pan. You can cook about eight cakes at a time. Cook until the cakes are lightly golden on both sides, about 1 1/2 minutes on each side. Repeat until all of the oil and batter are used up. Drain the cakes on paper towels. Sprinkle with the Creole seasoning and serve warm with the chive crema, accompanied by a tray of garnishes. These can be prepared in advance and passed around on trays.

1 teaspoon seasoning salt
1 teaspoon chili powder
salt
pepper
0.5 (16 ounce) bottle Italian salad dressing

8 hard-boiled large eggs, finely chopped
1/2 cup finely chopped onion (1 medium)
3/4 stick (6 tablespoons) unsalted butter, melted and cooled
2 tablespoons finely chopped fresh dill
2 teaspoons finely grated fresh lemon zest
1/4 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons finely chopped fresh chives
7 oz black lumpfish caviar (see cooks' note below)
Accompaniments: lemon wedges; 16 thin slices whole-wheat toast, buttered, then halved or quartered diagonally
Special Equipment
a 9-inch nonstick springform pan; a small offset spatula

Steps:

  • Put 1/2 cup sour cream in a paper-towel-lined sieve set over a bowl, then let drain, covered with plastic wrap and chilled, 3 hours.
  • Stir together remaining 1/4 cup sour cream, eggs, onion, butter, dill, zest, salt, pepper, and 1 tablespoon chives until combined well.
  • Invert bottom of springform pan (so that turned-up edge is underneath for easy removal of tart) and close side of pan around bottom. Spread egg mixture evenly in pan with offset spatula, smoothing top. Cover surface with plastic wrap, pressing gently, and chill until firm, at least 3 hours.
  • Spread drained sour cream evenly over egg mixture with offset spatula.
  • Gently spread half of caviar on several sheets of paper towels to absorb excess cuttlefish ink. Carefully lift caviar from paper towels and spread on top of egg mixture (be careful not to smash caviar). Repeat method with remaining caviar. Serve cut into wedges and sprinkled with remaining chives, if desired.

1 small red onion, small dice
12 ounces cream cheese
16 ounces sour cream
1/2 cup fresh parsley

1 (4 ounce) jar orange caviar

Steps:

  • Dice the hard boiled eggs. Stir in the mayonnaise and onions. Season mixture. In a greased springform pan, layer the egg mixture.
  • Beat the cream cheese and sour cream until smooth. Stir in the fresh parsley. Season mixture. Layer on top of egg mixture and smooth surface.
  • Chill for several hours or overnight.
  • Drain each color of caviar on separate paper towels.
  • Create a shape or design, using the different colors of caviar. Chill.
  • Be careful unmolding the springform pan.
  • Serve with toast points or crackers.

4 hard-cooked eggs, chopped
2 tablespoons mayonnaise
1 cup minced sweet onion
6 ounces cream cheese, softened
½ cup sour cream
3 ½ ounces black lumpfish roe
2 lemons - cut into wedges, for garnish
3 sprigs parsley, for garnish

Steps:

  • Grease an 8-inch spring-form pan and set aside. Stir together the hard-cooked eggs and mayonnaise. Evenly spread into the bottom of the spring-form pan and sprinkle the minced onion over the top. Stir together cream cheese and sour cream until smooth and spread over the onion layer. Cover and chill at least 3 hours in the refrigerator.
  • Once completely chilled, unwrap the pan and spread the lumpfish roe over the top. Run a knife around the edge of the pie and remove the side of the spring-form pan. Garnish with lemon wedges and parsley sprigs before serving.

6 hard-boiled eggs, very finely chopped
3 tablespoons mayonnaise
salt and pepper
1 sweet onion, very finely chopped
8 ounces cream cheese
2/3 cup sour cream
black caviar
20 crackers, to serve

Steps:

  • Mix the bottom layer ingredients and put in an 8 inch springform pan.
  • Put middle layer on top of that; and then mix top layer ingredients and put on top.
  • Chill overnight.
  • Use a cookie cutter on top and fill with caviar to make a nice design.
  • We used a heart shape at the wedding and filled it with salmon roe and made a nice design of salmon roe around the border-- one of our colors was orange for the wedding so it looked lovely.
  • I've also seen this with small red caviar in the middle in a heart shape with black caviar all around the edges-- gorgeous.
  • remove the sides of the springform pan to serve with crackers.

  • Soak your black eyed peas for 8-12 hours in a large bowl with lots of water and 1 Tbsp of salt (see note). Rinse and drain the peas. Add them to the Instant Pot or slow cooker. Add in 6 cups of water.
  • For the Instant Pot cover the pot and lock the lid into place, set the valve to sealing. Set the manual/pressure cook button to 13 minutes on high pressure. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid. For the Slow Cooker cover the crock and cook on low for 6-8 hours or until peas are tender.
  • Drain and rinse the black eyed peas in a colander. Place the peas in a large bowl and let them chill in the refrigerator for an hour.
  • Prepare all other ingredients. Toss them all together with the black eyed peas. Salt and pepper to taste.

  • In a small saucepan, bring the milk to a boil over moderately high heat. Immediately remove from the heat, stir in the salt and let cool to warm.
  • Preheat the oven to 325 and butter an 11-by-7-inch glass or ceramic baking dish. In a medium saucepan, bring 1 quart of water to a simmer.
  • In a large bowl, whisk the cooled milk with the eggs until smooth. Pour the mixture into the prepared baking dish and cover tightly with aluminum foil. Set the dish in a roasting pan and pour enough of the simmering water into the roasting pan to reach about halfway up the side of the baking dish. Transfer the roasting pan to the middle of the oven. Bake the custard for about 30 minutes, until a knife inserted into the center comes out clean. Transfer the baking dish to a rack and remove the foil. Let the custard cool completely, then refrigerate for about 1 hour, until chilled.
  • Spread the crème fraîche in an even layer over the cooled custard. Spoon the onion, the red caviar and the black caviar over the crème fraîche in alternating diag-onal rows. Sprinkle the caviar cake with the dill, season with pepper and serve.
